夜晚同屋企人黎食飯,座位寬闊,而且人流唔算多,淨淨地幾舒服。我地叫左個4人餐,388蚊,竟然有4個小菜同埋冬瓜盅!先黎既係翠玉瓜炒斑塊同燒味拼盤!翠玉瓜炒斑塊:翠玉瓜爽口而且鮮甜,斑塊大件而且彈牙。燒味拼盤:重點係叉燒度,佢就係傳說中既半肥瘦叉燒!有爽口既肉質又有肥美既肥膏,有住黃金比例(7:3),加上蜜汁既昇華,好好味道!至於雞就正常發揮;燒鵝就有少少瘦,但個皮都算香口;同埋有中華海藻有少少surprised.碧綠花姿珊瑚蚌:西芹新鮮可口,花姿片淋淋地,唔會太''un''好難咬,珊瑚蚌口感爽脆!帶蒜香既''獻''汁巧妙地將三種食材融合!咕嚕雞球:口感香脆,雞肉嫩滑,甜酸醬較得岩岩好,唔會太酸。青椒同洋蔥唔會太多,唔會喧賓奪主!冬瓜盅雖然睇落細細地,但每人都飲到兩碗!而且都好足料:蝦肉蟹肉雞肉粒有齊,而且選材新鮮!遺憾係d冬瓜煲得有少少唔夠淋。 continue reading

已不是第一次來皇室堡14樓的帝廷酒家,除了這裡是皇室堡內的另一間婚宴專門店以外,這裡也是飲茶吃點心的好地方,而另一樣做得不錯的就是燒味。乳豬燒得皮脆且酥化,皮下還帶一層薄薄的肥脂,加上一點海鮮醬已很香口好吃。肉也嫩滑而醃得入味,絕對不是配角。還有的是四頭鮮鮑扣海蔘,原隻鮮鮑看上去油光令立,賣相甚佳感覺也豪華。吃起來口感腍滑而夠味,扣煮的火候也到家。加上原條海蔘,是很有體面的菜式。 continue reading

Visited this restaurant in this busy Sunday lunch. It only took us to wait about 5-7 minutes and we were offered a table for 2 around 12:15pm. Not bad comparing to those located at the busy Times Square.Ordered 5 dim sums, they all came very quickly. The quality was okay. The chicken pastry was average - the skin was a bit rough and cold - 3 pieces were charged of HKD20. We also ordered a plate of stir-fried fat noodle. We had waited for about 15-20 minutes without seeing it. Checked with the waitress and she told us it was of missing order. Overall, the dim sums served and environment were okay. continue reading

