參觀廚房當然好玩,先經過掛滿歷年主廚之照片,未進已有臥虎藏龍之勢。
服務4家食肆的廚房,非常寬敞整潔,燈光明亮,完全沒有油煙,見到約十多二十人在忙,其實共有80位廚房工作人員(包括輪更不在場的)。

不愧為米芝蓮二星及綠星餐廳,食物水準之上,不只新鮮上乘而且特式。 餐廳環境輕奢高雅,以金色白色做主調,明亮輕鬆,寬敞舒適,而間格設計提高私穩摩;員工們交替服務,全部態度友善,禮貌地解說食材,有些頗健談,沒有令客人有任何必需添加酒水之壓力,相反地,送贈蛋糕及臨別之朱古力小禮物,小小心意令客人窩心。 酒店七樓有四間餐廳,Amber 位於遠處角落,走過酒店庫亦愉快的旅程,放下心情,有尋幽之感。 最後值得一提,Amber 的食物不含任何乳製品,Richard Ekkebus 刻意運用大豆、米、穀物及堅果奶等取代法式料理常見的忌廉、牛奶及牛油;同時亦透過發酵過程和海帶等食材中的天然鈉來提升鮮味,減少以鹽調味,非常配合現在盛行健康飲食的原則。
