母親大壽,想找一家體面既酒家,親友識人,推薦呢間廣州甚有名氣與歷史、主打傳統粵菜既大同私房菜,因為會所只有兩圍圓桌,所以預約是必須的入面佈置華貴,靛藍為主色,一洗平時酒家慣性紅紅白白既俗氣房間滿佈藝術畫作第一道:燕窩鷓鴣粥呢樣係傳統手工菜,傳統做法係將參薯/木薯攪成蓉再加鷓鴣肉煲勻,但呢度用左冬瓜,食起上黎較清熱同埋無咁黏稠第二道:大蝦多士我想像中的蝦多士係多士係底蝦係面,但呢個做法係,多士包覆住整個大蝦,然後開炸用刀切開一半,可以一半點喼汁,一半點茄汁,兩種風味第三道:自醃味菜炒肚尖咸酸菜係店家自家醃製,酸香味齊全。而每隻豬既豬肚尖只有3-4人份量,呢個部位既豬肚,厚實、柔韌,過鑊爆炒一下,食落嫩滑又爽口第四道:清炒涼瓜呢道菜,負責人甚至話係招牌菜,睇落以為簡單野,背後功夫野十足:先係將苦瓜汆水兩粒鐘,然後唔落油水直接生炒,上碟時灑上少許胡椒粉調味,口感爽脆,甘而不苦,一片一片吃著非常上癮第五道:蜜汁火方做左幾廿年人第一次食呢個,睇餐牌時都有d期待原來係道傳統浙江菜,雖然並非粵菜但都係店家招牌之一,用多士夾上用蜜汁煨過既金華火腿、並以菠蘿最代本應為蓮子及腐皮,旨在減少肥膩感及火腿鹹味

雖然未食過正裝牌本,但我非常滿意菠蘿呢個配搭

店家將剛剛炒蟹用剩嘅蟹油同配料留起,

店家話臭草係廣州常見植物,又名芸香草,
