自己近來在香港的鮨店多是吃丼物為主,當然嚐試過質素差的出品,以前自己曾花錢在香港壽司店食過晚飯,但近二年已經大大減少,寧可慳錢往日本食更好,反正價錢二地相若,天ぷら這種料理在香港是高危一族,其因要炸得好食十分困難,在香港屈指可數有多少間天ぷら店,雖說天ぷら但離不可刺身壽司熟食之類,所以我在香港沒有幾可吃天ぷら,對上次已經二,三年前在岩浪天婦羅,是日我就來到中環以天ぷら為主的穴蔵日本料理.沒有訂位的情況安排在カウンター席,因為其他座置早已訂滿,看來真的有人氣.安排坐在壽司的カウンター席,旁邊則是天ぷら,如果吃逐件上的話固然坐在那邊就最好.據說天ぷら過了五秒會可以劣化,但我沒有多研究,炸得好還是看好多因素,這裏沒有日本師傅座鎮,郤是香港師傅,聽說是由稻菊任職數年,餐牌內最貴六百元,其次商務套餐約四百,接著要特上天ぷら等也接近三百元,在中環這一區是可以接受,而在天ぷら丼物最貴的要約三百,平的則是約一百五十元,當然會給你的材料有所不同,不過安全一點還是點上一百五十元的天丼,在日本的天ぷら店有些只用上塩,有些會更有檸檬等可以選擇,不過我覺得吃此品用上塩就即可以,二年前在福岡吃過一間天ぷら店,午市

按份量的確十分之多,而飯裝得滿口,相比不少日本料理店為多,可能要遷就區內的上班一族.碗內則有二件蝦,二件魚,數件野菜,但吃落都幾油,去油的功夫不足,個漿都幾厚\,蝦肉不夠爽口,當然是用雪貨,魚類則還好,冬菇可以做得薄,蕃薯不夠粉甜,在金沢吃到五郎島金時差得遠,反觀秋葵則是全碗最好,飯只能吃了一半,我很少吃剩飯,這是其中一次.坦白講水準都幾不濟,大廚和壽司師傅都打手提電話,更是糟也!打電話都要不會給人見到吧.

食友說為何不忍口,只不過想一想嚐試一下本地的水準,想不到隨即中伏,加一不過約一百八十,都不算貴的價錢,當作一個經驗吧!

接著來的就是變化石的時候,... 我倆又再說"睇場",繼而上網找資料,過後再談其他無聊八卦事... 這樣一來已經過了一個小時! 在我們附近的客人都是這樣等了又等,催的催,不奈煩的不奈煩... 環顧四周,沒有full house,其間也有walk-in客人,我們真的理解不到為何要用上一個小時來炸天婦羅 所有團購客人都要訂座,所以餐廳在事前已經清楚當晚的客量,不應做成這個全民皆等的局面... 這令我們想起外國有不少因團購而搞垮了的個案,這個合眾人之力的活動本是美事,本是win-win,但搞不好的話就變雙輸...

終於,在個多小時後,我們的天婦羅熱呼呼地上枱! 老實說我倆當時已經沒有心情細嘗... 不是因為太餓,而是甚麼大好的心情都在等待時消失得乾乾淨淨了... 食物質素中規中矩,炸漿薄薄但仍然是油淋淋的.. 蝦和魚都有鮮味,但當時吃的心情仍然是負數...

那個炸雜菜蝦餅飯也是千呼百喚始上枱,由不少蔬菜的粒粒,炸得一塊天婦羅的餅,放在飯上。整個"食事"淡而無味,米也不是日本米,我們都沒有興致拍照留念,因真的沒甚麼值得紀念!

幸好不用付加一,大部分客人都一食完就二話不說離開,我倆反而在把清酒喝光才離開... 整頓晚餐花了個多小時完成,但實際用膳時間卻只有20分鐘以內,真是非常浪費光陰!

雖說每位$240能吃到質素平均的天婦羅是不錯,但作為一家自立為中高檔的食肆,怎可讓客人苦苦等待呢 老實說等得一段時間後,可以cancel order的會cancel,不可cancel的其實連吃的心情都沒有了.. 這個喊面是給服務的,食物值個ok,但由於心情給大大破壞,還是要喊...

