西澳洲龍蝦燒至八成熟,廚師將殼內的蝦膏,加上海膽、牛油炒香再淋上龍蝦肉上,彷彿為龍蝦披上一層閃耀華麗的外衣,所散發的香氣令人為之一振。

龍蝦厚肉彈牙,爽脆鮮甜,金黃色的蝦膏、海膽汁擔當著提鮮的重要角色,亦是 精髓所在,甘香鮮味。

南非活鮑魚配海苔忌廉汁
由於打風關,西班牙伊比利厚切豬未能空運直送,所以餐廳今日轉用南非孔雀鮑魚代替。
肉質柔軟飽滿的南非孔雀鮮活三頭鮑,在製作過程中以白酒提昇甜味,並加入少許調味料再鐵板煎香,切片後放在雞冠海藻上 , 顏色漂亮又富海洋氣息。
鮑魚肉厚有咬口,鮮味濃郁,火侯拿捏準確,肉質嫩滑,口感彈牙。而比較少吃到的鮑魚肝臟,雖然其貎不揚,郤是最濃味、燒得最甘香的部份,配搭自家調配的海苔忌廉汁,令甜度再提升。

香煎野菜

質優,新鮮的蕃薯、南瓜、大啡菇,經稍稍煎香 , 在微溫狀態下甜度更出眾, 甜甜蜜蜜, 令人難忘。

看似清湯一道 , 用料卻絶不馬虎 ,湯底用原塊厚身的鰹魚乾淆製 ,再加入新鮮加拿大北寄貝、 日本鮮菇 、水松、昆布,賣相吸引,充滿鰹魚香 ,味道清甜。

三文魚子海膽炒飯

高腳玻璃杯頂塞滿鮮甜回甘的海膽、紅紅橙橙的三文魚子, 非常吸睛 ,炒飯內容也挺豐富,有彈牙的八爪魚粒、元貝、蝦仁粒,再加入蔥花、雞蛋炒,飯粒分明,乾身,味道咸鮮並重 , 可謂有長相有內涵之作。
