My friends and I went to this brand new contemporary izakaya last week and were completely blown away. It was an overall surreal experience from the amazing food, beautiful art pieces, attentive service and live jazz music playing in the background. We ended up ordering the whole menu between the 5 of us and paired it with some of the best sakes I have tried in Hong Kong. Highlights were the tomato salad (we were so pleasantly surprised by parmesan dashi!), wagyu katsu & foie gras ganache (!!!),

We ended up ordering the whole menu between the 5 of us and paired it with some of the best sakes I have tried in Hong Kong. Highlights were the tomato salad (we were so pleasantly surprised by parmesan dashi!), wagyu katsu & foie gras ganache (!!!), perfectly cooked chilean sea bass in truffle dashi and of course the Hokkaido scallops with shiso chimichurri.
We ended with a platter of their specialty maki and nigiri which were all incredibly fresh and inventive, especially the akamutsu nigiri with foie gras which went beautifully with the Kikusaki '28' junmai daiginjo.
Loved it so much, we have already booked it again for our gathering next week!

I had such a great dinner at Silence. They serve an excellent Japanese modern food and they play with different ingredients and twist the tradition with a very smart international inspiration. I had the chance to seat at the counter and watching all the kitchen working together  with the chef driving everything was the best animation you can get during your dinner. I particularly appreciated the "Pablo" coffee cured Hamachi, real explosion of flavours, the "tomato" Japanese kumamoto and the "fif

I particularly appreciated the "Pablo" coffee cured Hamachi, real explosion of flavours, the "tomato" Japanese kumamoto and the "fifty shade of tuna" were the delicious rice became the perfect support to compare the differences between the 3 bests part of tuna.

They also offering a nice Sake list, who matches perfectly with the food and the jazz band playing all night long makes this restaurant a very unique experience in Hong Kong.
I will definitely come back and bring some friends to enjoy this place.

Super nice dinner at silencio with my fiancé. We were at the chef counter. We’ve been spectators of an amazing team working supervised by chef Sean. The Japanese food is great, very inventive. We took few elements A La Carte, and all have been delicious. Good selection of sake as well. The service team is friendly and attentive. The very qualitative live jazz makes a beautiful and special atmosphere. I can not wait to come back ! Thank’s again to chef Sean and his team.

Food wise, I love all the dishes we had on the night, esp one of the dishes called Kim Jun which is with pear and kimchi, its flavour is really interesting and match very well. They also has really great sake list to match with the dishes, will go back with bigger group so can try more dishes and sake next time!!
