約一年前同朋友已經拜訪過佢地食lunch, 知道佢地餐廳雖小但食物質素非常好,所以決定再次約朋友再訪晚市食豪啲!嚟得Oyster Cove 一定要食蠔!今次就叫咗六款蠔再拼馬糞海膽嘅海鮮盤,而食蠔當然要配返由Bourgogne Chablis 嘅白酒啦!Louis Max Chablis Saint Jean 2020食蠔叫呢枝由Bourgogne Chablis 出產嘅Chardonnay 係定律嚟架! 全因為Chablis 嘅土壤底層蘊含住好多貝殼類嘅化石,所以喺度出產嘅白酒會有好豐富嘅礦物香氣,Pairing 返食蠔會令酒味同蠔味都推向極致! 酒體本身偏向light body, 低甜度中高酸度,果香呈多種青水果果香(梨/青蘋果) 而且帶有陣陣嘅檸檬香,口感非常清新。Tia Maraa Pearl蠔偏淡味,味道清新,iron 味重,配白酒會令酒變甜,果香爆出。Speciales Lambert no.2蠔偏淡味,蘊含低調嘅鹹味,配白酒後會爆甜,令清香青蘋果加梨香味加重,而且仲會引發密瓜嘅香甜味道。Krystale no.2味道偏鹹,重iron味,配Chablis 會令酒味更清香,仲

Louis Max Chablis Saint Jean 2020
食蠔叫呢枝由Bourgogne Chablis 出產嘅Chardonnay 係定律嚟架! 全因為Chablis 嘅土壤底層蘊含住好多貝殼類嘅化石,所以喺度出產嘅白酒會有好豐富嘅礦物香氣,Pairing 返食蠔會令酒味同蠔味都推向極致! 酒體本身偏向light body, 低甜度中高酸度,果香呈多種青水果果香(梨/青蘋果) 而且帶有陣陣嘅檸檬香,口感非常清新。

較creamy嘅口感, 比較低鹹度, iron 味偏中高,配Chablis 味道口中味道淡甜淡香,密瓜香甜感十足。

Gillardeau no.0
六款當中最濃味,雖然係最細隻但味道好厚,配Chablis 會爆出西瓜香甜味,非常特別!

韓國馬糞海膽
估唔韓國嘅海膽都拍得上日本出產嘅感覺,甜得嚟一啲都唔會覺得腥,而且Creamy口感勁度十足!

清酒蒜蓉煮活蜆湯
呢客蜆湯集西芹同陣陣黑椒嘅幽香,而且仲有住牛油香草味,蜆肉大大隻仲非常鮮甜,清酒味唔會太濃剛剛好

龍蝦忌廉意粉
好Creamy 嘅意粉,而且龍蝦肉,龍蝦膏都非常足料,奶油香味撲鼻但一啲都唔膩。
