朋友說小妹嘴饞,喝 Bourgogne 還是吃法國菜為妙,我沒有理他,就看 menu,那位朋友跟 Chef Tim 相識,Chef Tim 出來親自為我們介紹 「是日精選」,很多都是 off menu 的,小妹不吝嗇,都叫了最好的,不然怎襯得上桌上佳釀?

【 Bread Basket 】普通的 flat bread、grissini 和「田園」一點的麵包兩款,雖然應該是買回來的,麵包質素不差。說實話,講 grissini (那麵包條)Grand Hyatt Grissini 的 grissini 是很出色的,只是食物普通,服務也有不足而已。

一支 Jules Desjourneys 的「入門」Mâcon-Verzé 白酒,在舌頭上跳彈的 minerals,還有花香,隱約的檸檬,小小 oaky ,跟頭盤十分合襯。有點酒身的白酒,用來配搭跟住下來的藍龍蝦和鮑魚原來也很好。

【 Blue Lobster 】烤法國藍龍蝦,太過美味,都是小妹常常的問題,還沒有拍照就吃掉了🙄。朋友後來請店方拿一隻龍蝦出來給我補拍一張「本尊」,感謝感謝 🤩。

一路吃下來,小妹覺得 Chef Tim 有很出色的 palate,今晚每一道菜,很簡單的菜式,複雜在於味道,不僅層次,味道紛陳的搭配更是和諧,這是高級料理的表現,不是一般照 recipe 的「行貨西餐」和「亂來等同創新」的 gimmicky 餐廳能做得到。

然後是主菜【 Grilled USDA Sirloin 】普通煎牛排,當中妙絕顛毫,不計 grill mark 很漂亮,還有完美的是 medium rare to medium 的 doneness,細膩而深刻的 jus,又沒有掩蓋了濃郁的肉香。不知道上一次吃到這樣完美的一塊牛排是甚麼事時候了。配以今晚的重頭戲紅酒,真的是 literally bonheur 呢!

簡單講一下今晚的酒吧。

Domaine Ponsot 大名鼎鼎,Laurent Ponsot 和兒子從 Domaine Ponsot 走出來用自己名字做生招牌開了新酒莊。今晚喝的 2018 年(酒莊第一年的出品) Chambolle-Musigny ‘Les Charmes’  是一支 Premier Cru 。 Chambolle-Musigny 就是小妹至愛的 Burgundy 村。

雖然極新 —— 如果是 Comte Georges de Vogüé 的話,2018 年連村酒小妹都不會開來飲的,為了試酒,而且 2018 酒比較早熟,先開一支試試。充滿 femininity 的 Chambolle-Musigny,在 Laurent Ponsot 手中成為揚眉女子喔,而且越飲越甜美,最後有點美國 Pinot Noir 的身影啦,very forward 。

跟著來的 Georges Lignier 的 Gevrey-Chambertin ‘Les Combottes’,都是 Premier Cru,見到 Lignier 這個姓氏,都要認真看待啊。這 GC 甚為傳統的 Bourgogne,mineral 中帶著特色的「電油」味道,花果芬芳深藏不露,留在最後喝也好,清一下剛才那支酒留在舌頭上甜蜜。

又喝又飲(還有第四支 Dujac 都沒有開了),吃到這裡,鮑魚、龍蝦、牛扒,已經吃不了甜品,就此作結。

【 總結 】

今晚晚餐,小妹喜出望外。食物味道與餐廳服務都很好。總結不如講一下對一些 fine dining 餐廳 chefs 的想法。

小妹認為好的 chefs 有多種,有些費盡心思做複雜菜式,擺盤美輪美奐,又把自己的生活與歷史灌注菜式中 ,例如主理西班牙 El Cellar de Can Roca 的 chefs 可以歸入這類,你可以稱呼他們 maestros「大師」。

另外一類比較傳統,卻天生我才,擁有 refined palette,味道調配隨心所欲。因為味覺敏銳,做出來菜式味道特別美味和諧。你可以投訴他沒有創意,缺乏花枝招展的擺盤,但得承認食物很美味,小妹估計,Chef Tim 就是這類廚師

【 最最後 】想講一個故事作結。小妹讀藝術史時,老師說一八三二年 Royal Academy 夏展,Constable 和 Turner 兩位名畫家分別以 The Opening of Waterloo Bridge 和 Hetvoetsluys 參展,一時瑜亮。Constable 的 Waterloo Bridge 描繪倫敦河岸,點點猩紅,而 Turner 的 Hetvoetsluys,海上景色,青藍冷冽。 Turner 見自己作品和 Constable 燦爛而豐富的 Waterloo Bridge 並排而展,生怕給比了下去,馬上在自己那幅清冷畫作的海浪之上掃上一點嫣紅,彷彿海上浮標,那一妙筆生花,如寒冬中的暖流 。老師認為 Constable 無可否認一位大師,但  J. M. W. Turner 則是一個天才。

