解說一下,方脷魚不同鰨沙魚,兩者外型相似卻大有分別;方脷算是名貴魚種,貴過鰨沙很多。據聞以前是水上人叫此魚做方脷,後來大家在酒樓吃石斑吃厭了,發現有呢隻好食的魚,也就越來越流行,身價亦因此提高。

「方脷」的肉不太厚,是比較薄肉的魚款,只得一條大骨,油炸後連旁邊的碎骨整條吃也不怕啃骨,非常鬆化脆口.

小店最適合好朋友聚會,中菜小店更是首選。每間小店都有它的獨特之處,美食之外更可以細味店主的品味,增加不少樂趣。今次聚會,朋友推介座落於塘尾道「酒筷子」。交通算是方便,由旺角地鐵站步行也只需要10分鐘。店面不算大,放置10張枱,全店只有10多個客人,店員安排我們在近窗的角位位置。雖然窗門被遮蔽,欣賞不到旺角的夜景,優點是只有一枱食客最接近,傾偈非常方面。以清酒鵝肝、鹽水鴨作為前菜。煎、焗的鵝肝味濃但油膩,凍食鵝肝可以減少油脂做成的飽滯感,但味道變淡,廚師用清酒增加香味,效果不錯。鵝肝經咀嚼兩三下便溶化於口腔,作為前菜是不錯之選。再試鹽水鴨,鹹味滲入鴨肉,肉質實在。鵝肝與鹽水鴨,一軟一實,好味😋。辣子雞海參的鮮味與香辣平衡處理得好好;桂花陳酒蜜叉燒色澤自然,較傳統烹調方式淡,肉質鬆軟並滲出淡淡酒香,不錯。鳳梨咕嚕肉賣相與一般中式酒樓無異,咬一啖感受到外脆並有肉汁流出,有驚喜👍🏻。淮陽炒飯最特別地方是脆卜卜的蛋絲,加上蝦、瑤柱、蟹肉,口感自然有新意。經理送十勝砵仔糕作為甜品,可能已有七八成飽,吃不出糕點的甜味,紅豆比預期硬,尚可。

Happy to find some Japanese style cooking in a Chinese restaurant. Each abalone was cut to two pieces and it was very juicy and tender with a mild sake flavour, paired well with the wasabi sauce.

🥂Garlic Shrimps $124/2pcs
Super fresh shrimps as you can tell from the shrimp paste. Steaming time was just right that kept its sweetness and bounciness. Simply adding minced garlic on top that enriched its flavour. Could have a bowl of rice with the sauce alone.

來到重頭戲~店員會先將整條魚呈上給你拍照,之後再剪成一塊塊方便食用,方脷還是第一次吃,肉質厚身結實帶魚香,值得一讚是魚皮燒得香脆帶鹹香,燒到將油脂逼出來,咬下去時是滿滿的魚油香🤤全晚最好吃必定是這道!
