一行7人訂了Sase San一房,本身來過數次lunch, 今次是第一次食晚餐。都是點了$1,500的Omakase。每道食材都很新鮮,有魚油嘅香味。特別是O'toro,入口就溶化,不是脂肪,而且魚油充滿了個口。我特別喜歡安康魚肝,食過一次,都為了安康魚肝再來。而且只會提供給房間,所以今次有幸再次吃到。Sase san師傅制作用心,我問點解燒的食物沒有火熗gas味? 我最怕食這些火炙壽司,因為通常有陣Gas味。他回答原來他們從不用火熗,反而改用炭爐燒,那麼客人便不會吃到gas味,影響魚嘅鮮味。太細心了。最後,要講講個甜品,每次去都一定要吃奶凍,因為綠茶味好濃而唔苦,再配上奶凍,剛好中和了甜味,不太愛甜品的我,都會喜歡吃。所以,有機會會再來~

I never felt so compelled to write a review right after a meal. I guess somehow Sushi Sase managed to made me feel conned and fooled enough to do just that.
The environment is ok. The sushi counter is huge, so it lacks a bit of premium and intimate touch to a fine dining sushi place. But it’s not too bad.
We ordered the Chef Omakase lunch for $1480 per head, expecting premium ingredients and a few surprises. Right after the amuse bouche we were told that the Hokkaido hairy crab is sold out, so it was replaced by sea urchin.
For the next hour and half, we realised the entire meal is nothing but very average sushi made out of average ingredients, sea urchin, toro, flounder…nothing special at all. There wasn’t any attempt to add even the slightest surprise to the meal. At this price, even for dinners, Sushi chefs would normally add one or two items that aren’t available in run of the mill sushi places. But not for Sushi Sase apparently.
We left the place feeling nothing but conned.

After hearing some good reviews about this restaurant, decided to pop in for lunch with a few friends. The interior primarily consists of a classic japanese wooden interior, with a majority of the floorspace dedicated to a large sushi counter. There is also a smaller room with a small sushi counter that seats maybe 5 people as well as 3 individual tables that seat 4. The spacing of the restaurant is very well designed. However, when I sat down on my table (the 4 seater), I noted that the table was still wet so had to notify the water to dry it. If i remember correctly, there are 6 sets to choose from (omakase, Hokkaido set, sushi set, deluxe sushi set...and 2 others). I opted for the Hokkaido set, which includes steamed egg, uni/salmon roe rice, 6 pieces of sushi and udon. The steamed egg was velvety and very smooth, with a small piece of mushroom inside, slightly seasoned for taste. However, the uni/salmon roe rice was relatively dissappointing as  the salmon roe was not very fresh and didn't have the briny flavor you usually get from other comparable restaurants. The uni itself was ok but I expected it to be a better grade as it wasn't as smooth. The sushi was the biggest dissappointment in terms of freshness, with one of the pieces emitting a very strong fishy smell, which I did not expect from such a reputable establishment. The udon was average although slightly overcooked. The meal in itself was $500, and at this price, I will probably visit other similar establishments in the Central area for better grade sushi...at least during lunchtime.

眼見拖羅魚肉上細緻的油花,一口吃下去時,魚肉的油脂和鮮美,在嘴裏慢慢溶化,滿口油脂甘香,一丁點筋也沒有,令我吃得不亦樂乎!
這裏的海膽,是由北海道的海水包裝直送。

拉開木製趟門, 分了2邊, 左邊係好大嘅sushi bar
我估可以坐到約十幾人, 右邊係一個房裡面大約可坐7人~
侍應帶咗我地去右邊, 原來呢個小小嘅壽司枱就係佐瀬師父主理嘅
當把趟門拉埋, 就變成一個VIP Room,

我地3人叫了lunch嘅deluxe sushi set同埋
1人叫了 maguro set (鮪魚定食- 即吞拿魚)
落完order, 佐瀬師父會問有冇咩特別唔食,
問完就開始預備食材...

旁邊客人問佐瀬師父野, 佢都只係問一句答一句
但態度友善, 只是感覺有點嚴肅. 有啲奇怪嘅係,
佐瀬師父會將要整壽司的魚生先切好一片片,
最後再慢慢搓飯放上去, 這點令我諗起切牛扒嘅學問~
好多人會一開始切好晒件扒, 有啲人一路食一路切,
雖然我唔知道預先切有咩唔好, 但感覺有啲似趕收工咁

