祥發的瑞士汁雞脾, 在北角應該無人不識, 但我還是第一次品嚐. 說到雞脾本身, 瑞士汁味道和一般餐廳吃到的, 沒有太大分別, 都是以甜味為主軸. 值得表揚的, 就是煮得夠入味, 無論是雞皮以及雞肉深處, 也滲入了瑞士汁. 肉質軟彈適中, 沒有令人討厭的雪藏味, 也沒有內裏依然滲着血水的半生熟, 做法工整, 熟悉的味道不會令人抗拒.除了瑞士汁雞髀外, 它的常餐選擇相當豐富, 有飯到麵包再到麵及小食也包羅萬有, 配搭起來相當複雜. 值得推介的事芝士汁炒蛋飯和豬扒/沙嗲牛肉包, 前者芝士味香濃, 配合嫩滑的炒蛋和較乾身的飯底, 就算沒有其他肉類也夠吸引; 後者麵包煎香過, 豬扒和沙嗲牛肉份量夠多, 兩者肉質同樣嫩滑, 沙嗲醬花生粒明顯, 也有炒製過的香味, 並沒有揸流攤. 反而豬潤麵就不太推薦, 雖然品嚐到酒香, 但豬膶口感過乾, 質感過韌, 似乎處理得不如雞髀般出色.Cheng Fat is famous for her soy sauce drumstick. Cheng Fat is famous for her soy sauce drumstick. The taste of soy sauce is sweet in dominance. The drumstick is well cooked without any blood and soy sauce is diffused into the meat. The dinner set with rice/snack/noodles is not expensive and you can be full. The cheese and egg rice is very nice with taste and texture. The satay beef bun is nice as well as the satay sauce is self prepared. However the pig liver is too dry and rough that I will not recommend.
