This is our 4th visit here, probably it is going to be the last time. Our first time here,  it was very busy and we were kindly guided to the secret back bar for a drink while we were waiting for the seat. This is our 4th visit here, probably it is going to be the last time. 

Our first time here,  it was very busy and we were kindly guided to the secret back bar for a drink while we were waiting for the seat. The blue tiles were very eye catching, amazing design of a restaurant. The restaurant was heaving with great atmostphere, the food was great. We were sitting on the bar counter having fun watching the chef preparing the food like a show and enjoyed the food. 

By the 2nd, 3rd and here we came the 4th time, the experience has been progressively worse. After the 4th time, we decided that's it. 

When we stepped into the restaurant, it wasn't busy and there were table available. The woman who served us put us to the bar counter, i don't mind sitting on the bar counter, in fact i quite like it because i like watching the chef cooking. The problem is the resturant wasn't busy and wansnt full at all. The tables might have been reserved... we didn't know. But we had a feeling that we were put to the bar counter just because we didn't book. 

We sat down, spent some time looking at the menu, looking what the chef was making and see what we would like to order. The same woman looked at us from a distance inpatiently and came to us asking if we were ready to order. That's fine, just felt a bit pushy. We made our order --- pan de tomate, pardon peppers, Jamon croquetas , Chicken and chorizo paella, Salt cod with tomatoes and chickpeas. The pushy woman really got to my nerve by asking," to start with right? " Does we mean we are not ordering enough? when it came to drinks, my husband ordered a jug of sangria, i said i am happy with water. She was displeased. I ordered food and i don't think it is compulsory to order drinks. 

All the food came together almost of the same time. They were all cramped on the narrow bar counter. It made like feel like having a meal at a fast food shop.. 

I am not going to go into details of how each dish is like. Everything was pre-prepared. Everything was overly greasy and salty apart from the pan de tomato.... we did expect the size of the dish to be small, as it wasn't our first time here. With the worsened quality of food, the food is really overpriced. The cod was a special dish of the night which cost $218, The size is really ridiculously small. Paella was way to wet and extremely salty. It might be because of the chorizo, but it tasted like overseasoned. 

We asked for the bill and asked to have a refill of my water. The same woman came with the bill, and only filled my water glass to half full. I know we were leaving, but it's just tap water. why can't you fill it up more?  I really wanted to complain to her but i guess she wasn't having a good night either because i heard her swearing in cantonese when she was talking to the chefs. 

I am pretty sure we are not coming here again. And you can totally understand why 22ships is still pack full of people while ham & sherry is so empty. Very sad and disappointed because we did like this very much when it used to be good.

對灣仔區食肆黎講,閒日午市應該最旺場;XO仔客觀分析,歐陸味濃o既「Ham & Sherry」除咗裝修較有特色之外,半黑面o既服務生態度只屬一般,不過估計店內食客不多o既主要原因應該同其高企o既價格、袖珍o既份量、質素參差o既食物、及午市不大吸引o既套餐選擇有關。

First thing first, all our orders were tabled at the same time yielding us literally no space to manoeuver at the already narrow and tiny bar table. The food options certainly are less extensive than their sherry counterparts with a lot of deep fried stuff. As we saw from where we sat with a fantastic view of the kitchen actions, a lot of food seemed to have been prepared in advance and only need to be reheated...!? Irrespective of the leg of ham displayed on the countertop, the Bellato we ordered seemed to be packaged pre cut stuff. The prawns had their pitiful heads fallen off from their bodies as soon as they were lifted from the dish because they were so unfresh and tasted awfully stale in spite of the excessive garlic marinate coverage. 

Chefs work there are Chinese young chefs who spent most of their time looking at their phones than socialising with customers, waste of an open kitchen concept.

What added to the less than pleasant experience was the water dripping from the air con from above our food!

