壹玖叁伍,距離貳零壹捌已超過半世紀,中環最新開的新派川菜餐廳以壹玖叁伍之名,「川」越過來貳零壹捌,為我們這羣川菜食饕帶來不一樣的川式風味與風格。這裡的景觀開揚,而且環境寬敞,與急速的中環形成對比,帶來一份恬靜。中式的花瓶,百子櫃與屏風,跟西式的椅桌並沒有違和感,反而古典中帶時尚。我們四個人七嘴八舌商討吃甚麼好,實在太多菜式想吃了,不過沒可能全都點吧,唯有用投票方式決定,小數服從多數。川菜必吃涼菜一定是酸辣青瓜木耳,青瓜,木耳口感爽脆,醃得相當入味,酸辣滋味不斷地在我們的舌尖上打轉。香酥軟枕炸得不油膩,一口咬下還能聽到外層「咔嚓」的酥脆聲響,內裡層層疊疊的腐皮柔嫩無比,,正如其名香酥軟枕,簡單的美味。想不到這裡的口水雞已經先撕好一口一條的好入口,混搭花生,香蒜,辣椒得配料,形成漂亮的手撕雞小山丘。香辣醬汁滲透雞肉中,喚起雞肉的深層美味,更顯手撕雞鮮嫩肉質。麻辣鮑魚仔沾上一層薄薄的炸粉,炸得金黃香酥,油炸時間是關鍵,多一分則太老,少一分則不熟,必須要做到熟度恰當,嫩度也要適中,才能炸出恰到好處。鮑魚酥酥的外表透著麻辣的香氣,賦予彈牙的鮑魚熱情的個性。魚香茄子非常開胃,切法細長,香滑油亮,入