Set 有12件壽司, 蒸蛋加烏冬...
壽司包括有蝦, 海膽, 魚子, 拖羅, 吞拿, 池魚, 鰻魚等等...
食後感覺好似飛咗去日本嘅築地, 飯上面嘅魚生鮮、肥、甜、爽
海膽toro固之然一試難忘, 但最深刻可以話係個蝦,
因為佢用醬汁用得恰當, 蝦會用返蝦膏做汁塗上面, 
令到件蝦壽司, 味道貫徹始終,
而且佐瀬師父唔會下下都用醬汁,
用嘅份量都只係輕輕塗上, 忠於刺生原有嘅鮮味~

因為"出文"前星期吃過其他出名嘅壽司店,
差唔多1個set 好多件壽司都用醬汁,
但就配答錯晒醬汁, 搞到成個set 浪費晒~
所以有感塗上面嘅醬汁真係好緊要

以前好唔鐘意食吞拿魚, 鮮紅嘅Maguro (赤身) 總會帶有一種獨特味道

最特別之處係佢可以用杯或下圖嘅木兜飲...

in spite of the rave reviews on sushi sase among my banking friends, i had been reluctant to try it for the simple reason that the bill was going to burn a hole in my pocket.  i finally got an excuse to go with my loss on the world cup bet against my friend.  it wasn't up to my choice of dinner or lunch while my friend was generous enough to choose lunch.knowing sushi sase is a japanese restaurant specializing in kaiseki cuisine, i knew for sure this experience was going to be a luxurious one.

knowing sushi sase is a japanese restaurant specializing in kaiseki cuisine, i knew for sure this experience was going to be a luxurious one.  upon entrance of the restaurant, a large sushi bar with 18 seating was enough to convince you the authencity of sushi sase.  it certainly reminded me of the sushi experience when i was treated to an exclusive sushi bar in akasaka tokyo.  a few sample of minimalistic appertizers, the kaiseki meal began.  the omakase sushi set consisted of 15 sushi came in their special presentation as candies to the eyes.  the acidity of the sushi rice complemented perfectly to the oceanic flavor to the fish.  sushi sase offered from the chef omakase course to an omakase sushi course ranging from hkd 1000+ to 1000.  to the adventurous, it offered exoctic dishes like shirako (fish sperm), kazunoko (herring roe) or sazae (horned turban) which you won't easily found elsewhere.

sushi sase is expensive with a reason.  it is certainly not a place i can afford to go frequently.  but it deserves a spot for the special occasion.

今晚討論話題不離健康VS美味這吊詭組合,席上結論是日本料理是最接近健康又美味的菜系,不過也有例外的,就是今晚由名師Sase San特別為大家送上,入口即溶的鮟鱇魚肝壽司,在夏天得見,實在可遇不可求。謝謝Peter和Christabel特別的安排,才可以在貴賓房高興的享受大師級手藝,滿足!也祝攝影達人Dennis生日快樂!

記得佐瀨初開店時,有日本師傅駐場、客人眾多,要訂枱一點也不容易。這天上午打電話訂枱吃午飯,馬上訂到位,到達時也未客滿。我們點了omakase,前菜賣相精緻,下面放了一張紙印有花的圖案,很有春夏氣息,做法聰明,可因應不同時節更換。海膽很大隻,也很鮮味。部分海鮮也是時令品種,但就欠缺了此店早期的特色,如岩鹽配壽司,或一些特色醬汁。熱食的脆紙卷和汁煮魚,合格但冇特色。甜品的南瓜雪糕,很少在其他店吃到,因是自家製,但他們不是做雪糕的專家,不夠軟滑。廚師多是本地人,似乎經驗未夠。整體來說,平淡冇驚喜,收費亦不便宜,短時間內不會再來了。

I was very delighted to be invited to this Japanese restaurant for this year's birthday dinner. It is somewhere I really wanted to try. The place is much bigger than I thought. The service was excellent, the waitress was very attentive, ensuring we were drinking hot tea almost every 10 mins. I was very delighted to be invited to this Japanese restaurant for this year's birthday dinner. It is somewhere I really wanted to try. The place is much bigger than I thought. The service was excellent, the waitress was very attentive, ensuring we were drinking hot tea almost every 10 mins. Since we had Chef Sase to make sushi for us, the waitress translated each dish that were served to us from start til end. We each ordered the most expensive omakase (why not?!) and as said on the menu it will be mostly sashimis and sushis. Honestly sitting at the sushi counter i didn't want to order any hot dish. 
As anticipated, I felt like I was in Japan that night! The 18 piece course definitley made money worth it. We also ordered 2 bottles of sake (300ml)--they offered a great selection of sake too. One note to mention, the side dishes the turnip and burdock root (gobou) were fantastic! They helped clear the palate for the next piece of fish.