The kitchen is an open one which at the centre of the restaurant so whenever the chef cooks ...all smoke just comes out ....... and we are being smoked for the whole lunch and we all stinks after the lunch for the rest of the day! terrible! for the food it sells tapas .. spainish cuisine but they are just average, the paella is too watery.i guess hype of its nice decor is overrated. service is good though but i will never come back if they cannot fix the smokey problem which is really a big turn

Pallela is weird with beans in the dish n tomato color too artificial. Seafood that comes on top just dry. 

I think this restaurant is seriously too hyped up. Disappointed that Jason A and Yenn W have put their names on it but product is sub standard. I ll go Ricos or any mid levels Spanish rest anytime. This is a waste of time. The. Noodle place I tried at Pulse today, Yenn W product is great by comparison.

到今次主要目標 Burger, American Beef, Chedder, tomato, pickles and comeback sauce, 漢堡包份量不少, 賣相不俗, 麵包烘得微脆, 內裏鬆軟, 有一定的麵包香及相當水準, 牛肉肉味是濃郁, 肉質軟熟, 要 medium 也能做到, 入口不感覺油膩, 加上泡菜及自家回頭醬汁(comeback sauce), 非常好吃, 其出品排在筆者心目中香港最高素質的漢堡包三甲之內, 必試 !

It was our first time here in Ham & Sherry last 9th April and had some snacks and a few drinks. Really enjoyed the salt&pepper chipirones with squid ink, pork scratching and spices as well as crispy garlic chilli prawn. We also enjoyed their refreshing mocktails - maracanã and beach bum and the de-toxic crusader. Service was great, too. Will surely come back again!! The Bar manager Ryan was really accommodating

We'd made a reservation for 7pm, for my birthday dinner with my family after seeing the reviews and impressive score. Thought it would be a nice place to try some exciting food. The exterior was nicely designed, and carries into the interior decor which uses the same blue and white tiles paired with a sleek central kitchen and aged wooden tables. We'd made a reservation for 7pm, for my birthday dinner with my family after seeing the reviews and impressive score. Thought it would be a nice place to try some exciting food.

The exterior was nicely designed, and carries into the interior decor which uses the same blue and white tiles paired with a sleek central kitchen and aged wooden tables. It's a pretty looking restaurant, but the seating in the place is quite cramped, in a way that you're practically rubbing shoulders with the next table. The closed quarters and non-sound-absorbant decor meant that noise was a huge issue. I could barely talk to the person across the table...it was that bad.
The food menu is small, with maybe 2 dozen choices of tapas on one page and about 12 pages of wine. There are no "bigger dishes." Everything is tapas-sized and meant for sharing, as a warning note. It is not a easy menu to navigate unless you have decent knowledge of Spanish food terms. They'd run out of the Goat curd croquettes which we wanted to try, and replaced the menu's clams with razor clams (daily special). Despite this, all the food items we tried were quite good.
Items ordered for 3 people:

-Chicken & mushroom paella : rice seemed a little mushier than neccessary but flavourful
-Baked cheese with sweet crusted top, served with bread slices : Star of the night, a sweet and oily creamy stringy thing on bread. Needed more bread, as it went down really heavily with only 3 slices.
-Australian rib-eye with crushed tomatos : We ordered medium rare, it came blue. Nothing to sing home about. Needed a dash of salt and pepper.
-Seared scallops on a bed of dressed greens with bacon: Nice colour on scallops but tops had no texture, and was a bit rubbery inside. Needed lemon. Definitely had better. The salad under it was flavourful but the entire dish was really, really salty.
-Fried squid with squid ink aioli : Nicely done, especially the addition of zingy pepper slices and the creaminess of the squid ink sauce.
-Braised octopus with chorizo, served with bread slices : I expected octopus, not baby octopus, when you put octopus on the menu. Flavourful in tomato sauce, but nothing wow. Again, 3 tiny slices of bread with 6 pieces of octopi...not the correct ratio.

