Arriving to the Fuk Wing Street branch on a Sunday afternoon there is already a queue outside. But without waiting too long we can get our seats. Here everyone will share table, and I guess around one-third is tourists from mainland China, but I also hear there are some visitors from Singapore too.

We order the Dried Shrimp Roes Stirred Noodles with Beef Brisket and Tendon 蝦子牛腩牛筋撈麵 ($46). There are plenty of dried shrimp roes scattered on top of the noodles, with the beef brisket and tendon very tender and soft, with deep flavours. However, the highlight is definitely the noodles, with a good chewy and bouncy texture, but not tough on the bite. It is fantastic, and no wonder is their signature, and I applaud the owner continues to stand firm to make these noodles in the traditional way.

I also order Dumpling with Soup 招牌淨水餃 ($34). The dumplings are fairly big in size, freshly made daily as we see a staff busy doing that on the side. The dough is thin and soft, with the pork and shrimp fillings seasoned well and very delicious. Together with the tasty broth prepared, it is another must-order in my opinion.

With a couple of soft drinks, the total bill on the day is $150, very reasonably priced. While the décor or service is ordinary, this is in many ways a gem that we should continue to treasure and nourish in Hong Kong, especially the craft of the bamboo pole kneading.

在深水埗想吃碗竹升面,总会想到刘森记。有两家店都在深水埗,离得很近,之前吃了桂林街上的刘森记,福荣街这家近来频繁光顾。🪴环境:在文记车仔面的马路对面,店面温馨,干净卫生。内部空间宽敞,桌位多,就餐高峰需要拼桌。🍜虾子捞面,点单最多的是双拼或三拼的虾子捞面。细细的竹升面,捞面油润弹牙。虾子品质一般,量给得非常足。黑牛百叶,未漂白的千层肚,作为经常吃毛肚千层肚的川渝人,这黑牛百叶品质可以说非常好,有韧劲又爽口。鹅肠脆嫩,姜葱压住了腥气,也处理了大部分油筋。鲜牛肉片,口感细嫩,会搭配一个蘸碟。面底也有搭配青菜,捞面配的汤里也是满满的虾子。汤面,只吃过墨鱼丸鲜虾云吞面。云吞没什么卖相,不过内容扎实,虾仁新鲜,也有虾籽,味道正常。墨鱼丸不是圆形,每颗丸子都有一个缺口。能吃出墨鱼肉,但墨鱼味不浓郁。蚝油菜心,蔬菜处理得很干净,口感清甜,腐乳通菜用的辣腐乳,蔬菜分量很足。可能生活在深水埗的多是从事底层劳动的老百姓,分量很足,价格实惠,良心店家。🛎️服务:服务态度挺好,上菜迅速。香港少有面底会加青菜的面家,桌上有提供免费的泡萝卜,酸爽解腻。📍香港特别行政区深水埗区福荣街80号地铺。

經過十多年都沒有再來,今日再訪不過是分店,年齡不同,期待不變。當然」年被那酸蘿蔔和大量蝦子所震撼,今天就是想找回那種震撼。沒有排隊的人龍,不知道是否跟網民都說這店的水準下降有關,不過未試不能作準吧。進店第一件事當然是食蘿蔔! 不過不知道是否不是蘿蔔的季節或是其他原因,似乎蘿蔔只有酸味,沒有了清甜感。當然仍然是合格水平啦。點了,雲吞蝦子撈麵。雲吞有整個蝦,和肉搭配,比例可以,不會太多亦不會太少。鮮味可以,大少亦合適,一口一隻。不過只有3隻就分量略少。麵質彈牙,沒有鹼水味,蝦子很多,不過我就覺得太多食得只有蝦子味。(投訴蝦子太多,似乎奇怪,但我覺得味道平衡融合才是我追求的)咁加支豆漿和魚皮,$72埋單,滿足。不過可惜的是找不到當年那種震撼,蘿蔔也只食了一少碗,沒有添食的衝動。麵食到最後,滿腦子都是蝦子太多。🫠

沒有排隊的人龍,不知道是否跟網民都說這店的水準下降有關,不過未試不能作準吧。

進店第一件事當然是食蘿蔔! 不過不知道是否不是蘿蔔的季節或是其他原因,似乎蘿蔔只有酸味,沒有了清甜感。當然仍然是合格水平啦。

點了,雲吞蝦子撈麵。雲吞有整個蝦,和肉搭配,比例可以,不會太多亦不會太少。鮮味可以,大少亦合適,一口一隻。不過只有3隻就分量略少。

麵質彈牙,沒有鹼水味,蝦子很多,不過我就覺得太多食得只有蝦子味。(投訴蝦子太多,似乎奇怪,但我覺得味道平衡融合才是我追求的)

