To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. FUMI DELUXE TASTING MENU嚐味盛宴 $1180/ guest 先付水雲酢帶微酸嘅水雲醋配搭白色嘅山芋,口感好爽口。慢煮鴨胸、菊菜浸汁、炙燒銀鱈魚壽司、田樂六方芋綠色球形嘅小碗入面裝住菊菜,味道相當滑。鴨胸夠晒軟腍。而我最鍾意就係銀鱈魚,有一種炙燒嘅煙熏味。最後嘅炸山芋夠哂香脆綿密。刺身總共有四款。首先就係油脂極豐富嘅大拖羅,然後就到咗配搭酸汁嘅新鯛,第三就係爽脆嘅白象拔蚌,同埋最後魚味最濃嘅初鰹魚。海膽及三文魚籽豆乳茶碗蒸相比傳統嘅茶碗蒸,佢哋好特別加咗豆乳,所以口感會厚實好多又有豆香,而海膽就會帶出鮮甜味。龍蝦具足煮橙紅色嘅新鮮龍蝦,肉質雪白又彈牙。鱧魚天婦羅鱧魚就第一次食,口感酥脆魚肉又細膩。網燒A4宮崎牛丼配溫泉蛋粉嫩嘅A4和牛,入口即溶又充滿油香。蜜瓜最後試埋日本出產嘅香甜蜜瓜。FUMI (中環)中環蘭桂坊德己立街30-32號加州大廈6樓

帶微酸嘅水雲醋配搭白色嘅山芋,口感好爽口。


慢煮鴨胸、菊菜浸汁、炙燒銀鱈魚壽司、田樂六方芋