My biggest issue with the entire night was the poor service. Our waitress was a very pushy woman and was visibly displeased when we didn't order drinks. It wasn't as if we'd ordered the cheapest food on the menu or 2 plates between 3 people. All our food came within 5-10minutes after we ordered. We were quite shocked because most of it had to be eaten hot, and we had to scramble to eat it while warm. Of course most of it got cold before we got to it. We look over at the next table: their food came one plate at a time. It was obvious the kitchen was not timing our meal correctly, or the restaurant just wanted us to finish and get out. That is really the worst feeling ever, and really ruined the meal for us. We finished all the food in 20 minutes. My mother was still sawing through her last few bites of steak when the waitress came and started cleaning everything off our table. It was 7:45 at this time. Ridiculous. I don't care if there are people lining up outside. This isn't a fast-food restaurant, and I think a decent hour and half should be allowed for each table. The waitress then started pushing the dessert menu on us a few times, signalling that if we weren't getting any, we should probably get out soon. I persisted in staying with a water refill for another 15min as we were in the middle of a family conversation.

Bill came to around $800 in total. Service is not included, and at this level, I'm fairly tempted to leave a very, very low tip for ruining my birthday dinner. It is ridiculous: if the establishment had any respect for food, it wouldn't be served like this.  

Honestly, the meal was tasty enough for the price, but like so many places in Hong Kong, the service really failed to impress. Will not come again as no food tastes good cold, crammed down our throats, and when the customer has to deal with annoying staff.

另一個特色之處是這個頭盤的溫度只比室溫略高一點。混和起蛋來更會覺得它溫溫吞吞的, 不容易接受。大概也想像得到原因。相信是怕湯太熱的話會不小心吧蛋煮熟吧。但個人覺得反正湯都是上桌時才由侍應為你加入, 就算熱一點, 也未至於可以把蛋給煮熟。但對整體感官來說卻是有正面的影響。

這個湯直接飲用的話實在有點太咸, 不過當你把蛋戳破混和起來同吃, 口感就多了一重滑膩, 少了幾分的咸, 湯的鮮味就更突出。加上蘑菇碎, 著實是幾好吃的呢。少少的一碗份量不多, 但因為味道重, 倒也令人覺得足夠。

Chorizo 不是第一次吃, 不過夾入麵包做三文治卻是第一次。只可以說一句, 不能有下次! 始終Chorizo 是一隻非常非常濃膩的西班牙香腸, 而這個三文治的配菜卻只有火箭菜, 絕不足以平衡那肥膩。只吃一半已經覺得太多了。印象中麵包的質感似乎也不賴, 但這個三文治留給我的印象只有一整個下午滿口的chorizo 騷香...

既然主餐吃不夠, 那跟餐另外加HK$20要Garlic fires 來吃吃看? 竟是沒有貨! 只好在sides 里挑點甚麼來吃吃吧。這個炸小墨魚非常的好吃, 小墨魚肉很嫩, 調味又足, 忍不住要一口吃一個: 噢不過要小心, 因為都是剛剛炸起的, 小墨魚非常燙熱, 搞不好會燙到自己呢。而墨黑的蛋黃醬也是另外一個亮點, 味道鮮明可口, 很有趣。

另外還有點一個Goat’s curd and Jamon Croquettes HK$60, 才兩小隻, 半個挴指的大小! 因為看到就覺得很洩氣所以連照片都沒有拍... 味道上來說, 個人覺得它比小墨魚更好吃, 外脆內軟, 芝士味濃郁可口。但價錢也太貴了。傷心是看到別人吃這個可樂餅是一份有四小隻... 就是兩倍的意思! 我寧願它是加價, 也不要維持原價然後偷偷的減份量好不好?

