To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 每年除了中秋的月餅,就是新年的糕點,都是各大小餐廳的戰場,在傳統的風味下,如何突出產品及品牌,的確考起不少大廚。今年翠亨村又有新攪作,就是「淮山蝦米糕」,切起來比起一般蘿蔔糕結實,反而令煎的時候更易掌控,細看成份,原來除了補氣的淮山,更有爽甜的沙葛,都是一些健康的食材,當然是少不了瑤柱、蝦米及金華火腿。稍為將糕厚切,再用中小火慢煎,令兩邊都變得微焦,香氣更盛,然後灑上附送的乾瑤柱絲。食落甜度比蘿蔔糕輕盈,但多了沙葛的清爽口感,不錯,值得一試。
