始終以小酒館定位,裝修風格依然有小酒館風情,但就換上講究建材及增添了典雅風味,例如皮疏化、昏黃舒適的燈光設計、兩層高的樓底;但同時保留了小酒館的熱鬧氣氛。加上體貼但又充滿家庭feel嘅熱情服務態度,由介紹菜式、到斟酒、加水、上菜、以致換碟,整體糅合了高級餐廳及小酒館的特色,實在好難挑剔!

一推開餐廳門口,映入眼簾就是一個小酒吧、及放在碎冰槽上的多款鮮魚,旁邊的小黑板就用粉筆寫上了價錢,起初以為係進口海鮮;趁著風趣幽默的經理介紹餐牌上的各款菜式,一問之下才知道各款鮮魚由本地魚市場採購。事實上,海鮮以新鮮為大,外國進口經過長時間冰鮮處理,未必一定能夠保持鮮味;所以,一直認同除了個別本地沒有出產、或者味道非常出色的特定海鮮之外,本地出產的海鮮毫不遜色,最低限度一定係是日魚鮮。

Bread and Anchovy並非普通白麵包,而是用坑紋爐烤烘至有一點點焦香;所以沒有跟從意大利傳統配橄欖油及黑醋,而是配上更合適的無鹽軟牛油,可帶出麵包香氣。小酒館當然會奉上鹽醃醋漬鯷魚。小編也是第一次品嚐意大利鹹魚,極鹹的鹽醋浸漬完全蓋過鯷魚的重腥味。第一啖一口食了半條,太鹹,受不了!第二啖就用少少放在麵包上當作調味,都幾特別。

由前菜開始,餐碟已經非常特別,海藍色底色加上魚圖案,充滿地中海特色;既貫徹餐廳的海鮮主題,亦配合意大利的地理位置。原來所有餐碟皆從意大利訂製,而且隻隻手繪,即使圖案相同,每隻皆有差異。估唔到意大利菜都有Amuse bouche。今日嘅開胃前菜就係 mozzarella 配蕃茄。雖然唔係迷你車厘茄,但係夠多水份、又唔會太酸。mozzarella有一絲絲纖維,將半固態的芝士包裹成一個球狀。味道清淡、口感柔軟而沒有過濃鹹香,同蕃茄很匹配,不會相互搶奪味道。

下一道是夏季時令菜式 Zucchine Trombetta with grilled baby squid ($268)。主角是意大利產青瓜,炎夏正好當造;烤魷魚仔只好淪為配角。意大利產青瓜並不同中國青瓜,反而更似翠玉瓜,同樣係味道清甜、爽口中帶軟身。餐廳以海鮮為主打,烤魷魚仔貫徹以鹽漬鯷魚碎調味,清甜爽脆的意大利青瓜正好中和偏重口味的鹹鮮,加上煮成蓉的青瓜醬汁,味道複雜。

由上菜一刻開始已經係享受,先來一個視覺震撼。鹽焗烤魚需要用厚厚一層海鹽密密封堵整條鮮魚,所以,餐廳經理推出餐車時,只看到一塊結實的鹽磚。然後,表演開始。用上 69% 酒精含量的朗姆酒(rum)、點火、淋在鹽磚上;趁著熊熊火光尚未熄滅,用大匙羹敲碎鹽磚,露出海鱸魚真面目。

原來魚皮表面還舖上了幾片檸檬,藉烤魚時的熱力逼出檸檬汁,僻走魚腥。之後,餐廳經理將整條海鱸搬到碟上,然後揭起魚皮、起肉拆骨。入口就是魚肉鮮味及最簡單原始的海鹽調味,魚汁魚油由於被鹽磚完全封堵,得以徹底保留;同時又滲著淡淡檸檬清香,好吃!

餐廳自家製作的 Gelato ($98) ,每星期轉口味,今日係雲呢拿。Gelato 出名低脂肪、少空氣,所以口感特別軟綿,也不一定用傳統球狀形態奉客,但好似這樣直接呈一糰糊狀就比較少見。淡黃色的雲呢拿沒有加入任何調色劑,純天然風味;甜度適中、雲呢拿香味濃郁,加上少少開心果碎,風味絕佳。

最後以意大利傳統曲奇小食Bruttiboni 結束這頓晚餐。Bruttiboni 別名 Brutti ma Buoni,中文可以解作「很醜但很溫柔」,顧名思義;賣相唔好,但好好食。咬下去充滿杏仁香氣,口感有一點似軟曲奇,有少少煙韌;蛋白曲奇中心軟餡係同樣採用杏仁製作的果醬,每一啖都係杏仁香甜。果然真係「很醜,但好好食」!