相識多年的中學同學的大囍之夜,當然要來賀一賀,友人是夜筵開廿多席,場面好不熱鬧,與同枱的舊同學寒暄一會,時間也過得很快,由於友人在下午較早的時候已經是註冊了,所以新郎新娘進場之後,就已經是起菜的時候了。打頭陣必定是乳豬出場的時間了,乳豬的芝麻皮打孔打得夠,火爐火候也夠,自然就是今天吃到的香脆又卜卜聲的,可惜小豬的皮下脂肪頗多,吃起來的油脂是多得過份了,所以也要除去一點才吃,幸而乳豬肉質算幼嫩,再蘸點乳豬醬同吃,美味,但吃兩件就真的夠哂數了。吃過了乳豬,接下來的是金巢海中寶,金巢即以伊麵炸成的一個如鳥巢的碗,內裡盛着花枝片及蝦仁,伊麵巢炸得不夠透,吃起來不太乾,所以也不夠脆,花枝片及蝦仁就與西芹同炒,首要是炒得夠乾身,而花枝片煙韌有致,蝦仁也是非常爽口,西芹就每口咬下也是索索聲的,鮮甜清爽,當是一道西芹炒花枝蝦仁吃也很不錯。百花釀蟹鉗基本上即是炸蝦球,也不只一次說過這番話了,那蟹鉗端也只不過是裝飾品罷了,但蝦球炸得好,外層脆脆的,而且用料還算新鮮,蝦肉挺彈而不是腍腍無力,如果能炸得熱一點會更好,蝦肉味?我想這對於一席走席菜來說,這個要求是過高了。再來的已經是紅燒雞絲大生翅了,看上去有點漿糊,幸而用匙羹舀起來仍不太嚴重,比最經典的煌府強力漿糊有很大的距離,吃下一口,湯是帶點雞湯鮮味的,但絕對不是太過濃香,而且肉絲下得太多,絕對有喧賓奪主的感覺,吃不到翅的質感,但也不厭其煩也耍再三說多一遍,個人來說,我是寧可吃一碗充滿雞湯金腿味的魚肚羹,也不吃魚翅的,因本人不太主張吃魚翅。吃過了翅後,就吃一些素一點的菜式,這個翠玉環瑤柱甫,素起來其實又是很有鮮味的一道,用上原粒的瑤柱甫確有感用料夠足,原粒瑤柱煮得有點過腍,味道又是比較弱,吃不到一口濃濃的乾瑤柱味,加上茨汁不太濃味,味道方面偏向清淡,玉環的節瓜煮得軟腍,但在汁沒甚味道的情形下,又真的沒甚吃感可言。蠔皇翡翠鮮鮑片又是味道近似的菜式,鮑片厚薄適中,不會薄得如吃風一樣,吃起來當然不會溏芯,但至少都是煙煙韌韌的,可是用來煮鮑魚的蠔油汁就真的很茨汁,吃起來味不夠濃鮮,而最奇妙的是,肥大肉厚的冬菇吃起來有點不低的酸味,這是何解呢?本人不知,但味道我可肯定就不太討好了,而墊底的生菜煮得軟腍,也沒什麼特別好評的。之後已經是清蒸大海星斑了,也是一貫酒席菜的豉油清蒸的青斑,而我也是一貫的要吃魚骹的位置,骹邊位帶點魚的膠質,而魚肉就是肥美嫩口,吃這部份是準沒錯的了,而其他部份其實也不賴,至少蒸的火侯及時間是全標準化了,又真的很難會失手的,但蒸魚豉油的味道不夠鮮香,如果能用香一點的豉油,更能帶出魚的鮮味。臨近尾聲的當紅脆皮燒雞是身旁友人的挚愛,今天的炸子雞的雞皮不是太脆,但還可說是過得去,而雞肉也是比較鬆及散,吃了雞背又沒什麼雞味,但值得一讚的是,店家用上這隻雪藏雞也還挺肥美的,燒過後竟有黃油漏出,實是不錯,但當然要數好吃的炸子雞,這一定不是一個好榜樣。最後的單尾是幸福炒飯及雙喜金菇炆伊麵,店家改這兩個名未改得真美,幸福炒飯其實只不過是福建炒飯,而雙喜金菇炆伊麵只不過是金菇炆伊麵罷了,先談福建炒飯,店家用上了冬菇粒、西芹、甘荀粒、雞肉粒及蝦仁等跟豉油炒成一個味茨,但就沒有較名貴的燒鴨絲及瑤柱絲、味道是還不錯的,而炒飯底是真的有跟一點蛋花炒過的,但很明顯的是蛋花下得很少,而且鑊氣也不足,飯粒未撈茨汁已經是濕漉漉的,這個炒飯真的很普通。雙喜金菇炆伊麵的金菇去了哪?除了在非常偶爾的情況下見到一兩條韮黃之外,其他什麼材料也好像不存在,吃起來只是一個醬油炆伊麵,還要是炆得過了火,伊麵腍得如Baby Food一點咬勁也沒有,這個伊麵真的很不行。最後來指定的糖水紅豆沙,店家將其命名為百年好合,取其意思之外,也引喻糖水中的蓮子及百合,紅豆沙是煲得挺沙的,而百合軟腍,蓮子也鬆化,只不過甜湯沒有我愛吃到的陳皮味之外,更未能想像的是竟有點焦味,在座每位朋友也吃得出,店家真的要好好反省,咁樣點對得住主人家呢?最後的美點雙輝是芒果味心形的大菜糕及呈兔子形勢的棉花糖,棉花糖外有椰絲,棉花糖不如棉花般軟腍,是有點粉粉的口感,加上有點像藥水味的糖漿,味道不是太討好;芒果大菜糕反而是相當不錯,芒果味雖然不太濃,但明顯吃得到有芒果的酸甜味,而且大菜糕又夠挺身不過硬,忍不住吃了兩三件呢!散席的時間已是接近十一時,幸好有朋友接送,在此多謝他的幫助,另外也當然要多謝友人的邀請及讓我們分享她的喜悅,希望她跟她的先生白頭到老,永結同心。 continue reading