Made a booking and had no problem getting a table for the time we wanted. Was seated promptly but then the hostess just walked away without asking if we wanted a drink, etc.

After trying to flag down several wait-staff (who seemed to all be on various missions and ignoring the guests...tunnel vision I guess), we finally ordered some drinks.

When they brought out drinks, they also brought out some cups of sake that were included with our set? Wha??? If we order another drink, why bring the other ones at the same time? We asked them to take the sake away and bring it to us later...(we never saw the sake again...)

They promptly brought the first course out. A light salad which consisted of a few leafs of lettuce with some sesame oil. Very unsatisfying. I would suggest the restaurant use some other ingredients in their salad instead of only lettuce.

Then....we waited for the next course, some miso soup and the tenpura entree...

and waited....
..
and waited...

Finally, the hostess came and apologized it was taking so long and our order would be right out. The restaurant wasn't that busy so not sure why it was taking so long..

We waited some more...

and more...

Finally, asked the hostess again where the food was, she was apologetic (and sincere sounding, to her credit), and offered us two free drinks on the house. Nice way to try to make it up to us.


The entree came shortly thereafter. Around nine pieces of tenpura. The portion was quite small but the tenpura assortment was ok. Some different items not typically found, like squid stuffed with sea urchin. There were also soe sweet prawn, but a little small. They may have split one large prawn into two pieces?

The assortment was certainly different than other typical tenpura items found but the taste was a little disappointing. I think the uni was not completely fresh. The prawn was sweet but my guest and I (she's from Tokyo) both felt the tenpura batter was too heavy and oily. The restaurant needs to use oil with a higher temperature to help solve this problem. This makes all the difference with tenpura.

The next course was a bowl of miso soup with clams. Actually very nice. Several large clams and a flavorful broth (not too salty, as many miso soup can be).

The last course was a small (very small!) bowl of rice with some mixed tenpura topping. Was tasty (even though oily as before), but could be eaten in one or two bites. My guest even asked the waitress 'is that all?' and they just nodded and walked away.

They brought the check and never brought us our sake which was included. We were both ready to leave so we didn't push but again, something that a restaurant that is trying to be higher-class should have not forgotten.

Unfortunately, I think they gave us the childrens menu since the "Set menu for Two" was barely enough food for one. After we paid and left, we headed across the street and ordered some char siu fan from Yung Kee for $32...that was satisfying, which is unfortunate since we were looking forward to a much nicer meal at Ana Gura.

Overall:

The food was just ok...but at this price range, there's better options in Hong Kong. Also, the portions are way too small. I'm not looking for American sized portions, but I should feel reasonable full when I leave and not feel the need to go to eat a second meal.

However, the service in general was very poor. With the exception of the hostess/manager who tried to get us our food, the other staff just seemed to be going through the motions and not trying to stay on top of what their guests needed. Again, in a $40 tea house, I don't mind that, but in a restaurant where the typical bill is $500+ per person, I expect a bit more.

Ana Gura is not a new restaurant so I guess I expected things to be a bit better run and the food of a higher caliber.

My recommendations:

- Spend more time training staff on being attentive to guests needs.
- Tenpura appearance is good, but in their attempt to rush dishes out, they are not paying attention to quality. This is unacceptable in a japanese restaurant that is trying to compete with several nearby competitors.

有朋自遠方來, 當然要簡間好d 既餐廳比佢同佢o黎個長聚啦~ 我地今日簡左中環既穴藏試試, 一早已經聽過同事講佢有個set係 2個飯+1個udon, 我地2個就係叫左 $178蚊這個set , 我簡左海膽三文魚飯 + 黑豚肉飯 同埋要個熱既喬麥面, 朋友就簡左蔥吞拿魚腩 + 什錦魚生飯 加udon. 其實我地2個飯都冇食哂.. 因為真係已經好飽喇... 仲有個熱既面... 係好食既. 不過真係好多. haha.. 男仔一定唔會餓親~ haha... 三文魚唔算係好厚好靚, 但係海膽就ok 新鮮喎, 朋友仔都話覺得好味, 最後仲有cheese cake, 有dd 硬, 不過都係可以接受既. 食哂~~ 會再去~

總括:

這裏wasabi令人失望,並不是生磨的, 以這級數的日本餐廳...唔得...