廚師也一樣,兩個人的廚藝一樣,才華決定勝負。

龍蝦🦞
一隻龍蝦可以作出每半邊不同的煮法,一個是芝士焗一個係燒。同一時間可以試晒兩種發揮。

牛扒
牛扒份量非常好,對於男士嚟講10分喜歡這個份量,而且燒得剛剛好不會有Overcooked。

甜品是招牌的芒果拿破崙
芒果份量非常多,而且不酸,配上吉士及香脆的拿破崙餅酥。

剛好係生日特別order心太軟,這個就同一般的心太軟沒有太大嘅分別

約咗朋友食晏,佢推薦呢間。我第一次去,都有啲期待。朋友叫咗個牛扒,我食咗一嚿,味道都唔錯,有牛味。我自己就叫咗個龍蝦pasta,小辣,味道OK,咁嘅價錢,都收貨啦。另外甜品就叫咗兩個芒果拿破崙cake,賣相OK 㗎,可惜我嗰件呢舊芒果就太熟啦。但我都收貨嘅。本來餐晏都算開心嘅,但走嘅時候,朋友去埋單,我唔熟地方,所以跟埋朋友去咗賬房嗰邊,間餐廳地方都係狹窄㗎,所以就變咗阻住佢哋賬房個門口前面條通道。其實我都係喺嗰度停留咗唔夠兩秒,搵緊個lift口喺邊度,竟然有個侍應同我講,喺出邊等啦,你阻住個門口啊。我心諗有冇搞錯啊,點解咁冇禮貌㗎?呢度啲人。但我都冇出聲,費事令朋友尷尬啦。結論係,除非同朋友去食晏,否則,我自己係唔會去,因為話晒都食法國菜喎,服務都緊要㗎嘛。

上環這邊的西餐特別多,這天試了這家很不錯的法國菜!一開始就是一籃麵包,然後服務員會推介今天有什麼不在菜單上的東西可以當成前菜/主菜,一般是一些當日來的海鮮。我們都只點了菜單上的項目,前菜最為驚豔,法國野生鰻魚跟鴨肝都非常好吃!另一個伊比利亞火腿點半熱的軟芝士也很好吃,就是本來不喜歡芝士的我也忍不住用麵包點那芝士。朋友的龍蝦湯很濃,配麵包不錯。主菜的牛排比想像中大很多,本以為法國菜會份量很小。牛排配的芥末更有兩種選擇,服務員會過來問你想要一般英式的芥末還是法式芥末,法式會偏酸一點,我好像是第一次吃法式芥末,我覺得比較一般的好吃。反而龍蝦有點失色,肉質有點過軟,但是完整一整隻,一半芝士焗,一半普通燒。還有一個是當天新鮮的魚,忘了服務員推薦時說的是什麼魚,但調味跟肉質也剛剛好,有點驚喜!甜品點了網上大家都推薦的芒果千層酥,可能是期望太高,覺得有點普通。另外點了一個姜味梳芙里,很大一個,不是很甜。大體上這家食物味道很好,食得出很多都是新鮮的食材,而且不是那種吃不飽分量的法國菜 (香港很多西餐廳都是吃不飽的)。 看到他午餐還有套餐大約$200多港幣而已,下次可以來試一下午餐,應該性價比更高。

另一個伊比利亞火腿點半熱的軟芝士也很好吃,就是本來不喜歡芝士的我也忍不住用麵包點那芝士。朋友的龍蝦湯很濃,配麵包不錯。

主菜的牛排比想像中大很多,本以為法國菜會份量很小。牛排配的芥末更有兩種選擇,服務員會過來問你想要一般英式的芥末還是法式芥末,法式會偏酸一點,我好像是第一次吃法式芥末,我覺得比較一般的好吃。

反而龍蝦有點失色,肉質有點過軟,但是完整一整隻,一半芝士焗,一半普通燒。

Happy Friday dinner and pleasantly surprised to the upside by the quality of the food at Bonheur.  Wine-friendly and very good service by the team, with introduction to the menu and insight into each dish, also suggestions to share the daily special was much appreciated.  In the end the cost per head came to over 1k but we all felt it was worth it as we had such a good time.  My favourite dish of the evening was Linguine "Bonheur" with chilli, garlic and termite mushrooms,  it is even better tha

Other Info. : Tried to book but was put on the waiting list, and then got a call with availability and delighted to have been able to take up the offer to dine there. It was a pleasant surprise and well worth the wait! Dining room a bit crowded but the atmosphere was convivial and casual.
