To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

不知不覺2013已經過了半年,踏入炎熱的夏天,又到了吃池魚的時候。是日得到公關方面的邀請,來試試新推出的一系列池魚和鰝縿刺身料理。從前吃壽司偶然也會吃到池魚,但縞參還真的是第一次吃。首先送上前菜鏗魚沙律,鏗魚通常會用來做木魚或者製作湯底,而這個切成一片片的鏗魚刺身伴以蔥花和炸蒜粒,加上帶酸而清爽的沙律汁,本來應該是很好的配搭,但隱約吃到了一丁點腥味,說到底應該是我比較少吃魚鮮所以不太接受。其中的焦點縞縿先來三吃,會吃魚不同的部位:薄切縞縿刺身、縞縿背刺身和縞縿腩刺身,其實各個部位的分別不算十分大,其中以薄切最好吃,肉質爽脆,伴吃的柚子酸汁更能帶出魚的鮮味。再來池魚三吃。分別是厚切池魚刺身、薄切池魚伴香蒜麵豉醬和薑蔥池魚細切。作為夏天時令當造的魚鮮,池魚新鮮肥美,魚肉都帶著適量的油香。三吃之中我最欣賞的是薄切池魚伴香蒜麵豉醬,因為師傅把伴著吃的柚子酸汁做成一粒粒啫喱,很有趣很有創意。將白麵豉醬 、炸蒜粒和柚子酸汁啫喱一同與池魚放進嘴裡,可以吃得到幾種味道的層次。另外薑蔥池魚細切也不錯,薑蔥味雖然濃一點但不會蓋過了魚味。鹽燒池魚。燒過的池魚油份不算多,所以不是很嫩滑的那種,較像燒秋刀魚那種

鹽燒池魚。燒過的池魚油份不算多,所以不是很嫩滑的那種,較像燒秋刀魚那種魚味濃郁的做法,同樣都是配以酸醋汁吃,看來酸醋汁在這個夏日是少不了的佐料啊。

炸物併盤。吉列廣島蠔,穴子天婦羅和炸烏賊魚餅。廣島蜳的炸漿不算太厚,炸得剛好,裡面的蠔依然juicy。穴子有點薄,所以不太吃得到魚肉,只吃到甜甜的味道。炸烏賊魚餅也不賴,有粒粒墨魚,口感彈牙。這裡始終是主打刺身的地方,所以做到這個水準的炸物已經算不錯。

壽司併盤。除了剛才吃到的池魚和縞參壽司外,還有北海道海膽。北海道海膽鮮甜度爆燈,可以吃得出日本海膽獨有的味道,好吃之餘份量又夠,好滿足呢!另外火炙左口魚邊,油脂豐腴,用火燒過的油份都迫了出來,真的入口即化,但感覺很邪惡呢~

整體食物仍然是千兩的一貫水準,相比起貴價日式料理店,這裡可以用較親民的價錢,吃到日本當造的刺身,實在是食客之福。