頭round食品上菜時間可以,但第二round又要吹,又漏單,又取消

第2客特上刺身來,還比第一個差,份量及質數都減料

其中一舊刺身仲要係有骨添, 這真有點......

這裏招呼的人,又都沒太有表情,好生,好硬的感覺

挺配合這裏的裝修

是晚埋單連團購三千三百幾

如果喜歡toro,牡丹蝦,厚燒牛舌, 可以試試......

有緣的話會坐counter試下佢的Omakase.....

The Tofu hotpot tastes like tofu in plain boiled water.2. Environment is ok: can easily find a table on a Friday evening, which may be a good or bad signal3. Service is just ok: responsive but slow. Think they kind of forgot the main dishes, so we had to wait over 30 mins after the appetizers4. Value for money: very disappoint

特上刺身併盤刺身併盤有海膽牡丹蝦吞拿魚腩鮮帶子油甘魚鱆紅魚三文魚等等,每款皆非常新鮮,其中最鮮甜為牡丹蝦及帶子;而論肥美,吞拿魚腩及油甘魚則不遑多讓。可惜我們人太多,大家均未能每款一一盡嘗,有點不夠喉吧。

 
藍鰭吞拿魚腩刺身:意猶未盡,當然要選個最好的來加單。老闆向我們推介剛劏好的一條藍鰭吞拿魚,價錢雖高,但美食當前,大家在異口同聲贊成下拍板。大吞拿魚腩雖肥美,但我們卻選了中吞拿魚腩,貪其魚味較重。吞拿魚腩上檯時平平無奇,但入口便知那種鮮味實在難以筆墨來形容,而且無筋無渣,口感彈牙,非常出色,級數與吃慣的吞拿魚腩實在有很大分別!

八爪魚刺身:八爪魚一向被認為是下價貨,而且口感乾乾硬硬,味道不突出。但這裡的八爪魚用上巨型觸鬚位置,單是吸盤也如毫子般大,而且肉質呈彈性,厚切下口感韌而不硬,很好。

 
甜蝦刺身:甜蝦刺身肉質雖沒有牡丹蝦般肥美肉厚,但名符其實非常鮮甜,不以芥茉醬油蘸吃已經足夠。

 
自家製壽司壽司甜蛋釀入冬菇、薑絲等食材,烤成微焦再切成厚卷狀,看以簡單但功夫卻不少。日本產的雞蛋蛋味特別濃重,味道好之餘口感也很豐富。

牛油果軟殼蟹卷:軟殼蟹酥炸得鬆脆可口,與綿軟的牛油果一剛一柔,口感確是絕配,而且沒有半點油膩感,多吃兩件也沒有問題。

 
加洲反卷:反卷同樣用上牛油果,加上蟹柳及青瓜絲,味道較清新,但在出色的軟殼蟹卷中卻比下去了。

天婦羅
 
日本活蝦天婦羅:上檯時美得讓人嘩然。蝦天婦羅四隻交疊一起成塔狀,炸漿份量恰到好處,僅僅能遮蔽蝦身,又不會過厚,露出鮮紅蝦尾,加上炸成酥香的蝦頭作伴碟,單是賣相已給滿分。
天婦羅入口非常鬆脆,香口卻不乾不油,內裡鮮蝦出奇地爽口彈牙,雖經炸製,但鮮味仍存,算得上是小弟吃過最好的蝦天婦羅。

 
沙追魚天婦羅:沙追魚天婦羅賣相稍遜,但入口更為香脆,連綿軟的魚肉也炸成鬆化,原條連骨吃下也未嘗不可,用以佐酒更是一流吧。

舞茸天婦羅:舞茸為日本東北特有菌類,營養價值很高,而且有著比普通菌類更重的芳香,但用作天婦羅時香味又不算十分突出,不過味道的確鮮甜味美,既健康又好吃。

南瓜天婦羅:南瓜清甜,肉質綿軟,但對比一眾出色的天婦羅便顯後較為普通了。
 
蛋黃天婦羅:上檯時一個圓圓小球,乍看還以為是芝士丸之類,但原來是獨有的蛋黃天婦羅。蛋黃味不重,但具特有蛋香,製成的天婦羅呈半固狀,入口不太熱,但口感非常特別,似是融化的芝士,又像朱古力糖心般,令人一試難忘。

