為慶祝做完大project,食返餐omakase慶祝吓先!揀咗成日經過門口,但從來未嚟過嘅旭。今晚點 萩 Hagi ($1680)魚肉沙律卷先食前菜,有啲似越南嘅米紙,入面包住菜及魚肉,再加微酸嘅汁,好開胃七味燒魷魚鬚配水雲姜蓉魷魚鬚好煙韌,微辣不過頂得順!旁邊嘅水雲即係日本髮菜,酸酸哋中和返啲辣北海道毛蟹 係時令嘅北海道毛蟹,下面長嗰條係大髀肉,肉質一絲絲仲有好濃郁海水味;上面啲蟹肉撈咗蟹膏,口感幼滑北海道嚮螺 後面嘅係背脊肉,就咁點鹽及Wasabi就OK。我覺得點咗wasabi啲鮮味更突出。口感爽脆,𡁻到索索聲北海道白粟米超級鮮甜!!!細切沙甸魚加咗自家製漬物及薑蔥,豉油唔會好鹹,愈𡁻愈有魚味北海道白象拔蚌比響螺更爽口,又係加鹽wasabi就OK,鮮味更勁野生藍旗吞拿大拖羅大廚盡量切晒啲筋,易食啲。好有咬口感,雖然係大拖羅,但一啲都唔會感覺成口油鹽燒日本太刀魚 肉質細膩,魚皮香脆新鮮出爐焗蛋原來要成2個幾鐘預備㗎,所以唔係間間餐廳都肯做。入面仲有魚肉蝦肉,食落好似蛋糕咁,好鍾意! 左口魚壽司加咗柚子,魚肉結實櫻花木碎煙燻平政魚好得意,第一啖先有濃郁煙燻味,之後啲魚味先出野生銀鱈魚B
