I have been searching Hong Kong for a few years, trying to find a la mian noodle shop. And I mean freshly pulled in the shop by the master noodle puller. Crystal Jade is ok, but the soups are not great, its expensive and it just doesn't do it for me. And then, walking past some shops in Tuen Mun near the Yan Oi market, what do I spy but a sign for Lanzhou La Mian ( all in Chinese, which I can luckily read) and had to have a try. I have been searching Hong Kong for a few years, trying to find a la mian noodle shop. And I mean freshly pulled in the shop by the master noodle puller. Crystal Jade is ok, but the soups are not great, its expensive and it just doesn't do it for me. And then, walking past some shops in Tuen Mun near the Yan Oi market, what do I spy but a sign for Lanzhou La Mian ( all in Chinese, which I can luckily read) and had to have a try. I am so glad I did! It's a small place, but very clean and neat. It wasn't too busy so I was sat down straight away. I chose the shuijiao la mian ( dumplings with noodle soup) but noted lots of variations to try next time. The noodles were beautifully chewy, just the right texture, the soup was tasty and with a dollop of chili oil suitably spicy and the dumplings were delicious! The chef could be seen pulling the noodles in the kitchen area- the genuine article!

終於下決心試一次了,之前不入這店是因為每次路過門口也看不見有其他客人。店內只得三數張枱,是小本經營吧。看到很多網友推介煎餃,所以今次我就點了煎餃拉麵+豆花。坐在店內沒事做,我先看看牆上的雜誌報導,看到賣點是麵滑、無味精、慢功出細貨。不知報導是否真確,它說店主會為每一碗麵即場拉麵,所以製作時間較長。可能製作真的需時,所以先來我面前的是豆花,第一啖的感覺是:不滑,但仔細點看看碗內沒有糖水,不像附近的糖水店的豆花般稀。吃完整碗豆花已經有些飽肚的感覺,這證明豆腐是多麼的多。然後主菜終於來了,先喝一口湯,很清很有牛味很有芫茜味,再吃一口麵,覺得麵質介乎彈性與lim之間,整碗麵有種清澀的味道,但味不濃。至於煎餃子,吃得多是親手做。不過沒有喜出望外的感覺,也覺得偏貴少少。

入去以為係拉麵最正,原來甜先係主角。師傅即叫即拉,所以要等一會先有得吃,蒜味青瓜…味道幾好,但太大粒,切細些反而會好d,白果豆腐花…熱食,豆香而滑,食完番尋味。

第一次黎呢度吃野, 因為我個FD好Like 吃拉麵架.呢度o既餃子你一家要吃, 煎餃子&湯餃子都好味呀, 2隻原來係唔同架, 煎果隻係9菜, 湯果隻係內餃, 2隻都好多汁.但串燒方面就唔得, 豬肉好硬, 雞肉又冇咩味.本來都想試下呢度o既豆花, 見佢$9/一碗, 仲見佢地pack 好了2碗, 即係賣剩蔗啦, 所以就冇試啦.

今天去屯門理頭髮
朋友們都很驚訝我這個九龍人怎麼大老遠跑到屯門去剪個頭髮
就因為怕再亂試其他的髮型師,把我的頭髮弄的不堪入目
找到好的師傅就不想再亂試別人了
而且屯門可是有很多便宜又好吃的
順便給自己一個借口每次來發掘好東西囉

昨天就在網路上找到屯門一家賣蘭州拉麵的
剪完頭髮,拿著地圖就去找它的芳蹤
路在口邊,懶的自己慢慢找就一直問路人
花了10幾分鐘就到了!

下午6點,我是第一個客人
老闆娘是蘭州人,講著不太清楚的廣東話
滿臉的笑容
她的老公是香港人
老公在廚房用心做麵
老婆在外頭招呼客人
是家庭式的小店

想吃雞肉又想吃牛肉
本來想點香草雞肉串拉麵
問一下老闆娘知道雞肉串是用炸的
念頭打消
牆上貼著的清湯腩樣子好像不錯,就點了清湯腩拉麵
再來一個香蒜涼伴青瓜(小黃瓜)

老闆娘好心請我吃招牌甜品 – 腐竹薏米豆腐花
可是最近在禁甜食,只好婉拒老闆娘的好意
其實我是很想吃的勒~~~~~~

拉麵是現做的,自然要有耐心一點
跟老闆娘閒話家常,時間倒是過的很快
轉眼間香味四溢的拉麵就來了!

