To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. I’m not too sure about the background of Kuma Ramen. Notwithstanding the presence of a Japanese chef, I wouldn’t assume that it has something to do with Kumamoto, as the types of ramen served here are more similar to Hakata style than Kumamoto (think a better version of Ajisen, where pork bone broth is mixed with chicken broth with plenty of garlic), but I could be wrong.

They have the standard colour-code system for most ramen shops nowadays, namely, original/white for normal pork bone broth, red for spicy pork bone broth and black for tonkotsu with garlic oil. I ordered the spicy version as always. My friend also ordered a set of gyoza.

It came after a 15 minutes wait, which is fairly odd since the shop wasn’t that busy at the time.

First, a taste of the soup. It was definitely Hakata style tonkotsu. The tonkotsu taste was understandably muted by the chili oil. It wasn’t too spicy but had a fairly nice, spicy aroma.

I ordered hard noodles. The thick, white Hakata noodles were springy and was really quite good. I'd say it's probably slightly better than Ichiran.

However, for $78 dollars a bowl, there was only one piece of thin, dry char siu and negligible amount of spring onions and kuraage. I don’t think it is value for money.

The gyoza was, however, not bad but not good enough to bring this restaurant to "Good" on my standard.
