This time I ordered 北海道魚生飯. The set came with a tiny salad, a simple miso soup and a dairy farm mochi which I didn't take any photos of, and there was nothing special to talk about. 

With uni, scallops (3 slices), crab meat, crab roe and salmon (5 slices) at only $118 in Central, what more should you ask for? The quality of the sashimi was quite good: the uni, although far far from top-notch quality, didn't have any weird taste; the scallops were fresh; the crab meat was not the average crab stick you normally got out there; and the salmon was ok too. The presentation looked pretty appealing.  The portion of the rice was bigger than I thought, although I did feel hungry as soon as I got back to office and had to eat some fruits to fill my stomach. So don't go if you need a big lunch!

Doing company team lunch and found out this Japanese restaurant! Located in the mid level of Central! This restaurant is not big, guess can serve around 30 customers at a time ! have many lunch set menus, most are sushi sets or sashimi sets there are still some others cooked food to choose !! the sushi set is based on chef special on that day and the sashimi is so fresh!!!!! Salmon, scallop !!! Like all of them !!!

森壽司既地點不是太方便平日七點半去到沒什麼人晚上最低消費要每人二百各叫了一人套餐約二百多兩個魚生的種類都很相近共享的話應該叫不同類形今次叫了:特級魚生御饍- 海鮮丼 蒸蛋森壽司御饍-刺身 壽司 烏冬小鉢煮物係兩小碟 兩個餐都有依兩碟唔知自己食咗啲咩有蘿蔔 蒟蒻 雜菇其他有薯仔 應該係味道都可以 鹹鹹地食完唔會覺有驚喜魚生份量都唔少海膽真係幾時甜有芒果香味好正三文魚腩好肥美劍魚腩都幾好食其他嘅味道一般唔太腥亦不太甜壽司盤上嘅魚生比魚生飯的遜色腩依然比較肥美其他魚唔太識分不過就有比較腥吞拿魚個樣差啲蒸蛋好滑好味道頂至底都有配料有魚蛋菇類海鮮鳥冬質感一般般上面既魚係凍既湯清清地都唔錯太飽都無咩點食性價比其實可以每人大概$260只係沒有大驚喜細食既又食唔曬所以未必會再食

近排太多嘢做,頹負能量又爆燈,決定自己一個食好西,集結多啲正能量開心下先得,我勁like食日本嘢尤其係壽司,就自己去食而且叫多啲,一於爭爆個肚。坐定定之後就叫咗一啲壽司、軍艦、刺身嚟食,包括有鐵火卷 (一客6件),吞拿魚壽司、 立魚壽司、帶子壽司、蝦壽司、油甘魚壽司、 三文魚子軍艦、海膽軍艦 (各一件),劍魚腩刺身 (一客兩切)。呢度嘅壽司師傅,搓壽司一直都好有手勢,尤其係啲壽司飯,搓到只會散喺口裹,唔會散喺手上面,味道係做得好好食,當然壽司上面嘅魚件係好新鮮嘅,鐵火卷做得味道一流,劍魚腩刺身本身就super好食啦。食飽肚之後正能量返曬嚟。

今日去轉食一下雜錦魚生飯+烏冬
店員話因為呢個套餐有烏冬
所以魚生飯嘅份量會少啲
但來到嘅時間我哋發現份量其實都好大
雜錦魚生都好新鮮和好鮮味
而且價錢都唔算貴
好快我哋又約定下星期再來食過

平日很少去中環, 因為心理上覺得中環的食店都會比較貴, 但竟然發現一間唔算太貴但食物又出奇的好食的日本餐廳.  本人都十分喜愛食生蠔, 所以一嚟見到就先叫兩隻, 同朋友一人一隻, 雖然不是十分大隻嘅品種, 但海水味又不太重, 芝味鮮甜, 十分啱我口味.再嚟當然係點我最愛嘅刺身, 由於我同朋友都有多款魚生想食, 而又發現單點無咁抵, 於是我們就點了一個雜錦刺身盛, 刺身上枱後都覺得真係無叫錯, 裏面起碼有成十款刺身, 有吞拿魚腩, 海胆, 三文魚籽, 油甘魚, 劍魚, 全都是腩位的, 真係見到都留口水, 而且食落都十分生鮮.由於我同朋友都十分喜愛食海胆, 所以再點了海胆炒飯, 海胆壽司, 海胆蒸蛋等菜式, 其中海胆蒸蛋係 menu 無的, 叫師傅特別幫我們做的. 海胆壽司上的海胆係來自北海道的, 真係十分鮮甜, 當然價錢就會貴啲.  除了北海道海胆, 原來都有來自其他國家而又較經濟嘅海胆的, 在炒飯上面嘅海胆就係其他國家的, 味道都唔太差.食完後真係覺得價錢合理, 下次會再去試吓其他的.

