To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

因應季節,吃當造的食物 -----「不時不食」是中國人流傳已久的飲食哲學。那麼,在炎炎夏日,有什麼時令食物呢?池魚?縞鰺?千両早前舉辦了以「盛夏鮮活珍味」為題的博客活動,而當日的主角正是池魚和縞鰺。餐前先呈上一杯巨峰清釀啤酒特飲,迷人的紫色、清甜的果香、淡淡的麥味,一切彷彿為女生而設。鰹魚沙律,炙燒鰹魚片灑上醋汁、蔥花和炸蒜粒;因為不喜歡吃蔥,最初刻意將鰹魚片上的配料撥走才放入口,但味道並不討好,於是乖乖的將鰹魚片裹著蔥花和蒜粒,沒料到這樣不但可將腥味盡消,更將不同的味道和諧地連繫起來,加上酸酸甜甜的醋汁,十分醒胃。刺身 - 縞鰺薄切 / 縞鰺背刺身/ 縞鰺腩刺身,縞鰺是池魚中最矜貴的品種,肉質細嫩爽甜,以縞鰺腩和較厚身的的縞鰺背較為突出,而縞鰺薄切則添上酸甜的柚子汁和蘿蔔茸來提昇魚的鮮味,效果不錯。刺身 - 池魚刺身 / 蒜麵豉池魚片 / 薑蔥池魚細切,被譽為白身魚之王的池魚肉質爽甜,魚香獨特,其中薄切的那一款伴上炸蒜粒、白麵豉醬和柚子酸汁啫喱,充滿創意,味道也較為豐富,最討人歡喜。燒物 - 鹽燒池魚,魚皮燒得略為香脆,調味簡約,以鹽帶出魚的鮮味,不過因為池魚本身的油份較少,難免感到

揚物 - 吉列廣島蠔/ 穴子天婦羅 / 炸鳥賊魚餅,炸蠔外香脆內嫩滑,鮮味多汁,但炸漿可薄身一點;穴子以特製醬油煮過後才炸成天婦羅,因此味道略甜,幾乎吃不出是穴子?!烏賊魚餅亦相對一般,且較為油膩。始終炸物只是這裡的配角,論水準已算不錯。

壽司 - 池魚 / 縞鰺 / 灸燒左口魚裙邊 / 北海道海膽,以顏色鮮艷的海膽壽司最為搶鏡,鮮甜中帶點海水味道,很想 encore!左口魚裙邊壽司更是精彩,炙燒過後變得油潤誘人,肉質軟腍細緻,有入口即化的感覺,超級味美!池魚和縞鰺壽司,就是這樣被海膽和左口魚搶去了風頭 ~
