來自東京的多賀野,在日本榮獲東京米芝蓮推介及全日本拉麵大獎等殊榮,是日本的人氣過江龍。沙田分店是進註香港的第二間分店,人氣依然旺盛。被安排坐最入面的位置。座位設計很有心思,摩登中帶點復古。中間隔板可分開兩邊兩人位,拉開隔板便變成四人座位。粟國塩味拉麵($128)最近才發現自己的腸胃受不了油膩的豬骨白湯。多賀野除了招牌沾麵外,亦有鹽味及醬油湯麵可供選擇,正合我意。吃麵先喝湯,一股鰹魚及海塩的鮮甜一湧而至,但絲毫不鹹膩。清澈的湯汁沒有多餘的油份,感覺清爽淡麗。看了菜單簡介,湯汁是以雞,豚,鰹魚等優質食材淆製而成,怪不得其鮮甜非一般拉麵店可媲美。拉麵每日在店內新鮮製作,並非工場來貨之流。拉麵中夾雜有一小粒一小粒的小麥,從未見過這樣的拉麵!感覺比一般拉麵有更多纖維,更健康之餘,麵質亦比一般的更柔韌和彈牙,即使放湯久了也不會變淋。配料方面也絕不欺場!有兩片大大塊的叉燒,叉燒做到肥瘦勻稱,有入口即化之感,肉質軟滑之餘亦不會過於油膩。溏心蛋富有醬油香,蛋黃呈半熟流心狀態,把蛋汁與拉麵拌勻同吃,份外滋味。另加入了不少洋蔥碎及蔥碎,有助僻腥提鮮。極上蟹皇沾麵($188)揉合多種「蟹」的元素在拉麵當中,是

用來沾麵的蟹湯呈金黃色,每一滴都是魚湯及蟹膏蟹肉的精華,更可以吃到一梳梳的蟹肉在湯汁裡頭。與極度掛湯的拉麵同吃,每一啖都是無比的鮮甜,而且口感濃稠,入口黏黏的。

用小火爐溫熱著沾麵的湯汁,令湯汁保持在六十度左右。這樣便不怕蟹湯變腥或凝固了一塊塊的油脂,相當貼心。

還嫌不夠鮮甜?拉麵還配有一小碟蟹籽蟹肉及蟹膏。蟹肉是一梳梳的,口感爽甜不霉。呈灰色的蟹膏令我想起韓式的蟹膏醬,
加上這兩樣配料拌沾麵同吃,鮮味triple up.

還要配上一大隻炸軟殼蟹,蟹殼炸得卜卜脆。蟹肉及蟹膏軟滑,甘甜無腥,一整隻連殼食,吃罷相當滿足。

圓滾滾的炸丸子,外層炸得金黃香脆,內裡包裹著鮮嫩多汁的免治和牛以及滿滿的芝士,芝士更有拉絲的效果,惹味又邪惡。