先品嚐湯頭
果然沒味精!
湯頭是老闆娘每天一大早到菜市場挑牛骨,加上香料熬成的
牛骨有油脂,邊熬邊要把油脂刮走
湯頭才會鮮甜又沒丁點的油膩
拉麵有點粗細不一,這才是手工拉麵嘛
燙的過久,有點軟扒扒的,不過還是很好吃!
牛腩有幾顆帶渣的,下次來我會點牛肉片或餃子
湯頭實在太好喝,麵還沒吃一半湯先喝光光
老闆娘就給我添了滿滿一碗,呵呵

香蒜涼伴青瓜就是拍青瓜
佈滿了香草,卻找不到一顆蒜頭
心裏在納悶,吃了幾顆才知道,蒜味巳經溶入到青瓜裏面去了!
雖然沒蒜粒,可是那蒜味濃郁得之後的幾小時我的口腔還是有一股蒜味!

不要錯過桌上的辣油
那是老闆娘精心調製的,充滿了孜然粉的辣醬!
拉麵加上這個孜然辣醬超好吃的咧!!!

向來麵食只吃一半的我
今天吃個碗底朝天
差不多港幣40的晚餐,不便宜卻是稱心滿意!
摸著肚皮離去
下次來剪頭髮一定會再來拜訪,到時候一定要吃那招牌豆腐花!

星期日下晝十二點幾,拐到呢間鋪仔到搵麵食。家庭式經營o既鋪仔細細,廿人都坐唔落,唯有坐近門口…咁就望唔到師傅點整麵。因為預o左要等,所以除o左牛腩麵外,仲叫o左個青瓜打發時間。青瓜爽爽脆脆,普普通通。時間o岩o岩好,食完碟青瓜碗麵就到。湯底好清,有牛肉味,牛腩瘦得o黎都幾鬆化,最重要係個麵有咬口。一路食,覺得食開同區港式金銘牛腩麵o既話,呢度都係一個唔錯o既另類選擇。最後差唔多成碗湯飲哂,埋單半小時後行到返屋企都唔口渴。無味精,抵加分!

蘭州人食麵有「一清、二白、三紅、四綠(甚至五黃)」,即「湯底清、蘿蔔白、辣椒紅,蔥花綠(同麵條黃)」的準則;五香牛肉撈麵,未能一嘗其一清二白,不過青瓜絲跟胡蘿蔔絲切得纖長、幼細分明,跟纖幼的麵條撈在一塊吃,應該十分匹配、滋味非常…正在撈吓撈吓、搞吓搞吓之際,老闆娘似乎察覺我「神色有異」,閃過來,用唔鹹唔淡既廣東話問我:「你做乜猶疑唔落辣油呀?」「猶疑」二字,好有「威脅性」:我的確在想,先試原味,後試辣味。老闆拉了最standard 的「三細」:粉團應該雪過,失去「好彈」的感覺(幸仍有少少彈…),絕對情有可原- 一來兩地天氣有異,就算不雪入雪櫃,就算用上同樣的粉,酵性、筋性已經截然不同- 何況用的水用的工具已大不同…二來,人流暢旺,唔預先整定,做死老闆咩。五香牛肉雖然「冰」得很,但切得細長,有很濃的陳皮香,加上黝黑的陳醋,十分解渴,十分搭配。雖嫌辣椒油炒得太幼細,但絕非一般境內之物…辣椒油香之外,最緊要,係食完條脷曉「麻」。唔係唔想組團去,係唔可能組團去:閒日都full house(只得十多個位)。下回決戰蒜香羊肉、用孜然粉烤的蘭州雞肉串…仲有佢個一清二白牛骨湯。

蘭州人食麵有「一清、二白、三紅、四綠(甚至五黃)」,即「湯底清、蘿蔔白、辣椒紅,蔥花綠(同麵條黃)」的準則;五香牛肉撈麵,未能一嘗其一清二白,不過青瓜絲跟胡蘿蔔絲切得纖長、幼細分明,跟纖幼的麵條撈在一塊吃,應該十分匹配、滋味非常…

正在撈吓撈吓、搞吓搞吓之際,老闆娘似乎察覺我「神色有異」,閃過來,用唔鹹唔淡既廣東話問我:「你做乜猶疑唔落辣油呀?」

「猶疑」二字,好有「威脅性」:我的確在想,先試原味,後試辣味。

老闆拉了最standard 的「三細」:粉團應該雪過,失去「好彈」的感覺(幸仍有少少彈…),絕對情有可原- 一來兩地天氣有異,就算不雪入雪櫃,就算用上同樣的粉,酵性、筋性已經截然不同- 何況用的水用的工具已大不同…

二來,人流暢旺,唔預先整定,做死老闆咩。

五香牛肉雖然「冰」得很,但切得細長,有很濃的陳皮香,加上黝黑的陳醋,十分解渴,十分搭配。

雖嫌辣椒油炒得太幼細,但絕非一般境內之物…辣椒油香之外,最緊要,係食完條脷曉「麻」。

唔係唔想組團去,係唔可能組團去:閒日都full house(只得十多個位)。

下回決戰蒜香羊肉、用孜然粉烤的蘭州雞肉串…仲有佢個一清二白牛骨湯。