總的來說, 不算是太好的一次午餐經驗。侍者們都非常的冷漠, 也不令人感覺到她們是願意幫忙或者是有心去介紹自家的食物給你。「來了就吃, 吃了就走吧, 別來煩我」的感覺。食物方面還好, 但應該要隔一段時間才會考慮回來了。

lunch set,咖啡,soup,burger, fries咖啡OK,比一般的coffee要strong一些。野生蘑菇汤很赞,香浓,蘑菇口感极好,稍微有点咸。beef burger很棒,有beef, bacon, onion,tamato。牛肉很嫩,口感非常好。洋葱酸酸的很开胃,而且没有那种辣味,吃完口气不会怪怪的。bacon香脆fries真是必点项目,大家推荐的没错,口感一流!

It’s the navy blue and white mosaic patterned tiles decorated wall that has been garnering Carly’s attention every time as she passed by Wanchai Ship Street alley. Now the Gang has managed to give this nice Spanish place a visit – it came to Carly’s sense that this was the place to stay. The mind blobbing ham savory scent from the open kitchen spreading to the corners of the restaurant, cozy European authentic ambience and pace, vintage yellow dim lamps and dark colored tone of wooden high stools and table and sofas reminded Gobay of the beaming life of little towns in European countries, the Gang quickly sunk into their leather sofa corner as our photographer was delightedly busy taking snapshots around already.

這個絕對是亮點,推薦必試!西班牙人就愛吃原隻的墨魚仔,大小剛好是一口一個。它的傑出之處不是香脆,相反它是軟軟嫩嫩的,特別是咬破墨魚筒,裡面的半橘紅半透明的墨魚籽呈半流質蟹膏狀,濃稠配上鹹鮮的墨魚汁蛋黃醬——軟韌的上半部 (墨魚筒)和清脆的下半部 (墨魚鬚)結合在一起,味道和口感昇華到一個很難形容的層次,如果實在要類比的話,愛吃韓式醬油生蟹拌白飯的朋友可能體會得到:那生鮮稠密又滑潤的甜蟹膏,半流質狀地被放置到一勺熱白飯上,再加點醃漬蟹的醬油汁——就和這種感覺一樣,層次豐富但單純無花巧地,把食材原始的味道發揮到極致。去試試吧,即使它的膽固醇含量偏高,但人生有多少個十年!

Spotlight please! Spanish love having squids in one whole piece, galloping one with just one bite. Deep fried with salt & pepper, instead of a usual crunchy crispy texture, it was soft and velvety as soon as you take a bite, the squid eggs in half pinkish half translucent color, was smooth creamy, interestingly exciting on the palate! Complemented by the rich fresh creamy squid eggy aioli sauce, the fresh-from-water squid was soft chewy on the upper part while zippy for the tentacles. Marine savory flavors burst in your mouth, perfectly complemented by the semi-soft and creamy squid, and that mysterious scrumptious black squid ink cream sauce. Don’t think Carly ever had squids in such complex textural experience before, Ham & Sherry already woah-ed us with its contemporary Spanish tapas. Cholesterols? Who cares!? YOLO.

也許是內裡的質地特別地像奶油般滑,所以顯得外皮很脆。羊乳和火腿各自都保留了自身味道的特色,羊奶凝乳和羊奶芝士不同,類似未完全熟成的白色軟芝士(cottage cheese)。它微酸且口感像,火腿微鹹,很有風格的味道,挺好吃的。

Goat’s curd being full, rich and creamy in texture, deep frying into croquettes were very ideal as the cheese will become smearing creamy melting good. Cheese curds are the solid parts of soured milk, close to the texture and flavor of cottage cheese which has not been fully processed, they squeak against the teeth when bitten into, so people name them “squeaky cheese”. For a poutine lover like Carly, cheese curd is the one thing that she can tolerate without the heavy cheesy flavor and it’s an amazing idea of Ham & Sherry’s chef to leverage the use of creamier and softer texture of cheese, deep frying them into semi-soft indulgent croquettes. Mixed nicely with those bits and pieces of savory jamon, Carly felt settled in with these crispy lipsmacking croquettes already. Ham & Sherry, will you surprise me more?