之前都上網睇過LEE間, 諗住lunch去食, 但就唔到時間, 咁岩琴晚係中環就即book當晚食飯, 去到等左好少時間, 眼見人地食緊個d d海膽真係好多份量, 而我都係一心諗住食海膽ge.....我叫左個海膽帆立貝$388, 而男友唔知叫左個咩$288上前菜都ok ge, 個小牛腩都唔錯, 份量少, 但都正常到上我個海膽飯, 男友試完都話麻麻, 到我食第一啖, 有木糠呼....但又咁講佢份量係真係多, 重量不重質黎講係ok ge-_-"而男友個個咁多樣只有三文魚係比較出或, 個腩位食落都係好肥美...其他就...去supermarket 買都食到ge質素...本身想叫多個左口裙邊...但為左唔好再倒錢落海都係算!

到上我個海膽飯, 男友試完都話麻麻, 到我食第一啖, 有木糠呼....
但又咁講佢份量係真係多, 重量不重質黎講係ok ge-_-"

而男友個個咁多樣只有三文魚係比較出或, 個腩位食落都係好肥美...
其他就...去supermarket 買都食到ge質素...

本身想叫多個左口裙邊...但為左唔好再倒錢落海都係算!

猜猜這客蓋滿碟的魚生飯在中環要索價多少?中環是個有趣的地方,五光十色的華麗背後,倖存著一些老字號和樸實的實力派,包括這家在嘉咸街斜路的森壽司。要是在近中環港鐵站和蘭桂坊附近的日菜餐廳,這個樣子的魚生飯應該要上二百大元,但只要你肯花點力氣走遠一點、攀高一點,一百加一十有找,連沙律、湯和甜品,還要免加一。走到中環中心對面深吸一口氣直衝上山,穿越熙來壤往的街市檔口,來到這門面平庸的小店。沒有窗,很難讓你窺探內裡乾坤;門亦是關上的,細看「營業中」的木牌你才知道裡面是在做生意的。除了門外的餐牌外,實在很難知道裡面是賣什麼、走什麼路線、什麼價位之類,的確有點拒人於外的冷酷感。可是,一開門,感覺是截然不同。或許平日中午根本沒可能walk-in,門外沒有放什麼宣傳品,在座的客人如我都應該是有備而來的。個多星期前已約定了今天的飯聚,早已致電訂枱,那我不知道訂滿的速度如何了,只能說「要訂就趁早」吧。店內座位不多,有兩張較大、可容納上6人的卡位枱,還有5張2人枱和壽司bar 前的4個位,共20個。還好,午餐時段有3節,最旺場的應該是1時至2時。如果做到3輪,生意額算不錯了,聽同儕說,這裡的位子是供不應求的。

門外寫著「開業於平成二十一年」,即是2009年,至今已第7個年頭了。數年前來過吃晚飯,依稀的印象中,裝潢好像沒什麼改變過。暖光的氛圍下,很適合談天,除壽司以外還有不少燒物、佐酒小食,有點像居酒屋,「森壽司」不只是賣壽司的。

連木門上都寫上了字,感覺樸實隨意,就像進了別人的家。手寫餐牌前,放了一列酒瓶,當中不乏各式的清酒,如各款的出羽櫻、加賀吟釀等,明碼實價的在餐牌上註明,比我到過的居酒屋來說,算是有透明度了。

相比起本來打算去、但知道不能預約的俺の割烹,森壽司是走樸實路線的,付出的當然不是放在裝修上,而是食材。午市定食的款式多達17個,以魚生飯佔大多數,亦有照顧不吃魚生的客人,全熟的選擇有蒲燒鰻魚、燒鯖魚、照燒三文魚扒等。價格的幅度甚大,$98-$208;$208是個統計學上的 outlier,貴在標明的2件海膽和2件中拖羅,其實大部分都是$120左右。刺身定食、魚生飯這類不指明海鮮款式的,只是$118,都是較受歡迎的選擇。

這裡值得一提的是效率其高的服務,小至點餐紙,大至爽手和快言快語的服務員,所有安排都很妥當、到位。在開飯網看過右邊的橙色餐牌,原來會提供一張讓你手寫落單的,做法就像在放題店點食物般,自己劃個夠。最重要是原來那個招牌的「北海道魚生飯」可以有幾個版本,走或換去三文魚籽也行,或許是營業久了所歸納出來、比較多人會提出的要求。除了這款外,其他定食都可以另付$40 加海膽或三文魚籽。你可能會想,我點蒲燒鰻魚飯那怎樣加三文魚籽?其實這些追加的是分開呈上,不是附在定食的表面。

晚市都有套餐,二百多都能落樓,中環區來說真的夫復何求。牆上有寫著晚市最低消費$200,且不知其他單點食物的價錢如何,點最便宜的套餐不就是容易的符合了嗎。

多數定食都跟沙律和味噌湯,跟細烏冬的定食除外。沙律和味噌湯先奉桌,不過魚生飯亦隨即送上,效率很高,前後不到3分鐘。沙律是普通貨色,在生菜和車厘茄上加上千島醬便是。蔬菜夠新鮮爽脆,只是醬汁不甚有「和食」的感覺而已。味噌湯不是無實之輩,有不少海苔、大蔥和豆腐,鹹香撲鼻。