通常食法國菜先有「Amuse Bouche」,我譯佢為開胃小品,佢又唔算頭盤嚟,就好似上酒樓食中菜時,一坐低就擺低幾小碟酸菜、花生咁,等客人過過口癮。而餐廳提供嘅開胃小品喺水牛芝士配蕃茄,再加少少青醬。啲蕃茄好鮮甜,而水牛芝士好綿滑,食過水牛芝士都知佢喺味淡,小弟就一於將佢哋嚟配麵包食,都好正。

前菜來一客鰤魚,之前食「廚師發辦」算喺遇過一次鰤魚,其實,鰤魚就等同油甘魚變成咗大人,咪以為大條咗就會肉質嚡,實際佢算喺頂級食材,而且,好講時令。大廚以橄欖油拌勻,加入少少羅勒調味,伴以沙律菜及車厘茄,泛紅嘅魚身食落口感鮮滑細膩,油脂豐腴,羅勒嘅香氣更能突出魚鮮味。

既然經理都提特別提到,又點可以錯過店家嘅意大利麵。「Chitarra」,晌網上查過,有譯佢為「手工吉他麵」,因為源於晌製麵過程中,通過一種類似吉他琴弦嘅器具嚟切割,姑勿論名稱喺點,形狀就有啲似烏冬版嘅意大利粉,比較粗身,所以,非常煙韌有咬口,好有口感;加上伴以波士頓龍蝦肉,仲要非常之多,每一炷麵又掛滿汁,真喺極之好食。

經理俾我哋影完相之後,仲會晌旁邊嘅餐車之上,起肉拆骨,再上枱,等我哋食得更方便。而魚肉紮實得嚟保持嫩滑,而且,極有魚味,車厘茄吊起一份清新感,大蜆入口又極為鮮甜,用料絕對有質素

朋友約食飯,目的地在Osteria Marzia。查看行事曆,當日有空,馬上答應,順道問一句餐廳屬於邊個集團。得到的回覆是:Black Sheep。這集團的眾餐廳,間間有水準,所以當我知道這事後,對這頓飯更有期待。Osteria Marzia座落灣仔芬明酒店的地下,某次經過我已被其吸引住,只是那時我還沒留意餐廳的名字而已。是夜吃海鮮為主,開枝白酒也合情也理吧!侍者奉上的酸種包,我循例的咬一口。不得了,香脆內鬆軟,沾上牛油及鯷魚皆十分好吃,比起坊間硬得掟死狗的Sourdough,優勝十倍。頭盤的Hamachi Capaccio,油甘切成薄薄的一片片,口感爽滑,配上檻欖油及羅勒等,清新可口,有個好開始。之後的鯖魚,同樣是走清新路線,皆因是伴上水牛芝士,與及無花果。而鯖魚的結實質感,亦討人歡心。對這裡的海鮮當然沒有懷疑,但也好想試試其意粉的水準,遂來一碟鯷魚意粉。手造的出品,口感煙韌,也不是死硬,對我而言是恰到好處,再配上鯷魚的咸香,與及開心果的香氣,絕對合我心。接著來,是二人分享的原條海鱸魚。可有唔同既方法去做,而我們選的Crazy Water,是以蜆肉配上蕃茄烹煮而成的汁水。店員會在席前

接著來,是二人分享的原條海鱸魚。可有唔同既方法去做,而我們選的Crazy Water,是以蜆肉配上蕃茄烹煮而成的汁水。店員會在席前為大家將鱸魚起骨,看他把蜆肉及車厘茄先放好在碗內,再細心地起魚骨,最後把汁水及蜆肉和茄放回去,服務一欄好值得讚賞。

魚肉嫩滑,且索盡汁水的鮮味,真心讚。看見鄰桌在吃另一款的鹽焗版本,經理更會在席前加上火焰的『表演』,當然亦會協助起骨,也令我們覺得非常吸引,下次來就吃這個吧!

