Restaurant: La Parole

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 大家有無諗過品嚐色香味俱全法國美食嘅同時可以幫助有語言障礙嘅兒童?好榮幸朋友帶左我嚟到La Parole,係香港首間揉合左Fine Dining 同社會企業嘅餐廳。我上到嚟先知佢係社企,餐廳嘅收入扣除成本開支後全數撥款非牟利機構(庭恩兒童中心),幫助低收入家庭有語言障礙嘅小朋友。La Parole室內設計糅合典雅同現代時尚元素,見到中間個串Swarovski 水晶燈,已覺得自己著錯衫,長褲都無條走黎食法國菜!? 真係有點過意唔去….Menu有兩set選擇,分別有5道同6道菜,而店員為我地介紹嘅時候亦特別提及菜式都係即日按食材而決定,所以有機會每日都有少少改動。同朋友都點左6 course dinner set,前菜未上先上左幾件法國麵包。通常我食開法國餐廳嘅法包都係暖包凍牛油,呢度都唔例外。除左有盬牛油,仲有黑橄欖同蕃茄蒜蓉,一共三款配搭。相比之下,蕃茄蒜蓉最為突出,蒜香配上香脆嘅法包特別惹味!!Lobster, Crabmeat and Radish roll 龍蝦蟹肉卷中間係一絲絲嘅蟹肉,左右兩端放上龍蝦肉,賣相非常精緻。不論蝦肉蟹肉都非常彈牙鮮甜。另外,有黃色嘅新鮮芒果醬同白色嘅

Lobster, Crabmeat and Radish roll 龍蝦蟹肉卷中間係一絲絲嘅蟹肉,左右兩端放上龍蝦肉,賣相非常精緻。不論蝦肉蟹肉都非常彈牙鮮甜。另外,有黃色嘅新鮮芒果醬同白色嘅蛋黃醬用嚟調味,芒果醬食得出用新鮮芒果打碎,果味香,微甜,夠滑夠creamy,用黎配蝦蟹食特別鮮甜,正!

Roasted Suckling Pig 香烤乳豬,呢一份法式烤乳豬特別在佢配嘅三款醬汁。乳豬本身燒得皮脆肉嫩,用叉輕輕一吉豬皮都會卜卜裂開,本身豬肉味幾香,而且油脂唔多。醬汁方面顏色由淡到深分別係: 蜜桃川椒醬、蜜糖芥末醬、海鮮醬。海鮮醬唔多講,成日都有得食。蜜桃川椒醬蜜桃味非常濃郁,餐廳用嘅果醬都應該係用新鮮生果打溶,香甜中帶點川椒香味,但實質上唔會辣同麻,幾有趣。蜜糖芥末醬都好常見,但佢味道調得非常好,芥末味唔會太過嗆,反而係一種清新嘅甜為主。

Fresh Lobster Bisque 新鮮龍蝦湯,夠creamy夠厚身,但鮮味唔夠出而且偏鹹,調味可能重手左,少左龍蝦湯嘅甜。

Pan Fried Eel香煎白鱔魚都好常見,白鱔肉質超級彈牙,而且脂肪爽口,肥瘦適中,入口肥而不膩。醬汁方面係tomato, onion, leek sauce,因為白鱔本身夠鮮甜油脂香,我都無再配醬汁去試味。

Pan Fried Premium Charolais Tenderloin Flown香煎法國夏洛萊頂級牛柳,係法國頂級牛柳! 食落真係覺得佢頂級,medium rare嚟講佢熟成程度控制得好好,整塊都好均勻,切落去嘅手感都feel到肉質超嫩滑,入口肉汁非常多,牛肉味頗濃,覺得唔夠咸可以加少少墨魚汁岩盬,第一次見幾有趣,但我都係鍾意original嘅食法,大磨菇同長青豆就不過不失,普普通通。

Fillet of Monk Fish with Giant Razor Clams 鮟鱸魚柳配馬刀貝通常煮既都會比較鞋同鬆散,但鮟鱸魚肉吉落去比想像中挺身,食落魚味幾香,但口感少少乾,整體味道同質感似馬介休。反而馬刀貝超班,圓潤厚身嘅大小,入口肉質超級彈牙,味道濃郁而且非常鮮甜。完全搶過鮟鱸魚嘅戲份!

朋友覺得Leonidas Chocolate Cake 的確名符其實,果然係比利時嘅名物! 朱古力蛋糕入口香滑味濃,仲用左微微帶苦嘅dark chocolate做底,食落口嘅朱古力味非常有層次!
