阿林💬:今年生日在禁晚市中渡過,唯有吃一頓豐富的午膳以作彌補。來到ICC 101樓的Odyssée,飽覽西九和維港景色後,毫不猶豫選擇了包含六道菜的Tasting Menu ($780)。打頭陣是包含三個部分的小吃。店員建議先吃Celeriac & Pear,餡料包覆在春卷皮中,芹菜味頗重,後由香梨緩和,再由開心果補充crunchy口感。Pork & Truffle組合在餅乾之上,有著沉實的黑松露味道。Potato & Salmon薯蓉打至幼滑,柚子在三文魚籽的鹹香中帶出酸度。第二道菜是Duck Foie Gras,鴨肝配上鰻魚,各自風味濃厚卻不會奪去彼此風頭,是滿有潛力的配搭。蘋果醬偏酸解膩,再配合榛子的nutty,味道層次豐富,可惜執行上未臻完善。鴨肝質感硬得就如剛從雪櫃取出未解凍,口感偏差得不能忽視。盤子上其中一顆榛子是苦的,似乎在挑選食材上稍為大意。幸好接着迎來了最好的。Perigord Black Truffle外表平凡,卻富有內涵。在多士裡面,是看似一磚豆腐的北海道帶子蓉。多士薄脆,帶子蓉又厚又滑,兩者比例剛好,大感滿足。黑松露輕輕提昇味道,卻同時造成強烈色彩對比,刺激著味

Kristal Gold Caviar的呈現方式同樣有趣。魚子醬下隱藏著一條條的墨魚,伴隨著青綠色的西洋菜醬汁。進食過程像在吃扁意粉,不過口感完全不同,味道也不一樣,如同在挑戰感官的協調性。

甜品是Black Forest,把黑森林蛋糕的元素分解再重組。立方體朱古力包覆了櫻桃pate、海綿蛋糕和忌廉,旁邊有櫻桃雪芭和酒釀櫻桃。整體酒味頗重,同時感受到櫻桃的多樣變化,遺憾的是失卻了黑森林蛋糕layering的特色。

以為完結之際,店員捧來一個「蛋糕」,實是音樂盒,木製公仔不停氹氹轉,上面放了Jasmine Cannoli和Tomato with Basil,是滿特別的生日饋贈。

最後分享一段插曲。話說隨餐包附上的是煙燻牛油,我嚐出燻料是蘋果木,但不百分百肯定,故向一位穿西裝貌似經理的店員查詢。他回答:「就係煙燻。」見他答非所問,我把問題重覆一遍,並闡釋得更清楚。他再答:「呢個係煙燻⋯」旁邊的侍應見他支吾以對,立刻代為解答。

還有第二件事。話說鄰桌客人的進食節奏較慢,我們差不多吃完甜品時他們仍在吃主菜,「西裝經理」希望他們加速,而他用的方法是走過去直接叫他們「要食快少少」(真實對白)。Well⋯差點令我忘記這一頓是千多元的午餐。

個別店員的服務確是不敢恭維,但論食物質素,創意值回票價。