燒飯團:燒飯團有三文魚、梅子及明太子三款口味,小弟只嘗過後者。飯團外層燒得香脆,味道帶著明太子的鹹香,但飯粒較為黏口,不算突出。
 
清酒煮蜆:大蜆乾淨無沙,而且肉厚肥美,但份量相對較少,而且欠缺清酒香味,整體只屬一般。

縱觀一眾食物質素確實很高,尤以刺身最為新鮮甜美,令人有一吃再吃的衝動。另外,這裡的天婦羅不論味道還是款式也是一絕,級數與刺身不相伯仲;最值得欣賞是其用料一絲不苟,食材不會因為用作煎炸而馬虎了事,而且最碟的賣相也能藝術品般,絕對不能錯過。
反而其他前菜小食只屬一般貨色,建議捨而留肚主打出眾的刺身及天婦羅。

4) 日本料理有生有熟,對店內既衛生好講究,所以標準都應該要得到滿分。穴藏無論食材,餐桌,餐具,地方都好乾淨企理,合格都好理所當然。


服務:
入左房好快就有熱毛巾同熱茶,好warm。成餐飯重有位姐姐仔專程招待我地,好似VIP咁。雖然佢既活動空間有限,但係佢完全冇怨言或黑面,重臉帶笑容地埋頭苦幹,好值得讚賞。

巖穴之士:前雲海壽司師傅光師傅 ~ 一入到門口佢就認得出身材同聲線都咁出眾既爸爸,搞到爸爸開心到勁點頭。因為穴藏宣傳中冇提及過光師傅,所以爸爸見到佢時好驚喜,更增強對晚餐既期待感添。

 頭盤:食物擺放喺好別緻既"穴藏"木碟上,好睇得。每款食物都調左味,大部份都係酸酸甜甜,好醒胃;除左飯團,魚生,螺,麵醬青瓜同菜,重有白果,令口感好多元化,大家都好滿意。

 刺身拼盤:師傅教過刺身要由淡味開始食,不過對魚認識唔深既小弟通常都選擇由淺色食起
(池魚;油甘魚;拖羅;maguro;秋刀)。淨係睇相都可以感受倒色澤光鮮既魚材好夠魚油,咬埋落去簡直係頂瓜瓜。魚肉非常鮮甜香滑肥美,一D都唔腥,連平時我好少食既Maguro質感都好正;唔怪得知爸爸見倒光師傅笑到見牙唔見眼啦

天婦羅篇:
巖穴之士:前稻菊天婦羅師傅Eric,勇師傅 ~ 勇師傅既創意就好似一個藝術家咁,運用由稻菊帶過黎既天婦羅技術,用日本芝麻油同埋一D平時唔會炸既食材黎製成佢自創既天婦羅美食,令人嘆為觀止。

