Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 粵菜在香港有著祟高的位置,遍佈廣泛,由平民街邊至高級酒店皆有著它的影子,可是當中有些手功複雜的懷舊菜式慢慢開始式微,要吃都需要費時尋找,所以每當有什麼中菜廳推廣著懷舊菜式時,都會第一時間去拜訪一下。今次所到之處,店舖眾多,就是美心中菜的中堅份子 - 翠園。 他們正在推廣著老點家老菜,由懷舊點心至甜品也一應俱全。就先由點心說起,從前,這款懷舊灌湯餃就應是如此模樣,以皮包著餡料及湯汁,可以一起品嚐兩者,不會流失一點一滴的精華,甚考師父的功力。可是,現在卻把餃放入湯中,不但失去了餃皮的煙韌,還令味道不夠集中,所以這個做得非常之好,餡料又夠豐富,值得一試。 豬肚雞燒賣及滑雞球大包同樣令人讚嘆,前者以豬肚包著雞來蒸,豬肚吸了雞油的香,而雞肉又因被豬肚包著,非常嫩滑,十分好吃;後者則份量十足之餘,用料都很豐富,吃大包時最喜歡尋寶,看看究竟加入了什麼材料,款式真是十分之多,加上鬆軟的外皮,叫人欣喜。 還有一款千層腐皮夾,將豬肉及蝦膠等釀入一層又一層的腐皮內,層層相疊達十多層,功夫之複雜實在少見,小弟年資還少,在此之前實在沒有聽過此道點心。 接著來的幾道頭盤都相當考功夫,首先是西關大少桂花扎,

接著來的幾道頭盤都相當考功夫,首先是西關大少桂花扎,以瘦肉及冰肉一層捲一層地潤腸及蛋黃包起,以蜜汁來燒,送給客人前才切成薄片,入口香甜味美。這個看似極為肥膩的食物,竟然是油而不膩,蜜香出眾,配合蛋黃及潤腸的油香,沒有不吃的理由。

相對地,鳳城鍋貼蝦多士會清淡一點,不過卻多了一分香脆感,原隻大蝦舖在多士上炸,金黃香脆,不油不膩,面上少許的金腿絲卻帶來了提味的效果。

來一道極考師父功力的公館高湯鴿吞燕,看見此道手功菜時,大家也默不作聲地吃,只能以咀嚼的聲音回應師父。要知道乳鴿個子不大,還要去骨而不弄破鴿皮,再將大量的燕窩及火腿蓉塞入鴿內,考手功之作呢。

接著來的一道鮮果沙律煙鯧魚,對此一點也不陌生,曾為了吃這道而到過不少地方,可是隨著大鷹鯧的減少,吃到的機會也越來越少,難得的是今次吃到,那種肉質嫩滑,帶上少許果香咸鮮,伴以鮮果沙律的吃法,勾起了不少回憶。

金盞碧綠鴛鴦魷真的很久沒有見過,但如果那個脆筒換上由炸鳥巢,相信印象會更為深刻。可能很多人都不知道什麼是鴛鴦魷,其實是新鮮的魷魚及土魷,質感各異,加上一濃一淡,令人著迷。

來到另一重頭戲,就是摩登肝醬片皮雞二食,第一食當然就是片皮雞吃法,在脆米餅上放上肝醬、青瓜及片皮雞一起進食。小弟雖然覺美味,但我還是喜歡以片皮鴨的方式進食會更喜歡。另一食就是菜盞炒雞崧,將惹味的雞崧放在爽脆的生菜片上,真的很滋味。

最後來到甜品時間,有梳乎厘燉蛋及脆皮倫教糕,兩者都令人喜出望外,特別是前者,從沒想過可以將兩極端的甜品放在一起而又不失兩者的特性,有著輕盈的蛋白泡,也有著嫩滑的薑汁燉蛋,而且甜度適中,真是一絕。另一款倫教糕即是白糖糕,但卻在表面加上一層甜薄罉皮,經香煎後,變得金黃香脆,與內裡煙煙韌韌的感覺不同,是一種令人上隱的味道。
