Deep ocean flavour in espardenya 🤩 first time trying percebes, extremely rare and hard to harvest, tasted a bit like geoduck. socarrat could be treated as the essence of a paella. but i think the bomba rice could be a lil bit more compacted. Texture of venison was a bit chewy yet the sweetness of the potato balanced well with the strong & earthy flavor in venison.
