今次新年反傳統,唔食西餐,去咗天后食潮式私房菜,地方雖小,感覺更加溫馨。潮味居 是坤厨工作室,位置於天后木星街,是我的中產朋友帶我來見識一下。私房菜要預先訂枱,寫好菜單,為了迎接美好的2025,我們吃了一個十全十美 的潮州晚宴。 椒鹽脆鮮魷、麻香鹹海蜇、酒香醉鴨舌 充滿仙氣的美味前菜,滿滿的儀式感,喜歡吃到酥脆的鮮魷魚,很香麻油味的青瓜海蜇,鴨舌食落有很芳香的酒味。滷水鵝片拼鵝腸。腎吃得出風味,多種香料和醬油慢煮的湯底調味,食材吸收濃郁的味道。鵝片嫩滑,肉質緊實,搭配滷水的香氣,味道鮮美。加上鵝肉本身帶有淡淡的油脂,滷水後味道更加濃郁,不會過於油膩。鵝腸脆嫩,帶有嚼勁,散發出滷水的鮮香。潮式芋茸酥炸生蠔大大隻好肥美的生蠔,混合芋茸一起炸,外皮非常酥脆,生蠔的鮮味亦夠突出,熱辣辣,好滋味!潮州紅燒花膠魚翅招牌魚翅,賣相吸引,展現了潮州料理的精緻與講究。花膠豐富的膠原蛋白,口感滑嫩。魚翅經過精心潮州紅燒慢燉,有韌性和嚼勁,用筷子夾起打卡一流。紅燒的醬汁香氣四溢,鹹香適中,提升魚翅和花膠的鮮味,每一口都充滿層次感,華麗美味又滋補。鹹菜梅子煮馬友魚我少吃魚,朋友們吃得讚不絕口。家鄉京葱羊腩煲
