這個冬天好像延遲了,還未著大褸羽絨,但也需要滋補一下,熱血暖身﹗這晚來到紫粵軒晚飯,有廂房、有沙發座、有大枱等,空間感充裕,坐得舒適。 先來焗釀鮮蟹蓋,非常多蟹肉,好足料,混合洋蔥同焗,鮮甜美味,而面層的麵包糠亦夠薄脆,吃完不夠飽滯。紐西蘭蜂蜜片皮鴨,選用45至50日大五穀飼養的米鴨,每隻約重4斤半,大廚用香料浸鴨後,再淋上紐西蘭蜂蜜蘋果醋水,才進行烤焗等後續工序,難怪肉質鮮嫩多汁,且帶有淡淡的酸甜清香,吃時還可蘸上紐西蘭蜂蜜呢﹗季節限定的菊花五蛇羮,味道濃郁,加上冬菇、木耳、筍絲,又是足料之作。另一秋冬暖身菜,山東黑草羊腩煲,羊腩大件厚肉,加入冬菇、冬筍、腐竹、馬蹄等同炆,羊腩入味又惹味,腐乳也功不可沒。片皮鴨一鴨兩食,就選了鴨崧生菜包,炒得乾爽入味,以脆嫩生菜包著吃甚為清新。砂鍋三蝦煎陳村粉,蝦乾蝦仁蝦籽讓整道菜充滿鹹香鮮味,爽滑軟熟陳村粉吸滿精華,尤其惹味。原條馬友咸蛋黑豚肉餅煲仔飯,這是鹹魚蒸肉餅的昇華版,選用黑豚肉作肉餅,爽口同時比較油潤,若馬友再鹹香一點就更搭配了!最後,有滋潤養顏的蛋白桃膠杏仁茶及補血Q彈棗皇糕做甜品,後者紅棗味更是香甜濃郁。 continue reading

近來氣溫下降不少終於感受到冬季的來臨!接下來除了聖誕節之外冬至、團年和開年也是要慶祝的日子,中國人做節當然要吃中菜才叫匹配,這天便跟眾好友提早品嚐一頓滋補的中菜作冬至飯。我們選了將軍澳九龍東皇冠假日酒店內的紫粵軒享用這頓晚餐,多年前曾經品嚐過盆菜留下非常好的印象,今次首度來捧場非常期待。餐廳內裏裝潢非常摩登但又不失優雅,更設有多種不同類型的舒適座位,地方寬敞空間感十足坐得非常舒適。點好菜後不消一會侍應便先送上焗釀鮮蟹蓋!色澤金黃又豐滿的蟹蓋新鮮熱辣上檯好吸引。炸至金黃色的外層酥香不油膩,內裏盡是滿滿新鮮的絲絲蟹肉混上洋蔥香甜可口,每人一隻自私吃太享受了吧。接下來湯羹我們選了正合時宜的菊花五蛇羹!蛇羹湯頭濃郁啖啖蛇肉,配以冬菇、木耳、冬筍等足料炮製口感很豐富,配以菊花入饌更添清新香氣,而且明目清肝、活氣補血秋冬必嚐。在座各位也是片皮鴨粉絲!點來紐西蘭蜂蜜片皮鴨$578兩食享用,由師傅於堂前即席片出肥美油潤的片皮鴨。加了紐西蘭蜂蜜作皮水的片皮鴨燒出來顏色非常艷麗,吃下去除了鴨的甘香外還添加了點點清新酸甜味,吃悶了經典片皮鴨的朋友可以試試這新口味啊。二食的生菜包鴨崧材料很豐炒得非常香口!以脆嫩的生菜盞包裹著來品嚐口感超誘人。緊接著到暖身的山東黑草羊腩煲出場!用上火爐烘著熱騰騰上檯香氣四溢,伴隨還有灼唐生菜及調得超級好味的腐乳醬。羊腩炆得非常入味而且肥瘦恰好!內裏還有馬蹄、冬筍等配料非常豐富濃郁惹味,大家也吃得非常滿意。那勁好味的腐乳醬用來配唐生菜真的天生一對!爽脆生菜加上鹹香惹味的腐乳醬好吃得到不了口。砂鍋三蝦煎陳村粉充滿海洋的鮮味好迷人!內裏以爽甜大蝦、惹味蝦乾及鹹香蝦子來配襯陳村粉,吃下鹹鮮惹味是很唰嘴的好味道。最後還有暖笠笠的原件馬友鹹蛋黑豚肉餅煲仔飯!馬友鹹魚配飯肯定是好朋友,加上有咬口的黑豚肉餅和甘香鹹蛋我可以吃上一碗。甜品點了非常滋潤的棗皇糕!煙靭軟腍的口感還有濃郁的紅棗香甜味我很喜歡。其他朋友還品嚐了蛋白桃膠杏仁茶!雪白的杏仁茶內還加入了滋潤養顏的桃膠,香甜美味之餘還增添不少口感呢。紫粵軒的出品非常有質素我挺喜歡!如果大家還在苦惱著節慶飯去處的話不妨試試。 continue reading

