斑蘭葉是馬來西亞常用的香料,葉片有著特別的淡雅芋香,而斑蘭葉獨特的香味用來配搭雞肉可以增添清甜感,是天然的綠色香料。
這道菜正好用上了斑蘭葉的香味,使雞肉特別清新香口,一點不覺得油膩感,再配上特制辣椒醬,味道更添層次,味覺大滿足。

馬來肉骨茶$78
我比較喜歡馬來西亞口味的肉骨茶,藥材味較濃,這個馬來肉骨茶正合我心意,一個不锈鋼鑊盛載著,下面是有酒精點著火助熱,侍應會用茶壺載著湯過來添加湯底,飲完又可以再添。這次肉骨茶用上了豬手,薄薄的一片放落了整個鑊,雖然脂肪頗多,豬皮卻彈牙,豬肉也很腍很入味。再試試個湯底,藥材味不算重,反而醬油味稍濃,如果藥材味濃一點會更好。
