7月15日。家人是日忙碌,未有準備晚餐,往太古城覓食去。王家沙的餐房清雅大方。餐廳提供㸃餐紙以便客人自選菜餚。是夜享用了:豆腐馬蘭頭($48)。馬蘭頭是江南特產。很久前到蘇州旅行,吃過清炒的馬蘭頭,那陣帶腥的草青味,濃烈得難以嚥下。换一個烹調方式,涼拌令馬蘭頭現出天壤之别,不得不刮目相看。菜葉剁碎後加入小粒的豆腐,再拌和麻油、鹽、糖。簡單的調味神乎其技地將草腥味徹底中和,變得清鮮爽口,別具一格的美味,令我愛不釋口。上海話梅骨($98)。話梅骨外脆内嫩,話梅味濃郁,酸甜可口,生津、醒胃,下飯適合不過。上海粗炒($68)。味道香濃亦拌以恰量的菜、肉。可惜麵條未煮透,中間仍然有㸃硬,大概‪一時‬失手吧!高力豆沙球($42)。口感及味道都不俗,本身不太甜,洒上稍為少甜的糖霜,沒有丁点腻。不少上海館子為遷就本地人口味而酌量調味,使餸菜變得清淡。我家是上海人,對淡口的家鄉菜,難免若有所失。以味道為首要條件,王家沙符合濃油赤醬的要求,是切切實實的本幫上海菜。