甜品的冧酒提子Gelato,是再飽也可以吞下全部的好東西。

店員們忽然以洪亮既意大利文唱出熟悉的音樂,原來是鄰桌的客人生日,太正了吧!

下次好友生日,不如就揀來呢度慶祝?!

Tasca d'Almerita Regaleali Bianoco Sicilia 2020

海鮮搭配白酒就是理所當然,我們對意大利酒不熟悉,這支來自西西里的白酒屬於較 Dry 的口感,可不一會舌尖上的乾澀徐徐又被蘋果、梨子、蜜桃水果香氣籠罩,加上恰好的酸度,帶來歡欣的清爽感,感覺非常不錯,日後要多留意意大利的白酒!

貼心的侍應見我倆胃口不俗,於是特別送來野生鱲魚串!

爽彈的生鱲魚片串上鮮杏、蜜桃、士多啤梨,透過水果的甜香和簡單的調味後,鱲魚和水果顯得非常合拍及可口!香港人對日本刺身絕對不陌生,但原來生魚片跟水果可帶出如斯美好的化學作用,如果大家喜歡可直接叫 Dentice Selvaggio HK$248 作前菜!

生池魚片以車厘茄、橄欖油、羅勒和少量沙律菜搭配,表面看似沒鱲魚串那麼鮮明,實際是廚師的隱藏武器在後頭。當池魚片放進嘴巴,一種獨突香氣及酸調即時將 KAMACHI 的整體味道引出,發現巧妙之處正是炒過的酸豆。平日我愛吃酸豆,但從沒碰過炒過酸豆的獨特性,實在太讚了!

名字雖簡單,但選材的開心果與西西里島鯷魚的配搭,卻是香港意大利餐廳絕少用上的,正所謂可遇不可求,一於試試!

意大利麵具嚼感和厚度,口感立體,掛汁掛味效果佳,令人滿意!而猜不到的是鯷魚跟開心果是很搭的食材,一軟一脆的口感,與及開心果香能令鯷魚的喜愛度進一步提升,兩者帶出不一樣的新鮮感!不過整體還是覺得有點過鹹,大概可將鯷魚的用量略為調整!

來到漁村餐廳,魚必然是主角!繼 Pasta 後,CATCH OF THE DAY 的 SEABREAM  HK$628 來得剛剛好

除可選擇每日鮮捕的魚種外,亦可在五種烹調方法中選擇一種合口味的,包括有烤、西西里烹調、牛油檸檬、鹽焗及拿坡里式水煮!

觀乎當晚最多人選擇的是鹽焗,而我們則對拿坡里式水煮感到興趣。

拆骨後的拿坡里式水煮鱲魚依然十分漂亮!

廣東人蒸魚技術出神入化,吃慣蒸魚的廣東人對意大利漁村的魚菜式又有何評價?首先魚肉保持細嫩,順利過關!不過,論最驚喜非車厘茄、蜆隻和香草等烹調的醬汁莫屬,醬汁夾雜鮮魚的精華,味道純厚撲實、茄味豐美突出,盡將拿坡里的精髓帶出,真的好想把醬汁帶回家啊!

我們的主菜正是吃這個意式水煮魚$988我們這天嚐到的是海鱸魚,共有5款烹調方法可以選擇而我們選了非常有特色的Acqua Pazza又名Crazy Water,是以各種貝殻海產加上番茄煮成鮮鹹的湯水來烹製鱸魚。

Italian two consecutive weeks so naturally there was comparison. Prepurchased two dinner sets and topped up to ensure enough food for 7. The verdict was majority of dishes were just ok with the main attraction being a major letdown. The house bread came with butter and anchovies which was too salty. A few slices were burnt. The house bread came with butter and anchovies which was too salty. A few slices were burnt.
The appetiser fish dish was normal. The razor clam was better. The salad was really good and fresh.
The squid with good but size was more like an appetiser and even the breadcrumbs was a bit burnt.
The crab pasta was ok, but the vegan pasta was like a typical homemade pasta - even looked like one.
The brown butter sauce for the fish was interesting but unfortunately that sea bream was over cooked. The other one in tomato / seafood stock was ok.
The lemon sherbet was the right amount of sour.
The white wine included in the set tasted cheap as expected.
Service was alright but nothing remarkable. For some reason they didn’t know the sets had been paid for already.