「小雪」已過天氣漸涼,朋友約去食去滋潤保暖的冬日美食,當然立即答應;地址即選在將軍澳「香港九龍東皇冠假日酒店」內的紫粵軒。酒店大堂已佈置了聖誕裝飾,很有「白色聖誕」的氣氛,令人眼前一亮,是一個很不錯的打咭點!餐廳裝潢以海洋為主題,除了大廳外,還有兩間半開放式房間及幾間VIP房,喜歡多一點私人空間的,可考慮一下;可惜當晚因房內有客,不便影相。首先上場的是「#焗釀鮮蟹蓋」,打開焗至金黃酥脆的麵包糠,餡料有超多洋蔥及鮮嫩的蟹肉,每一口也非常味美,絕對令人吃不停口。第二味是「#紐西蘭蜂蜜片皮鴨」,大廚在片皮鴨淋上紐西蘭蜂蜜蘋果醋水,經過6小時風乾後,再用1小時烤焗,形成皮脆肉嫩的效果,享用時再加入一些紐西蘭蜂蜜,食落更添一份酸甜蜜香,非常滋味。第三味是「#菊花五蛇羹」,湯頭香濃,食落啖啖蛇肉,配以切成絲狀的雞絲、冬菇、木耳、冬筍等食材,口感豐富味美;食用時配上菊花、檸檬葉及薄脆,滋味更好;據說蛇羹有明目清肝、活氣補血之功效,難怪食後渾身發熱,真是秋冬必吃之一。第四味是「#山東黑草羊腩煲」,黑草羊皮厚肉嫩,即使長時間炆煮,依然保持彈而不韌,膠質豐富,是羊腩煲不宜之選;再加清爽香甜嘅馬蹄,而腐竹吸收晒羊腩煲的湯汁及精華後,食落更加惹味。跟煲而來的生菜,已輕微灼熟,可淨食或加入煲中一起享用。第五味是「#生菜包鴨崧」,大廚把冬筍、鴿崧、唐芹等食材切粒,加入蒜蓉炒香,再配上爽口生菜一同享用,風味絕佳。第六味是「#砂鍋三蝦煎陳村粉」,非常惹味的一道菜,三款蝦各有不同口感,確是不錯;可惜陳村粉一嚿嚿沒有攤開,未能完全吸收醬汁,做成中間粉粉的口感,而且味道偏淡,有點可惜。甜品是「#蛋白桃膠杏仁茶」,養顏滋潤又好味嘅蛋白杏仁茶,加入適當桃膠,更有潤燥、生津止渴等效果,對於乾燥膚質,也有不錯的保養功效。香甜軟糯的「#棗皇糕」,入口煙靭不黏口,帶有濃濃的紅棗香味,甜度適中,好吃。#冬日美食#紫粵軒地址: 將軍澳唐德街3號香港九龍東皇冠假日酒店2樓電話: 39830628 continue reading

我是紫粵軒的鐵粉,今晚專誠邀客吃晚飯,點了$4xx per head set dinner, 除了燉湯有驚喜,紅酒煮牛及黑芝麻卷,完全失禮,一口牛,不停撩牙。黑芝麻卷,更可怕,不是新鮮出爐。硬繃繃。全碟四條,咬一口,其他都在垃圾桶了,浪費、失望。 其實要控制食物成本,無可厚非,理所當然。套餐,令精莫濫,多而沒有質素,只會講走客人。務必重新檢視套餐食物水平及質數。可聯絡本人,分享用餐感受! continue reading
