今日去到銅鑼灣一間新開餐廳「山」YAMA,裝修以山林做主題🌳不論是擺設、餐具、食物擺盤都同山有關,晚餐供應幾款omakase,以食材做分類,分別有和牛、雞、黑豚、海鮮、魚,以及時令既蟹蟹之omakase|$1388/人毛蟹柚子啫喱以香箱蟹為先付,完全被它震攝到😍蟹蓋上鋪滿蟹籽、蟹肉同蟹膏,單食都感受到鮮味,中間加上柚子蟹醋啫喱,酸甜開胃雲丹明太子白海老用上富山灣白蝦,鋪上日本海膽,再加入明太子同鱘魚子做點綴,貴氣而不俗氣☺️白蝦口感黏糯,帶膠質,雖然味道較清淡,但配埋海膽一齊食就剛好,不過明太子味道唔太突出蟹出汁多數食到尾聲先上湯,但呢到第三道菜就出現,湯底用昆布去熬製,仲加入了蟹殼、蟹肉,清甜得黎又暖胃🥰季節刺身三點呢個擺盤真係好靚,刺身盤放在木架上再加入乾冰,仙氣十足🤣店員都提我要準備相機先!刺身分別有帶子-三刀魚-金目鯛-平政魚-牡丹蝦帶子上加了柚子皮、三文魚籽同金箔,好奢華食法😆 三刀魚卷成花形,本身味道較淡所以食時候配酸汁一齊食,帶出魚鮮味,金目鯛輕輕火炙後好香,入而面卷了芽蔥,平政魚同油甘魚是同類別,肉質肥嫩,油脂豐潤,牡丹蝦膠質豐富,蝦頭都有膏👍🏻釀上海蟹蓋食完刺身就轉一轉

食完刺身就轉一轉口味,送上富中菜特色既釀上海蟹蓋😝跟3款不同年份黑醋,清楚寫上不同甜度同酸度,自行加配👍🏻
