To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 相信手拍青瓜大家都食得多,但將一條青瓜,喺一條青瓜原條無斷開,而切成一片片,再盤成龍形,淨喺食咁巧手嘅「刀工」已值回票價啦

源自星洲嘅「撈起」呢度菜式唔使多介紹,一到過年前後就有唔少餐廳供應,好意頭嘛,撈到風生水起,美心嘅中菜系餐廳亦都大搞。將平常嘅雞絲粉皮搖身一變為「撈起」版,有心思喎!將雞絲、粉皮,仲有紫椰菜絲、青瓜絲、蘿蔔絲,加上濃香嘅芝麻醬,風味大不同,綿滑嘅雞絲增添咗爽口感,既香濃,卻又清新。

唔喺友人講,真喺唔知「東海龍皇」喺北京樓40年前嘅經典菜色,雕條龍不知幾多手工,雕得栩栩如生,賣相絕對喺可以先聲奪人。雖然話喺經典,但亦喺全新演繹登場,食材比以前用料更精、更鮮,以魚香醬炒大蝦球、鮮帶子、螺片,香辣惹味唔在講,啲料真喺精

北京菜好多人第一時間諗到嘅就喺北京填鴨,「北京樓」嘅填鴨頗有名氣,尤其星光行呢間店喺做唔少遊客生意,當晚目測亦見唔少外國客。所以,店家晌近門口處,特設一個開放式廚房,專切填鴨,睇住幾個師傅不停做,真喺難以想像一晚會賣出幾多隻
。題外話,依家仲喺好多人將北京填鴨同片皮鴨混為一談,前者喺皮連肉,後者顧名思義就喺淨皮,就正如啲人仲喺分唔清生炒骨同咕嚕肉嘅分別

既為鎮店菜式,水準唔需要點擔心,的確,鴨肉烤得香,可能嚴選鴨種,油脂都相對少,幾片鴨肉,加上青瓜條、京蔥、海鮮醬,嗰份美味確喺微妙。順帶一提,青瓜條及京蔥切出嚟嘅長短、大細都完全喺孖生兄弟咁,足見師傅嘅認真同專注。晌出面欣賞師傅片鴨嘅時間,已留意到其身後剩低好多鴨殼,所以,想二食可以考慮「鴨架湯」或「炒鴨崧」

晌昔日,喺完全無膽固醇憂慮呢個問題嘅,但依家人人都講健康,元蹄、東坡肉呢類肥膩嘢都少接觸。難得今晚大家都話膽固醇萬歲,小弟咁瘦底就更喺無有怕啦。「東坡肉」以一個古雅金鼎上枱,夠晒氣派。雖然,預期會肥肥哋,但真喺估唔到喺肥而不膩,師傅將層次分明嘅五花腩逼出油份,所以,入口既鬆化,又一啲都唔肥,加上味濃,好有驚喜

食到8:30pm,突出一陣起哄聲,原來每晚都會有大廚粉墨登場,即席表演製作北京拉麵,點樣三五吓手勢就將麵糰搓揉、拉延、折疊出細長的麵條。由於麵條晌中國有長壽嘅象徵,因此拉得越長,寓意健康越好
,所以,師傅嘅表演絕無迤做,而呢樣就最吸引到啲外國客。

最可惜喺是夜臨時有點事而早走,未能跟大家盡慶。新面貌嘅「北京樓」將傳統經典揉合創新意念,令傳統及摩登共冶一爐
。用料貫徹精益求精,但重新包裝後令賣相更精緻、吸晴,一定為客人帶嚟驚喜,相信成績會更上一層樓。
