To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 我依啲打工仔,每個月就望月尾出糧,每日就望夠鐘收工,當然,唔少得望住個鐘等食晏。雖然晌中環返工,但都甚少寫中環食晏嘅食評,皆因小弟公司唯一最直接嘅福利就喺包伙食,今時今日而言,都算少有,所以,年中幫小弟慳番唔少,等我間唔時有點閒錢可以食好啲。就好似今次,晌廣州拼搏嘅老友回港辦點事,就相約一行3人到專做高質粵菜嘅「大班樓」食餐好嘅。地下一入門口左右兩邊都有張枱,不過,太多人出出入入,感覺唔多好。上樓上就好好多,多張6人圓枱或4人方枱,較靜局,而且,嚟嘅人都喺斯文客,交談都唔會太嘈炒,更顯得清靜。一室以白色為主,加少少小型水晶燈,予人感覺爽朗。午市主要供應套餐「行政午餐」,分頭盤(10選1)、主菜(17選1)、湯及甜品,包白飯一碗,定價為3道菜$198,而4道菜則$218,另收加一服務費,所以,晌度食個晏起錶價就二百多,非一般打工仔嘅選擇。北芪黨參燉乳鴨湯品嘅選擇喺十豆蟲草鬚湯或老火靚湯,咪以為後者喺普普通通嘅例湯,原來今日嘅老火湯喺「北芪黨參燉乳鴨」,一聽之下感覺喺咪好唔同呢。原盅清燉,還加了桂圓,呷一啖讓人潤澤無比,清甜醇厚,起首嘅「例湯」已經有種先聲奪人嘅姿態。頭盤、主菜,我哋各人按

頭盤、主菜,我哋各人按喜好各揀一款,其實,每個類別都有咁多選擇,的確令人好易三心兩意!雖然有分話頭盤、主菜,但頭盤嘅份量亦只喺比主菜稍為細碟一啲,喺頭盤嘅煙燻乳鴿因只得半隻,才叫做明顯細份,所以,一個套餐都可以睇為「兩餸飯」啊!

清酒魚湯煮蜆

魚湯加入點點薑絲,辟晒任何腥味,而魚味嚟得淡雅,唔會太過濃,又呷到少少清酒酒香;蜆隻肥大肉厚,味道鮮甜,吐晒沙,唔會食食吓巉口,而湯中仲有少少白蘿蔔條,清甜無渣。

龍井菊花煙燻乳鴿(半隻)

因為作為頭盤,所以,只得半隻。雖然乳鴿煙燻唔及酥炸咁脆口,不過,茶葉香氣清幽,乳鴿肉質嫩滑,亦帶有茶葉芳香,就算只喺食得一小件,都喺食得津津有味

店方上菜都頗快,除咗因為套餐嘅菜式有一定嘅規限範圍之外,其次,食客唔算多。頭盤一道接一道,好快又上埋主菜,雖然主菜共有17款選擇,但喺,其中有兩款(清蒸游水海斑及雞油花雕蒸花蟹配陳村粉)喺要額外加錢。

芥蘭頭抽炒和牛腩片

小弟覺得依道菜最體現到佢用料精,因為啲芥蘭全部都喺最嫩嘅部位,翠綠爽脆,所切嘅長度均一;而牛腩片非常嫩口,又夠肉味,簡單以頭抽炒,真喺已經夠晒好食。

主菜同樣多揀咗一道煙燻菜式,喺龍井煙燻米鴨,肉質當然以乳鴿滑嫩好多,但米鴨亦唔差,鴨肉軟腍細緻,沾一點黑糖羅望子醬,夾雜埋茶葉香,立時產生出化學作用,因為羅望子無酸梅咁酸,所以,淡酸醇甜中滲出幽幽茶香,細味先嗒出當中嘅味道

魚湯腐皮浸時蔬

食咩都要有個平衡,加上同行朋友喜歡素菜多,一道魚湯腐皮浸時蔬就最好不過。魚湯晌先前一道清酒魚湯煮蜆已分享過,鮮腐皮有豆香,時蔬以白菜仔入饌,雖然加入幾片「油炸鬼」,依然喺一道好清淡嘅菜式。

子薑雪糕

甜品有生磨杏仁茶及是日甜品,本來都飽晒,其實都無打算叫,但老友話點都要試吓佢哋嘅自家製雪糕(桂花杞子雪糕、子薑雪糕),口味獨特,故此,就試了後者。子薑味十分突出而唔會太辛辣,有份醒神嘅感覺,不過,質感唔算軟滑。

大班樓果然有質素,雖然幾道菜都唔喺咩花巧嘢,但紮實嘅功夫,用料嘅堅持,喺可以食得到。最後,又喺老友做咗大斑,請我食依餐,要佢破費真喺唔好意思