大蒜濃湯 (Sopa de Ajo),馬德里傳統名菜,通常由新鮮番茄,大蒜,橄欖油和麵包碎等製作而成。湯的味道簡直就是酒吧裡的黑、綠橄欖綜合體,愛吃橄欖和喝Martini的人肯定覺得不錯——小小的橄欖味道濃烈得能讓你舌頭長出一棵橄欖樹來!其實味道還是可以的,口感能嘗得到加了類似麵包碎的東西使其稠密。多喝幾口你也許會問大蒜在哪兒,因為這個湯的大蒜味道是一點不濃,很微弱——結論是它應該改名叫「醃橄欖濃湯」。其實我們沒有人喝過正宗的西班牙大蒜濃湯,所以請有喝過的食友留言解畫,為吉碟幫眾開開眼界。 洋蔥很軟很甜配多士感覺挺新鮮的。
Sopa de Ajo – the Soup of Garlic, consider this as the authentic Spanish dish from Madrid, it is usually chicken broth cooked with fresh tomatoes, garlic, olive oil and bread crumbs. Ham & Sherry went really heavy on the olive flavoring by adding a mix of both black and green olives. Interestingly, garlic fragrance was too subtle and Gobay suggested that this should have been named as “Soup of Olives”. If you are an olive lover, this is one of the places around Hong Kong where you rarely get to indulge in your favorite pickled snacks. Plus that little crunchy piece of toast on the side, drooled over by a spoonful of sweet caramelized onions.

大家一致的反應是:很油膩,橄欖油放太多,而且有點過鹹。除了火箭菜 (又稱 “Arugula”),紅洋蔥和山羊奶芝士之外,還有紅黃兩色的紅菜頭——沒錯,黃色的紅菜頭比深紫色的稀有得多,其實還有綠色的也能吃,還有一種很特別的切開是一圈白一圈紫紅像樹的年輪一樣,叫做 “Chioggia Beetroot”。蔬菜其實蠻新鮮的,被「油光」摧毀了。

Chioggia Beetroot are striped candy looking beetroots, milder in sweetness and rare in sight. Unfortunately, the fresh zesty beetroots flavors were drowned in that overflooding olive oil, overall the other veggie like red onions and rocket tasted like they were fresh from the market. Too bad the overdose of olive oil destroyed this refreshing salad.

這個大家都知道,沒什麼特別的,只是要稍微提一下它的脆火腿粒,和普通凱撒沙律中的煙肉脆粒不同,這裡用的是火腿脆粒,味道是鹹鮮的火腿味,不喜歡煙熏味的食友可能會挺推崇,可惜量非常的少又很細碎,近視度深一些都看不見吃不著。

Ceasar salads – it’s hard to impress with an ordinary salad, Gobay noticed their crispy bits of ham were different from the regular bacon bits you get anywhere else. Jamon crunches were added to evaluate the aromatic ham savory flavor, if only they were more generous on the crispy bits, Gobay and Carly nearly had to put on spectacles just to take a closer look.

推薦不怕鹹的食友必食——口感堪稱完美!豬肉絲在豬油裡慢煮至軟化但仍有一些咬勁時和Tetilla芝士 「糾纏」在一起,酸瓜的鹹味過濃使得整個三明治都偏鹹,但麵包烤得非常鬆脆,口感很上乘。Tetilla芝士口味比較清淡,是普通奶牛的牛奶做的,口感柔軟,外形異常性感,所以命名為 “Tetilla”,西班牙語裡是 「女性胸部」的意思,完全源於芝士的外形,和味道無關。
Carly loved this to its death – okay, point taken that this is considered salty for most folks but there is a reason why this was so good! Texture-wise – perfection! Confit pork being cooked in its own fat till it turns tender and soft, condensing the meat flavor. Pringá is a Spanish dish popular in rural Andalusia, rather homey style of cooking as the pork is cooked till it turns into crumbling bits, being tangled with the chewy tetilla cheese, the buttery and meat oil fragrance burst in your mouth, making this heavenly scrumptious. Even though the pickles were a bit salty, the golden crunchy bread was too good to complain about, as you can hear the crispy sound as you take the first bite into that sandwich. Tetilla is the most characteristic cheese made in Galicia, often used in desserts, relatively soft and less strong in taste; it also refers to woman’s breast in Spanish for the cheese shape, sexy much? Ya.

