終於有機會到訪,試試大師Gordon Ramsey嘅威靈頓牛柳食譜!酥皮做得不錯,唔會過厚,喺有crepe打底嘅幫助下,外面酥皮就算底部亦keep到鬆脆。牛柳方面,揀嘅部位亦夠腍無筋,出品肉芯亦係粉紅色,略嫌不足嘅就係牛柳外到內都係一隻粉紅色,冇果種由外熱焗熟,焗到裏面半熟嘅感覺,估計係為左預防overcook,牛已經預先慢煮,外面亦冇乜煎封過嘅肉香,有點失真。至於個Duxelles,菇香亦有點不足,而且唔太覺有mustard味,只有食到邊皮果塊酥皮,先終於食到有芥辣嘅痕跡。當然,實際營運都係一大考慮,因為做威靈頓最難就係維持每一份嘅水準,但如果要犧牲菜式原意或味道,可能就要改善一下。其他菜式,例如和牛片、烤八爪魚、鴨肉西瓜沙律、Porterhouse都不過不失,又未至於會有驚喜,所以不作詳談。