咁加支豆漿和魚皮,$72埋單,滿足。

不過可惜的是找不到當年那種震撼,蘿蔔也只食了一少碗,沒有添食的衝動。麵食到最後,滿腦子都是蝦子太多。🫠

早前食評提及過星加坡的閨蜜回到香港和她吃了牛扒。話晒閨蜜從星加坡一場來到,怎能和她只見一次面呢?今天閨蜜約我到深水埗吃平民餐,其實她主要目的是到深水埗長沙灣政府合署換領新的身份證,掃街、買嘢和飲咖啡是餘興節目。大約中午一時前來到超級旺地深水埗區, 我們先去醫飽肚子再說。走到餐廳林立的福榮街,首先看見的是「文記車仔麵」,午餐繁忙時段,門口已經有數十人在排隊,情形就像我多年前在東京築地市場排隊吃壽司的情景,估計排隊至少需時約1小時;車仔麵也有那麼多捧場客,莫非絕大部分都是遊客?説實話在這裏吃車仔麵也絕對不便宜,聽說下單程序也好像很複雜。為了爭取時間,我和閨蜜絕對不能花時間在排隊等吃車仔麵,而且車仔麵並非我們今天的目標,我們當然跟文記車仔麵say Goodbye。之後我們轉到「文記車仔麵」對面馬路的「維記咖啡粉麵」,因為閨蜜挺想吃深水埗出名的豬潤米!雖然維記門外只有幾個人在等候,不過今天天氣非常炎熱,太陽伯伯一直上班,即使在門口等候幾分鐘也會汗流浹背,所以唯有放棄。自己曾經在這裏吃過兩次豬潤米,覺得除了那碗豬膶湯比較好味之外,說實話豬潤其實只是一般,吃不到也沒有損失。然後我們再轉往與「維記咖

店內還有幾位員工在不停工作,一位師傅在努力包雲吞,另外有兩位員工則在處理一些包裝物品,看得出非常忙碌,証明生意不錯。在座的客人都快吃快走,不到10分鐘,我們已經被安排入座了。

劉森記出名的是蝦子和竹昇面,見有很多客人都吃蝦子撈麵,但我不太喜歡麵上全是蝦子,感覺似很乾,而且見到太多的蝦子,個人覺得有點不安,可能我對蝦子有密集恐懼症吧!我只點了一碗普普通通的雲吞麵(俗稱:細蓉),我個人對雲吞麵是有偏好的,應該是我兒時的情懷 。
小時候每當暑假期間媽媽就會送我到姨姨家渡假,我也很樂意前往,一來當時家境貧困,四兄妹連爸媽和嫲嫲七人共處一個二百呎的公屋,去姨姨家就有比家中較寬闊的空間,當時我還未有表弟妹,是姨姨和姨丈唯一寵愛的對象;每天晚上姨姨和姨丈都帶著我前往九龍各處吃宵夜,當時香港仍有很多大排檔,旺角和廟街都留下我們不少足跡,每次吃完雲吞麵姨姨都要我喝一湯匙浙醋説是能幫助消化,所以我每次吃雲吞麵,必定要蘸很多的浙醋呢。

我的閨蜜則喜歡吃牛,所以叫了一碗牛腩河粉。

點好麵食即時在桌上取了一些免費的醃蘿蔔吃,醃蘿蔔的味道不算太酸,而且爽脆好味,我們非常喜歡,我們不停口共吃了兩小碟醃蘿蔔;記得自己第一次在雲吞麵店吃醃蘿蔔,是在灣仔軒尼詩道的「永華麵家」,除了雲吞麵出名之外,永華麵家還有好味的糖水,當時在灣仔上班,不時都會在永華午餐,有時和同事或朋友都喜歡吃飯後去吃糖水,可惜永華麵家已經結業了。

此時主角出場,我的雲吞麵內還有一些蝦子做點綴,湯底看到清澈,夾起麵條觀看,也看似有彈牙感覺;先喝了一口湯,卻有點失望,湯頭雖然清澈但不夠鮮味,感覺大地魚味不突出,難道是醃蘿蔔影響了味覺?
正宗雲吞麵的湯底是用上豬骨、大地魚、蝦乾來熬煮才夠鮮味才是,一個好湯底是整碗麵的關鍵;

麵條人口算爽口彈牙,現今用竹桿人手壓麵在香港都逐漸失傳了。提醒如要保持麵條爽口彈牙,不要慢慢歎,因為麵條泡在熱湯內會隨時間吸入太多湯而變軟以致影響口感;

Other Info. : 姨姨移民到了國外多年,隔年都有回來探望親人,疫情後正打算回來與親友相聚卻突然患上急病,短短兩個月已經到了天國,就是我寫本篇食評的前二天, 對香港的親人來說這個消息相當突然。 所以這篇雲吞麵的食評也是我作為緬懷她的一種方式!祝福她終於解除了身體的痛楚,在天國的樂土永遠快樂地生活;永別了,我最敬愛的姨姨! 如果人的年齡有120歲,姨姨還只剛過了一半左右,真令人感慨!我早幾年跟姨姨和姨丈在唐閣午餐、在MO Bar吃high tea和在Sevva歎咖啡的情景仍然歷歷在目。現在我只能偶爾對著天空想想姨姨的笑容。 人生在世的時間有限,真的要珍惜身邊人和及時行樂;無論你有多少財富, 放在銀行的錢就是屬於銀行的,你只得到一些數目字,只有把適當的錢財用在自己的身上才真正是自己擁有的。 工作再忙碌也要抽時間與家人共聚、吃飯或一起旅遊,找對時間做對的事。
