I had such a great dinner at Silence. I had such a great dinner at Silence. They serve an excellent Japanese modern food and they play with different ingredients and twist the tradition with a very smart international inspiration. I had the chance to seat at the counter and watching all the kitchen working together  with the chef driving everything was the best animation you can get during your dinner.
 I particularly appreciated the "Pablo" coffee cured Hamachi, real explosion of flavours, the "tomato" Japanese kumamoto and the "fifty shade of tuna" were the delicious rice became the perfect support to compare the differences between the 3 bests part of tuna.

They also offering a nice Sake list, who matches perfectly with the food and the jazz band playing all night long makes this restaurant a very unique experience in Hong Kong.
I will definitely come back and bring some friends to enjoy this place.
