呢間野真係好適合慶祝生日,同朋友睇完餐牌,揀咗個秋田二人前套餐share,季節沙律,沙律上面嘅係水晶海草同蓮芋,醬汁係柚子醋,水晶海草脆口,沙律整體味道酸酸甜甜,開胃菜,師傅準備食材,龍蝦勁新鮮,會郁,仲係好生猛,雞泡魚乾,魚籽鵝肝蒸蛋,魚籽係烏魚籽,口感脆卜卜,滑嫰嘅蒸蛋有好濃郁嘅鵝肝味,鮮活龍蝦半隻,師傅將龍蝦頭內的龍蝦膏挖出嚟煮醬汁,再將龍蝦肉切件,煎到咁上下,再淋上頭先用龍蝦膏煮出黎嘅醬汁(有牛油﹑甜豉油同sake)龍蝦肉彈牙,味道鮮美,季節時令海鮮(蒜芯配螺片),日本蒜芯清脆爽甜,螺片爽脆,份量不少,因為係刺身級別嘅螺片,炒幾下就可以上碟,如果煮得太耐就會太韌,原隻鮮活南非鮑魚,昆布碎配鮑魚,昆布碎喺鐵板上,畀師傅炒香之後,會放喺鮑魚下面墊底,做法:師傅會將一塊大昆布放喺鮑魚上面,上面再灑上海鹽&白酒,跟住就會蓋上蓋,師傅好細心咁切走曬鮑魚內臟同鮑魚咀,最後灑上少少胡椒粉調味,同淋上師父自己煮嘅忌廉海苔汁,鮑魚大隻厚肉,彈牙有咬口,鮮甜有鮑魚味,昆布碎配忌廉海苔汁亦很夾,朋友和我都吃清光,香煎頂級鵝肝,黑色係黑醋醬,點鵝肝用,同鵝肝一齊食冇咁膩,鵝肝上面仲有黑魚子同埋金箔喺到