調味料:雖然餐廳都有提供我地平時常用既天婦羅醬油加蘿蔔蓉同薑蓉,不過師傅建議我地用檸檬,咖哩鹽,同海鹽點黎食,為求保留天婦羅香脆既口感。

 蝦;用海鹽黎點,果然係冇用汁液黎點咁soggy,好香芝麻味,而且好鬆化,尤其係個蝦頭,非常脆口,好似食緊薯片咁,完全冇渣,可以話係一個新體驗。

 沙錐魚:新鮮熱辣,自己選用咖哩鹽點,一D都唔辣,不過食落就少左本身既芝麻味;肉質都算係嫩,不過個人都係比較喜歡食生既魚多D。


 瀨尿蝦:要讚既係肉質唔嚡唔老;不過可能食慣椒鹽瀨尿蝦,所以覺得唔係好夠味。

 鮑魚:師傅解釋話鮑魚要煮左先再炸;味道鮮甜,唔洗點調味都已經好好味,不過就有少少韌。

 蜆:無錯係連殼炸,真係估佢唔倒。

  海膽:又一創意天婦羅,邊個會諗倒濕滑既海膽都可以攞黎炸呢?用塊薄薄既紫菜黎固定個海膽,重可以同時加埋天然既咸味,真係好聰明。食落脆中帶軟,好得意,不妨一試。

 清湯:清湯內有個魚蛋cube(真係方形架)同菠菜;魚蛋cube好似溝左豆腐喺入面咁,好軟熟,味道甜甜地幾得意;唯一唔係好夠熱。

Sake 篇:
巖穴之士:唔講真係唔知,穴藏有位全港得兩個既華人「利酒師」(日本酒合格品酒師)Thomas哥哥為客人挑選美酒配襯餐廳煮製既佳餚。當晚主人家好客氣,帶左好幾支喺日本買返黎既靚酒比大家品嚐。得知Thomas哥哥係獲得日本酒廠認可既利酒師時,主人家更邀請佢即席品評。因受酒精影響,而且離佢好遠,所以聽得唔係好清楚,只係記得兩樣比較特別印象深刻既野:
1) Thomas 哥哥試得出其中一枝酒因為收藏得唔好,味道已經變左。當然,佢立刻好仔細地講解應該點樣收藏日本酒啦。

2) 當比較酒既味道時,佢用"少女"同"少婦"黎作比喻,生鬼有趣,令人好易明,亦令氣氛變得輕鬆。

後記:
1) 今次好榮幸可以見識倒三位高人既功力,認真大開眼介。
2) 因今次係比人請,價錢詳情唔係好清楚,所以抵唔抵食唔夠資料評論。只係"聽講"穴藏既天婦羅比煮法一樣既稻菊平,壽司價錢亦算合理。
3) 同桌食飯既長輩感覺暗淡既穴藏喺格局上比較適合後生人幫襯;佢地覺得危險wor。

早在月前聽聞過,在中環港大校友會樓下二樓,新開一間日本料理"穴藏",負責天婦羅的師傅,是來自稻菊,價錢更平一大截,反正距離我任職公司相近,來個午餐,沒有難度可言.平日午飯時段,一個人來沒有訂位也碰璧,反而周六中午則可直行直入,我選擇坐在吧檯的炸爐前.看著師傅一邊弄天婦羅,也是一件賞心樂事.午市定食選擇甚多,有各式如鰻魚,刺身等定食,天婦羅方面也可要個天婦羅飯,如果要個天婦羅套餐,坐在吧檯前,師傅逐件為你炸,吃完一件炸一件,規格做到足,但我的時間不多,還是要個天婦羅飯套餐,一口氣最直接了當,此套餐的價錢為一百二十多.前菜為沙律和漬物,沙律菜上還有炸過的金菇,令到沙律菜的層次不致太過單調,漬物為蘿蔔牛柳粒.師傅在天婦羅炸爐前,由沾粉到下爐炸,直到炸起放上架隔油,整個過程一覽無遺.不消一會,我的天婦羅飯便連同麵豉湯,奉上我面前.麵豉湯質素不俗,喝下去濃而不咸.天婦羅飯內的炸物,有粟米荀,青椒,薄薄一層的炸漿,酥化可口,包著的蔬菜仍然爽甜,保持著水份,其他的海鮮有花竹蝦,頭同身分開,蝦肉鮮爽,吃下去感覺香甜,蝦頭酥化得來,更有一份甘香,皆因蝦頭內有蝦膏在內.魚肉有鱈魚和鯖魚,前者肉質鮮嫩,後者

炸蝦餅除用蝦肉為主角之外,還混合其他蔬菜,如南瓜粒,青椒粒等等,蝦肉鮮甜彈牙,南瓜粒和我一樣,咬落"粉粉"地,吃下去很滋味.在上桌前所有炸物已一早隔去油粉,所以天婦羅沒有一點油膩感,炸物下的白煩,過吸收了炸物的香氣,再加上醬油之味道,這個白飯一樣有睇頭,可是炸物做得出色,可憐的白飯,已淪為大茄了.

只是百多塊價錢,便可在中午吃一頓有水準的天婦羅,當然物有所值.我不會說吃不起稻菊,便要來穴的說話,這樣未免對後者不大公平矣.
