嚟到厚福街嘅元祖沾麵專門店.裝修同我食過嘅拉麵店有啲分別,反而比較似食壽司之類嘅食店.不過就有面向牆嘅吧檯,如果一人個嚟都唔怕太尷尬.佢哋嘅沾麵同拉麵都有幾款口味揀,例如係赤蝦,龍蝦等等,當中芝士海膽系列最特別,另外仲有其他小食同飲品等等.同坊間嘅拉麵店一樣係用畫紙仔嘅方式叫嘢食,沾麵只可以揀麵量,湯拉麵就可以揀麵嘅軟硬度同粗幼度.檯上面放咗一排調味料,分別有黑胡椒,七味粉,昆布醋,餃子沾汁,白芝麻,其中黑胡椒同白芝麻嘅樽係即磨設計嘅.當眼位置仲貼咗食沾麵嘅整個流程,簡單易明.我試咗最基本嘅豚玉魚介沾麵,等咗陣店員就拎咗兩碗嘢嚟,呢碗係麵條,叉燒,半熟蛋,紫菜,青檸,大蔥同竹筍.另一碗就係用石鍋載住嘅魚介沾麵湯,個鍋嘅熱力令湯汁拎到嚟時仍然係沸騰狀態,氣泡同熱氣不斷冒出,咁樣就可以用嚟保持沾麵湯嘅溫度.而呢度嘅沾麵湯係用豬骨等熬煮,之後再加魚介而成,湯質落嚟濃稠,表面凝結咗層厚厚嘅油脂.先淺嚐一啖,有黏黏嘅口感,又有啲魚乾鮮香,用匙羹撈一撈,仲發現湯入面有粒豚角.睇咗餐牌,得知佢哋嘅沾麵麵條係採用日本小麥粉製成嘅粗麵,亦即係極太麵,比一般嘅較粗身.用筷子夾起再放晌沾麵湯浸一浸,麵質咀嚼

睇咗餐牌,得知佢哋嘅沾麵麵條係採用日本小麥粉製成嘅粗麵,亦即係極太麵,比一般嘅較粗身.用筷子夾起再放晌沾麵湯浸一浸,麵質咀嚼起嚟煙韌彈牙,冇唔討好嘅鹼水味,因為面積較大,所以亦好易掛湯.

叉燒表面油光閃閃,捲得扎實,肥肉同瘦肉嘅比例一半半,咬起嚟爽口而帶啲鬆化.

半熟蛋食起嚟軟滑,不過拎到嚟時蛋黃已呈半凝固唔夠流心.另外嘅紫菜就可以用嚟吸一吸湯內嘅油份,大蔥就可以提味,唧埋青檸汁就多咗份酸香兼可減膩感.

食完啲麵條之後就可以請店員加啲木魚湯,就可以飲晒成碗沾麵湯喇! 當晚附近啱啱好有人叫咗赤蝦沾麵,佢個碗傳嚟陣陣鮮香,下次再嚟嘅話試吓先.
