Restaurant: Chong Fat Chiu Chow Restaurant

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 4月23號(星期日)星期六晚睇完個把幾火煮食比賽節目,兼且無乜胃口,個心其實想食辣嘢,不過媽咪想去創發食飯想咗成個禮拜,於是同爸爸三人一於去創發食午飯。十二點幾,一推門已經有人招呼:「老細幾位?」四圍望下,雖不至人頭湧湧,但圍圍都有人坐或者留咗座。近大門對正鹵水檔有位,啱哂!肚雖窄但至少眼可闊。睇過各位的食評,知道有道煙燻鴨,但唔知應該叫半隻定例牌。「例牌就夠啦。」落單的大叔如是說。再點咸菜豬肚湯及鵝腸,並由大叔拍板叫個潮州四寶菜。「夠食啦三個人。」大叔收筆。「多謝老細。煙燻鴨要等十零分鐘。」湯先來。老媽舀了-碗:「好味!」骨碌骨碌地喝。輪到阿爸拎起湯勺。屋企附近係有檔打冷,但近年覺得菜薄咗用料差咗,已經少去。(但其實人家做街坊生意,呢幾年都無乜起價,可以點?)我眼定定望住個湯,等。終於到我啦,〔大喜〕,點知側邊忽然多咗隻手伸入嚟……同我爭!?啊,唔係,係大叔上菜。「鵝腸要趁熱食,食完先飲湯啦。」見呢度d鵝腸比食開d切得寬,又肥美,相都唔影,轉抓(勺)為拿(筷子)。嗯,好脆口,好甘香──係肥,但點咗醋酸酸地唔覺膩。鵝腸食完,返轉頭飲湯。好味就唔駛講,飲完仲無先前咁飽滯。過咗一陣嚟四寶菜

鵝腸食完,返轉頭飲湯。好味就唔駛講,飲完仲無先前咁飽滯。過咗一陣嚟四寶菜,原來係炆黃芽白、金針、冬菇、蝦乾等等,我未食過,但覺啱胃口,尤其係d金針。

睇住伙計們抬箱琵琶蝦入廚房,阿姐拎碟石榴X行過,婆婆捧完一盤又一盤蒸韮菜粿出來,咦隔離叫凍龍蝦噃,嘩好大盤栗子炆豬手……過一陣,大叔第二次主動走嚟話燻鴨仲整緊。(唔緊要,我未睇夠。呵呵。)然後忽然放低隻碟:「兩隻蒸韮菜粿,食住先啦。」粿皮又白又滑,餡韮菜味濃帶汁,好味。(仲有一味,但依家差唔多飽,點算?)

燻鴨終於上枱。皮,脂,肉分明,層皮尤其靚,煙燻味濃但鹹味適中,肉有嚼頭但非「柴皮」。又係好味。(好彩係創發,唔係就成篇鱔稿咁。)清碟。

最後要讚大叔同婆婆的服務,尤其佩服大叔的判斷──例如識得放低兩隻而唔係三隻韮菜粿。(鼓掌)
