屋企人想食麻辣火鍋,揀咗方叔叔試吓佢嘅重慶麻辣火鍋,叫咗兩個湯底,一個係麻辣拼豬骨鍋,另一個係麻辣拼胡椒豬肚鍋,麻辣火鍋湯底未算好辣,小小麻,微香,味道唔錯,唔會一味得個辣字,豬骨鍋就好普通,味道比較淡,冇咩豬骨味,要靠其他醬料調味,至於個胡椒豬肚鍋,味道就唔錯,有胡椒辣,豬肚同雞都好入味,而且份量都唔少,至於配料就叫咗一個牛肉拼盤、一份牛丸、一份燕餃、一份鵝腸、一份油炸鬼、一份炸豆皮、一份豬肉片、一份羊肉片、兩份鴨血、一份牛肉滑同一份墨魚滑,牛肉拼盤唔錯,四種唔同牛嘅部位,每一個部位啲牛肉都好嫩滑,油花分明,亦都有牛味,特別係一個好似新鮮滑牛嘅牛肉嫩滑得嚟又有咬口,鵝腸就冇晒肥膏,所以冇咗啲油甘味,佢係脆口嘅,牛丸唔係潮汕牛丸,但係都爽口,燕餃就細細隻好易入口,味道中規中矩,油炸鬼冇街外面粥舖嗰啲油炸鬼咁鬆脆,叫做合格,炸豆皮就唔錯,炸得啱啱好,冇過到火位,豬肉片脂肪比例稍多,似五花腩,但係入口都係爽嫩唔錯,羊肉片就普普通通,唔係好重羊膻味,鴨血其實唔係特別好食,但係麻辣湯底一定要襯鴨血,佢個鴨血係爽滑,但係唔彈牙,都係中規中矩,牛肉滑同墨魚滑都唔錯,個人認為牛肉滑好少少,整體上配料

屋企人想食麻辣火鍋,揀咗方叔叔試吓佢嘅重慶麻辣火鍋,叫咗兩個湯底,一個係麻辣拼豬骨鍋,另一個係麻辣拼胡椒豬肚鍋,麻辣火鍋湯底未算好辣,小小麻,微香,味道唔錯,唔會一味得個辣字,豬骨鍋就好普通,味道比較淡,冇咩豬骨味,要靠其他醬料調味,至於個胡椒豬肚鍋,味道就唔錯,有胡椒辣,豬肚同雞都好入味,而且份量都唔少,至於配料就叫咗一個牛肉拼盤、一份牛丸、一份燕餃、一份鵝腸、一份油炸鬼、一份炸豆皮、一份豬肉片、一份羊肉片、兩份鴨血、一份牛肉滑同一份墨魚滑,牛肉拼盤唔錯,四種唔同牛嘅部位,每一個部位啲牛肉都好嫩滑,油花分明,亦都有牛味,特別係一個好似新鮮滑牛嘅牛肉嫩滑得嚟又有咬口,鵝腸就冇晒肥膏,所以冇咗啲油甘味,佢係脆口嘅,牛丸唔係潮汕牛丸,但係都爽口,燕餃就細細隻好易入口,味道中規中矩,油炸鬼冇街外面粥舖嗰啲油炸鬼咁鬆脆,叫做合格,炸豆皮就唔錯,炸得啱啱好,冇過到火位,豬肉片脂肪比例稍多,似五花腩,但係入口都係爽嫩唔錯,羊肉片就普普通通,唔係好重羊膻味,鴨血其實唔係特別好食,但係麻辣湯底一定要襯鴨血,佢個鴨血係爽滑,但係唔彈牙,都係中規中矩,牛肉滑同墨魚滑都唔錯,個人認為牛肉滑好少少,整體上配料都算理想,亦都新鮮,環境光暗度稍暗,但係幾舒服,唔迫,仲有提供圍裙,驚你整污糟自己件衫,但係夥計加水嘅時候都係彈咗啲湯攞我件衫度,不過佢哋反應好快,係咁同我講對唔住之外即刻拎咗好多濕紙巾俾我抹,轉個頭仲送咗一碟糍粑賠罪,其實我冇鬧佢冇嘈,佢大可以當冇事就算,但係處理得好得體,服務都抵讚嘅。

講到打邊爐嘅龍頭大佬,一定非方叔叔莫屬。所以朋友話想打邊爐嘅時候,我就推介咗位於沙田新城市廣場嘅「方叔叔」。

一坐低店員已經送上中式糖水和木耳蘿蔔做前菜。因為朋友比較鍾意食辣,所以直接叫麻辣鴛鴦鍋就啱晒啦,我就揀左大骨滋補湯做唔辣嘅湯底。麻辣湯上面放滿辣椒仔,面頭仲有一層紅油,又辣又香。

嫩牛肉
選用比較腍身嘅部位,肉脂比例均勻,放入麻辣湯底就會入味好多。

淮山條
紫白兩色打卡都夠哂靚,口感爽脆,內層又綿密。

鮮鵝腸
湪一湪就食得,同埋口感彈牙又爽口。

稻田毛肚
黑毛肚清洗夠哂乾淨,營養豐富夠藝身同埋脆。

桂花蚌
柔軟嫩滑,又有一定彈性。

小水母
透明雪白嘅圓水母,好似食緊啫喱一樣。

鮮黃喉
顏色雪白其實係心答嘅一部分,口感爽脆。

每次從日本返來,一定要安排一餐麻辣火鍋。係香港食麻辣火鍋,方叔叔一定係最佳選擇。方叔叔晚市都幾full下,唔想排隊就要先定位啦。一落座,即刻送咗糖水同前菜,醃制蘿蔔皮,宜家好流行啲前菜,食落酸甜脆口。水仙烏龍檸檬茶,烏龍茶底透出淡淡檸檬香味,飲落好清爽。唯怡豆奶,豆香味好重同埋唔會好甜,解辣一流。鴛鴦鍋底揀咗番茄湯同麻辣湯,麻辣湯落咗大量香料炒制,煮再耐都唔會苦。小郡肝串串,大刀豬腰片,藤椒牛舌同稻田毛肚,食火鍋必食內臟,全部都處理得好乾淨,唔會覺得腥。口感都是偏脆口,一定要落入辣湯,食落更加惹味。紐西蘭精品羊肉卷,羊肉卷薄身但是好大一片,涮到微卷已經可以食。食落羊肉味重,肥膏處會有點脆口同奶香,唔錯。嫩牛肉,牛肉煮幾耐都仲好嫩,食落牛香四溢好嫩滑。長城小白豬午餐肉,食落肉粒感好重同埋好韌。功夫萵筍片,哩個餸比咗好大驚喜,一定要放落番茄湯,唰30秒就好啦,唔好太耐。萵筍片嗦曬湯底酸味,食落酸甜脆口,獲得我同FD一致好評!