Served in a hot sizzling mini size of pot, chicken and the rice were a burst of flavors, even though those shiitake mushrooms were well-seasoned with a mild heat of spices. Unexpectedly, uncooked rice was found in the reddish paella and it was a bit too salty for its relatively small portion of rice compared to chicken and mushroom.

我們特意問了侍應是哪裡的牛肉,他的回答是美國安格斯。但吃起來的感覺一點都不安格斯,而且一般安格斯牛肉都會大模斯樣地躺在菜單裡,絕對不會一個 “American beef”就帶過。但就算是常見的美國Prime Beef,它的三成半熟度依然做得很好,不用擠壓就能看到泛著銀光的牛肉汁流出,讓人未吃先興奮!麵包完全是意大利「拖鞋麵包」 (Ciabatta)的口感 (麵包的形狀很像拖鞋,外鬆內軟,所以歐洲大陸戲稱其為「拖鞋麵包」),蓬鬆柔軟,牛肉汁一咬之下就滲進了麵包內部和芝士番茄等融為一體。醬是密西西比辣醬,英語可直譯為「吃過翻層味醬」,美味程度可見一斑——通常是由蛋黃醬,辣椒醬,茄醬和芥末等等多種原料「混醬」而成。它算是香港最好吃的漢堡嗎?難說!但一定是前五名優勝,推薦必食!

The Gang has been trying out so many burger places – Burgeroom was a letdown, Butchers Club being more of a hit and miss, Beef & Liberty been sitting on the top of the list for gourmet burgers, Ham & Sherry gave us a thrilling surprise as one of the best burgers we’ve had recently! Rather flawless burger construction, clean and nice easy to hold in one’s hand and enjoy all the compositions in one bite. The waitress stated that the beef patty was made from Angus beef yet Gobay suggested that if Angus beef was used, it would be rare to not see it on the menu. Regardless of where the beef came from, the beef patty juice was already flowing after grilling. Mixed with fingerlicking comeback sauce – dipping sauce with a base of mayo and chilli sauce, originated from central Mississippi in America, hands up! The Gang is definitely going to come back for more! Ciabatta, authentic Italian white bread made from wheat, flour, salt, yeast, water and olive oil. Being somehow elongated, broad, and flat type of bread, it certainly looked like slippers. Soft and semi-bouncy like Ciabatta, extremely juicy and well-seasoned grilled beef patty, fresh zippy veggie, refreshing and lively comeback sauce, it was one of the most enjoyable burgers the Gang has ever had in Hong Kong.

招呼我們的侍應服務態度很奇特:先給冷漠悲催「愛吃不吃」臉色讓我們大倒胃口,而見識了DVD魅力攝影之後,再把眾人服侍得如痴如醉如在夢中,前後分別猶如地獄天堂——我們「經歷此劫」也是長見識了。但單從餐廳環境和食物質素而言,這裡絕對是值得定期造訪的香港西班牙餐館之一!

Ham & Sherry came to the Gang’s surprise have aced one amazing burger without playing too many tricks and flashy magic on the self-acclaimed “Angus” or “Dry Aged” beef. Interestingly complex and creamy squid appetizers, and that golden crusted confit pork sandwich which was equally enticing to crave for. Carly regretted to not have paid this place a visit earlier, lunch sets were considered very reasonably priced, on average of HKD140 (service charge included) per person.

Compared to 22 Ships located on the same street, owned by the same boss, Ham & Sherry ‘s food was more impressive and hit some high notes with simple Spanish authentic dishes. Sometimes you don't really have to play too much around fushion or fancy ingredients, just go to the point, be classic – adding a slight twist will delight a bunch of food lovers too.
