八寸.八寸風鵝肝
改良自潮式凍鵝肝的想法,用料理酒醃一日,闢除腥味,蒸完之後再燒,做成'1外層帶少許焦香,而另一碟是煮付助子,而店方亦會提供一杯自家釀製的「八寸」清酒,很醇的米香,容易入口,大家最好齊齊祝賀對方。

其實是明太子,只是用鹽醃完再蒸,質感略為結實。

酢滇赤海參
是季節性食材,咬落非常爽身,原來是用醬油煮過,薄切後再淋上醋汁,但醋味實在太強烈,個人認為要適量減少。

櫻蝦湯
即場澆落放了豆腐及櫻花蝦的碗內,很香很濃郁的蝦味,略嫌豆腐是凍的,用熱湯淋落去,湯底即時變暖了。
