這是第二次到訪N.O.T 上一次是由一名女店員替我沖泡她熱情地提議我不要用skim milk轉用2%果然所打發出來的奶泡有所不同這裡的豆不是偏fruity (本人比較喜歡nutty、deep roasted)加上barista不錯的技術 讓我對這家咖啡店留下深刻印象暫時是我在香港喝到比較完美的是日二訪barista轉成是一名男生其打發奶泡掌控技術更精進是日的flat white 表現出色 85分!有在澳洲喝到的8-9成影子而且價錢不貴絕對會一訪再訪

小店在三湘大厦地铺,店面很小不起眼。

Specialty Coffee,按字面解釋是解作沒有特別的咖啡,但原來這一間只有200尺小小的咖啡店,最特別的地方除了咖啡,還是有一種非常獨特的人情味。人情味有分很多種,人情味這回事不是甚麼地方也找不到,但那兒出來的是一種熟客的人情味,在半個小時的用餐過程當中,店舖約有三十人出入,沒有一位客人的名字店員是讀不出名字來或忘記的,感覺像已把客人當成自己朋友甚至家人一樣,這種人情味是令一些生客如筆者感到非常驚訝錯愕。

筆者點了一杯Mocha ($32),按這個價錢在灣仔區是物超所值,現今商業社會在連鎖店一杯咖啡也要賣四十塊的時候,這兒才賣三十二塊,是超值之選,味道來得比較偏重朱古力一方,而且甜了一點點,如果咖啡味道重一點更好,但現在的還稱得上香滑,杯邊還有一點的朱古力粉伴杯,加上拉花非常別緻,視覺上也好看一點。

咖啡店像是一個社會的縮影,不同的客人,不一樣的背景,現今香港社會已走到另一時代,隨便走到街上也有大小不同的咖啡店,要在這個社區突圍而出,的確單靠本身咖啡質素並不足夠,所謂留一個熟客比找一個新客成本上已有距離,在於旁人來看,得到外人的少少關懷實屬是一件非常窩心的事。除了人情味或本身咖啡質素外,筆者短短品嚐咖啡的半句鐘時間,職員的對話全部都是:「怎樣做得好一點」,或是在研究分工合作及效率,咖啡背後又是另一故事。

Attracted by the light signage, one must admit that N.O.T specialty coffee got a fairly cosy decal. Though small, the bar setting eases coffee lover to chat with bartenders easily.After seated by the bar, I ordered myself a cappuccino. The coffee is very foamy and smooth. I like it how the foam is brown, it has completely blended with caffeine (just the way I like it), however, I find it lack of coffee bean oily taste, otherwise it could've been more aromatic. After seated by the bar, I ordered myself a cappuccino. The coffee is very foamy and smooth. I like it how the foam is brown, it has completely blended with caffeine (just the way I like it), however, I find it lack of coffee bean oily taste, otherwise it could've been more aromatic.

記起公司附近有間不知名咖啡店,專程去灣仔食嘢,可以回程時買咖啡。餐牌有Flat White梗要試。咖啡沖調師先問我是否要甜味,以便將咖啡糖加到杯中,不過我獨愛原味無糖。Flat White正宗地用闊口瓦杯裝住,泡身薄,泡面冇大顆泡粒。飲落泡啡融合度高,如絲幼滑,咖啡底味富濃郁果酸,餘韻帶烘焙nuts味,原來係house blend,用咗4種豆(記得好似係3% Brazil, 22% Columbia, 25% Arabica, 25% Ethiopia)。咖啡沖調師非常樂意分享咖啡的知識,讓我於飯後呷著美好咖啡時,上了小小的一課📖,很充實。我坐咗十零分鐘,見啲客經過都主動打哂招呼好熟咁,明顯係用心待客嘅小店。而且價錢仲好平!

因為我地都好喜歡飲咖啡,特別係手沖的咖啡,因而今次係openrice見到有間手沖咖啡係灣仔區,係一個天氣好好的星期六下午就過去試下。位置係灣仔同銅鑼灣中間,係一座商業大廈的小店。大約只有10個BAR桌位,2個人沖野飲同收銀。好明顯係熟客生意,個個都會傾計同係街道上的人 say hi。佢貼在牆身的牌是沒有手沖,要問咖啡師才知道,今日有3款手沖咖啡。而本人係吾鐘意太酸的味感,但吾想太淡,之後佢推介了2款不同的咖啡同2個甜 品因為今次忘記價錢,而家寫下的應該大約的價錢:首先咖啡師倒了咖啡粉之後比我地吸下味道再整,之後用3個杯再介紹3個杯的用途,如最大的杯是倒少少來吸氣味,最後可以飲下似酒杯的杯和最細的杯倒下咖啡之後可以令到氣味有所不同,似酒杯的杯可以令咖啡味更有層次感而最細的杯就最薄的氣味同口感。Ethiopian Hachira N2($60):有點果香茶,反而咖啡味吾叫好多,放得時間耐也不會因而變酸。Kenya Peaberry-Karani Wet Mill ($40):開頭真係有股什菜湯的味,但好快冇左而變回咖啡,放得時間耐左,酸度會增加。甜品檸檬蛋糕專登要左邊位,因為酸度更多同有檸

首先咖啡師倒了咖啡粉之後比我地吸下味道再整,之後用3個杯再介紹3個杯的用途,
如最大的杯是倒少少來吸氣味,最後可以飲下
似酒杯的杯和最細的杯倒下咖啡之後可以令到氣味有所不同,似酒杯的杯可以令咖啡味更有層次感而最細的杯就最薄的氣味同口感。

Ethiopian Hachira N2($60):有點果香茶,反而咖啡味吾叫好多,放得時間耐也不會因而變酸。

甜品檸檬蛋糕專登要左邊位,因為酸度更多同有檸檬肉更加令到咖啡更好味同更香。杏仁甜品整熱左之後好香口又有杏仁味,本人最鐘意食

最後坐了個多小時,同咖啡師傾計,可以有一個舒服而可以增長咖啡知識的地方,還有就是他們好有善,一定會再來飲更多不同的手沖咖啡!!
結帳大約$140,價錢合理同有優質服務!~

Paul 的手沖和recipes 仲係咁good. 第一次試 Indonesia的boubon,Paul的low extract 做得好,十多秒的悶蒸同一分十多秒的drip,出到這隻豆的複雜性,前段Indonesia後段boubon的citrus味,仲要平其他cafe一截,期待新豆
