To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 朋友約去食潮州嘢我第一個反應飄浮係腦海會係掛係櫥窗嘅橙色嘅大墨魚、啡色嘅滷水鵝、紅色嘅大花蟹,印象會比較地痞。不過今次我哋一班人來左Moko廣場新開嘅百樂潮州餐廳,感覺上高檔次,裝潢精美,估唔到d野食都好「潮」!。酸甜海蜇 甜甜酸酸好開胃,海蜇條爽脆無比,夾雜左d梨條、紅蘿蔔絲、青瓜絲,清新醒神,係炎夏前菜之首選。 滷水拼盤(鵝肝、豬蹄跟、掌翼、豆腐)鵝肝好稔,一啲羶同渣都冇,好似腐乳咁滑豬排跟充滿骨膠原,食落有咬口,帶少少肉,四款之中最正豆腐索晒滷水汁嘅精華,入味,第二最愛碧綠川椒雞球雞球炒到好香,充滿川椒,蔥頭嘅味道,最好味其實係伴菜嘅炸紫蘇葉。方魚紹菜魚丸煲方魚係嗰啲曬乾左嘅魚仔,經過上湯既浸泡,變稔稔地有咬勁,紹菜索晒上湯嘅味道,清甜,魚丸彈彈。潮陽炸雙棗蝦棗呈圓形,蟹棗呈方形鍾意食蝦蟹嘅朋友,又懶剝殻,最好就係食雙棗,因為啖啖肉,師傅剝晒肉攞嚟炸。我就鍾意食蝦棗多啲,因為蝦棗啲較為爽口彈牙。蟹棗就食到一絲絲嘅蟹肉,要沾酸甜醬吊其鮮味。滷水鵝片拼豆腐滷水鵝嫩滑,側邊個個肥糕同皮已經滷到爽左,因為d油脂出曬黎,食起來好香。香煎蠔仔烙用左鴨蛋煎特別香,而且呢度唔係炸既,係煎,食落唔

花蟹斤兩十足,足足有2斤重。白烚花蟹食係食蟹既鮮味,當然選料十分緊要,而呢隻蟹鮮甜非常,肉質厚而實,啖啖肉,鮮味在脷尖爆發。

聽同事講今日正值時節轉之日子,要補補。山珍海味未必有足夠既銀兩去買,但都要叫個豬肚湯驅驅寒。

潮州菜必點甜品,最考師傅功夫,因為要將糖煮到溶曬,再加入炸好既芋條,快手將芋條完全沾滿糖漿,跟住外層成香脆糖衣。手要快同均勻,咁先做到糖衣厚度平均,而且薄薄,要襯熱死呀,聞到係陣陣芋香。

好開心唔洗地痞去d舊店食正宗潮洲菜,都可以食得正宗好味
