油麻地好多懷舊小店,早排睇到報紙介紹呢間油渣麵即刻就黎試試位於油麻地廣東道,屬於內街,店外就係賣濕貨既露天街市,環境認真麻麻。油麻地係老區,就係老區先保留到呢的懷舊老店。店內坐位不多,午市時份好多公公伯伯食飯,估計大部分係街坊生意。 先黎一碗豬肺菜乾湯,用上燒豬骨黎煲湯,多左份燒骨既鹹香味,加上菜乾既清甜,好濃但好潤喉碗內仲有部分豬肺同豬天梯,可惜我唔食豬肺晒左 豬油渣麵,豬油渣其實係炸豬肥膏提煉豬油淨下既副產品,早年香港人窮就將呢的炸到香脆既豬油渣加上上海粗麵製成平民美食。隨住時代變遷慢慢越來越少食店會做豬油渣了!呢到既豬油渣唔算好脆口,鹹香味十足,湯底好鮮,再加上辣菜脯好惹味一碗湯一碗麵非常滿足繼續返工去

跟其他食客一樣要來是日湯品,沒有聽錯是花膠魚翅頭煲西施骨,比起青紅蘿蔔來得高級矜貴。

熱燙的老火湯色澤深濃,面層浮著點點脂肪,賣相平庸,不算吸引,可是匙羮一舀,魚翅頭花膠就如一網打盡,童叟無欺。湯韻更是有著家裡的甜美香濃,令老公和我也喝得津津有味,只賣 $25元,自問兩口子經常煲湯,買瓜買肉也超過一百大元,更未算燈油火蠟人工,難怪每位食客面前也不缺一碗!

果然辣菜脯如畫龍點睛一樣,令油渣麵變得惹味!吃了兩、三口沉澱澱的麵條,已經甚有飽意,可想像一碗的份量足可讓我飽得不成了,幸好我們點了小碗,要靠老公的食量去完成它了!

不時有新鮮製成的食品由廚房端出,例如各式蒸魚、蝦醬蒸豬肉等,老公看中了蒸鹹雞。

黃油雞皮薄而油潤、油脂不盛,入口絕無肥膩之感;雖不是新鮮雞,但難得富有肉香、醃製鹹度恰好,加上雞肉亦十分嫩滑,簡直是將冰鮮雞煮出新鮮雞的水準來,我真心向女大廚盛讚其出色的廚藝!

碟底還盛有爽軟的菜心,吸收鹹雞的鹹香後,份外美味。半隻蒸鹹雞份量足,才不過 $45元,我們還將剩下的打包回家!

雖然錯過跟店主傾談過的機會,只見店主一家在忙過不停,但在狹小的空間裡,那份熱誠不減的態度,彷彿食客們就是於家中作客的親朋戚友,尤其是當大廚的媽媽,每次捧著剛煮好的菜式由廚房走出店面,臉上滿足的表情,似是要告訴大家她的心血結晶有多美味。或許店主經營「恆達」純粹為求滿足、簡單地過日子,但在平民食客的心中,付出可負擔的價錢,換來一碗用料矜貴的熱湯、一碟份量十足的蒸魚飯,或只來一碗飽肚的油渣麵,這些親民「豪」食,卻食為平民帶出吃的尊嚴、吃的選擇!

未夠鐘晚飯,記得附近有間恆達油渣麵,由於店內只能坐十個人左右,一見有位即刻衝入去,店內除有油渣麵外,還有蒸魚、小菜,短短十五分鐘,店內食客同買外賣之客人都好熟,仲有講有笑,相信大部分是街坊,而我點了碗油渣麵,好大碗,油渣夠肥但不夠脆,不過夠多,蔥花又夠多,上海麵不會淥得過火,硬度適中,整體上不錯,但還是上水好食。

那些年我們沒有富裕的生活,卻有街坊們的守望相助。夜不閉戶皆因誰家都沒有什麼好去偷的,缺乏物質的時候發揮創意而來的食物甚能代表那時的環境。還記得慈雲山4座的婆婆挑一條擔挑,一邊放了的藍子內有白底藍邊的手繪瓦碗和火水爐,另一邊則是放著”粉仔”的大煲。五毛錢一碗燙手的粉仔,我們都把它放在公園欄杆上邊吃邊呼的品嘗。甜美的豬油渣湯頭混和了浸糊了的上海麵甚覺溫馨,加上青蔥和炒菜甫辛辣的滋味一直都只能懷念。即使有時候豬油渣過了火,傳來只有苦味…….無論在深水埗還是大角咀著名的小店,都沒能幫我找到兒時回憶。最終只能在這裡找到最近似的。 有種珍貴的味道~ 叫做懷念﹗

My dad took me here for my first 油渣麵 more than a decade ago at this shop. Since then I have fallen in love with this local dish as well as this tiny little store. The lady is still here all these years serving them up hot and tasty. Why hasn't this place got any michelin stars?The 油渣 are a bit chewy, more so than most other stalls. The 油渣 are a bit chewy, more so than most other stalls. Some that I have eaten are quite crispy, but at 恆達 I think they soak it back in the soup thoroughly before serving. For the noodles, I think they are homemade, thick and chewy (you might have gathered now that I like chewy food, haha)....The soup base is pork, and very very rich. There is one thing about eating 油渣麵 and it's that we should add some 菜寶 on top, it adds a bit of spiciness to it and also, as mum says, "every meal must have vegetables". HAHAHA

They have a tasty drink as well, 羅漢果, it is very cooling to drink especially in the summer. The best buddy to the 油渣麵.

Besides 油渣麵, they also serve many local favourites like siu mai, etc. Their fish soup is very famous apparently but I have never tried because I don't like fish soup.
