曾到訪山西晉城2次,那是明清時期古城,山西地貧,種不出,牧不來,只能經商,久之有了晉商的名號。山西菜就是缺乏資源下發展出來。刀削麵可算是山西特產,甚是懷念。香港少有山西菜餐廳。生記是其一,多年前發現,初時只有一家,現增多2間分店。人說分店多,味道差,看來此店走不出這定律。現在的手撕雞刀削麵,減去往日風味,湯淡,中辣不辣,麵削得厚而無味,手撕雞亦如白焯。反而,雞翼撈刀削麵還好,撈汁有味,但不搶風頭,雞翼炸得好,外脆內熟。送餐飲,但量少。另有口水雞,不辣不辣,口中嚐甜,懷疑下了砂糖。幾許山西風情,只能回味。*座位改成無椅背,坐得辛苦**地下痴立立