魚生多得一顆飯粒都看不到,就像太空館般蓋成一個半圓拱。這個招牌魚生飯有三文魚、帶子、三文魚籽,蟹棒和海膽,各款刺身都具光澤感,顏色鮮明。不只是大大片,而且是甚為厚切,份量絕不欺場,對得住價格有餘。Surface area 大不等於volume 大,你懂的。

雖然只有6-8小瓣的北海道馬糞海膽,也夠令人瘋狂了,現在還要正值北海道馬糞海膽的當造期。這個品種的海膽就是這個樣子,碎濕濕的,肉瓣較細;鮮甜而不腥,一小口已令人滿足非常。多達4大片的三文魚肥瘦均勻,嫩滑鮮美,那種鮮味和淡橙色都來得不造作。刺身的溫度是稍低於室溫,沒有解凍太久或是被底下的米飯烘暖,剛剛好。

Out of sight 不等於out of mind - 可別忘了刺身蓋著、不見天日的米飯。用上山形米,在米香之上還有點醋香,口感黏稠煙韌,拌著新鮮可口的刺身同吃;沒什麼花巧製法和調味下的兩者,美味得如同天造地設。份量嘛,胃口大的男士未必夠飽,不過一般人來說應該是剛好的飽足感。

當友人開始起動時,我的細烏冬比壽司先奉桌。可能比較多人點北海道魚生飯,即握壽司亦較需時,最後友人幾乎吃完魚生飯,我的8件壽司才到。細烏冬比想像中大,一般在日本餐廳吃到的是幾口就吃完的,有些甚至是用上盛味噌湯的小砵,這客是相對上具份量了。

清湯底的扁身烏冬,夾雜著三文魚碎,是出奇的鮮味,不是一般只是為了讓你裹腹便草草了事、「有到好過無到」的湯烏冬。雖然烏冬不是富嚼勁的一類,但入口順滑,質感不算韌但不會過腍,實在不俗。

要吃白肉魚,我們叫左口魚的平目魚是非吃不可。要吃脂香的當然要選牠的魚邊肉,有著濃郁甘香的油分,但這客用上上身肉的,口感扎實,有著淡淡的鮮甜味。深紅的那件鰹魚,有著微炙的焦香,因為鰹魚的皮有寄生蟲,不燒一下就吃不了;正因如此,這是整列壽司中味道最特別的,處理工序亦較多,也難怪會較遲奉桌了。兩件不是並列的三文魚,兩件都是近腩位、較富脂香的部位,不過有一件的脂肪比例較多,兩件都是肥美之作。間八亦稱為紅甘,清爽雅緻的肉質,清甜而不膩;相反,深紅邊緣的油甘魚油潤軟腍,繼鰹魚後另一濃味之作。熟蝦就沒什麼特別吧,而且是這列壽司中最便宜的貨色;不算厚身,不怎樣彈牙,不過吃得出是新鮮的味道。

和魚生飯同樣用上北海道馬糞海膽,但比魚生飯的顏色鮮艷,甜味亦較濃,放在最後吃是最適合不過。整客壽司都很滿意,米飯的黏合和微酸度亦恰到好處。不過擺盤上不是由淡味至濃味的放,要自行辨別刺身品種再下箸。當然,跟顏色選、由淺至深的吃是最大路的方向。

經醬油醃製過的三文魚籽,有些會醃得很鹹,但這個即使單獨吃都沒問題。起初沒有匙羹可用,逐粒挑著吃是比較麻煩,店方可考慮主動給客人小匙羹。晶瑩通透、飽滿非常的三文魚籽,鹹香和甜味平衡;鮮味填滿口腔的澎湃感覺,和吃海膽是無法比擬的。

最後,甜品雪糕糯米滋,和沙律一樣都是普通貨色,就是很多日本餐廳都有入貨、獨立包裝的雪米糍。嗜甜的可以加$15有較大份量的雪糕,不過定食本身已份量不少,一口大小的甜點作結已經很滿足了。

享受了那麼真材實料的一頓豐盛刺身的午餐,上菜和加水都爽快利落,半小時已吃完了(已經沒有特別趕),還是免加一,難怪在中環區可以立足多時,即使沒有做什麼宣傳,門外也不見得多人等候(人龍有一定的宣傳效果),一樣客似雲來,要來的話一定要預早訂枱。早前寫過灣仔的哲平食堂(http://bit.ly/w2w_TeppeiSyokudo),都是性價比甚高的一員;如果談到中環區,相信是森壽司無疑了。開業多年都沒有大幅加價,刺身份量不吝嗇之餘,壽司上所用上的刺身種類不全是大路款式,吃得出用心。

在中環的街頭站上一會兒,在絡繹不絕的行人中,不難發現穿得花招展的漂亮白領,但不起眼的不代表沒才華、不能幹。總有些人是默默地努力著,我想森壽司正正是不賣裝潢、只賣食材的實力派。選老婆,一個是十指不沾陽春水的花瓶,一個是鄰家女孩;你會選後者的話,來森壽司見識一下吧。