sase师傅的寿司是一件一件上 从浅色到深色 从味道清淡到浓郁

最爱是左口鱼 toro 甜虾 野生三文鱼(说实在的 一开始我都没发现这个是三文鱼 颜色比较深 味道也和平时吃的三文鱼不同 非常爱!)海胆军舰不用说 一直是大爱的

最后的鳗鱼寿司绝对是惊喜!鳗鱼非常非常非常非常软滑!简直是入口即化 太美味了 要知道平时我可是对鳗鱼无感啊~~~

waiter很耐心细致 sase先生讲的鱼的名称我们不懂 讨论中 waiter马上过来告诉我们

一开始我们还挑了一款清酒 waiter也告诉我们哪种比较甜哪种比较辛 我们挑了个甜的 比较淡 但配合寿司感觉不错

汤和乌冬我一般都无感 乌冬不是平时那种圆圆的 有点像拉面 扁扁的

12件寿司吃完感觉很满足 但也没有特别饱哎……好想再吃两个toro和海胆啊~~

套餐里面是没有甜品的 所以我们又点了一个绿茶奶冻 还有一个柚子冰激凌

柚子冰激凌里面有柚子肉 清香 满分!

绿茶奶冻也超级香 绿茶粉是在表面的 混合起来极美味! 再来一个满分!

吃完心满意足 好想什么时候再去啊…………

蒸蛋隨處都可吃到,但質素好並不易遇到。這個蒸蛋,質素當然很好,十分滑溜,顏色雖淺,但蛋味非常濃郁,鹹度亦很平均;而混蛋的高湯亦很鮮,所以此蛋鮮味十足;不像其他店用海鮮來蒸,反而是用肉,這件肉很軟嫩,肉味亦濃郁,好吃。

左口魚,三文魚,深海池魚,目魚,沙甸魚,甜蝦,秋刀魚
小小的七件壽司,用了這麼大的一隻圓碟盛著,多麼的壯觀,看到都已經心花怒放。這些壽司,全已經過調味,完全不用沾豉油便可食用;而每件壽司的飯粒分明,帶點黏韌,醋味亦適中。
先從左邊上排說起,半透明的是左口魚,看似不太吸引,但左口魚非常彈牙,起膠似的,鮮味十足;然後便是野生三文魚,這三文魚經過醃製,顏色比較深,鹹味亦比較重,因為經過醃製,所以與平日吃的三文魚味道很不同,這充滿鹹香,味道更鮮,而肉質亦很軟腍;接下來的便是深海池魚,與深海池魚特別有緣,經常都吃到牠,口感與左口魚很似,都是比較彈牙的;紅噹噹的則是木魚,眾多款魚中,個人覺得目魚味道比較好,魚味相對上較濃郁,魚味比較濃,腥味亦比較重,所以魚上加了些香蔥來趕走腥味。
下面那三件,從左面說起,先來的是秋刀魚,秋刀魚當中有少少幼骨,雖然我很怕魚皮,但這個咬下去又不會很可怕。旁邊的甜蝦實在令我太興奮,蝦身十分粗壯,平日吃的太幼細,一口便沒有了,甜蝦既大隻,肉質軟中帶爽,十分creamy,鮮味很強,超超超愛。

橙色,是我頗喜歡的顏色,即使套用在食物上也很適合,平日都很愛吃西柚、香橙之類的;眼前兩碟超級橙色的壽司,誰又能抗拒!?
海膽完全沒有腥味,非常鮮甜,味道很濃郁,入口便溶,吃擺口中還留著不少海膽香,真想這味道可以留著不走。
三文魚籽十分鮮甜,粒粒爆汁,非常新鮮,與酸酸的米飯混合再一起,有點像汁撈飯一樣,真的太美味。

最後的兩款便是雖普通但卻奪套得大眾歡心的甜蛋和鰻魚,鰻魚看上去有點"走樣",肉質似乎有點過軟,醬汁味道偏甜,不過還是嚐到鰻魚味的,但我更想吃的是入口即化的感覺。
邊吃邊感到甜蜜蜜,甜蛋軟綿綿的呈千層,有種說不出的感覺,自己去感受一下吧。

或者我對烏冬要求太高了,所以對這個烏冬的感覺一般,我還是喜歡那種十分彈牙圓圓的烏冬,對於這個爛爛的不太愛。而那湯的味道有點濃,不太適合我。
到最後,我還以為會有甜品,畢竟這個午餐連加一後盛惠$528,給我一個雪糕球也可以吧?實在有點不開心呢。吃了12件品質比較高的壽司,吃完十分滿足。如果大家想來,記得book counter位,不要坐卡位,感覺是相差很遠的,單看下面瓜兄的食評便知道了,他的壽司是一件件上的,而我的是一盤上的,雖然一盤上比較宏偉,但一件件似乎會更新鮮。吃過這個500大元的壽司餐後,覺得這個比上次在二星壽司店吃的划算得多,想吃好的,是值得來的。
