Enishi 是日語,中文是緣份、英文是 Fate 的意思,也許在表達三位主廚惺惺相惜同創業。 Enishi 做的是摩登鐵板燒,創意菜式中有著中、西、日揉合的影子。 一頓8道菜的廚師發辦,擺盤認真,色澤鮮明,烹調恰到好處,菜單上只有食材單字名稱,如何烹調呢?充滿驚喜! 開始前先介紹食材,日式鐵板燒的一般做法,目睹美食之初型,令人更是期待! 我尤其欣賞首三款,組合富心思細意。 SASHIMI首先是 Hamachi Sashimi,以乳酪替油甘魚沐浴,酸郁與刺身鮮味形成鮮明對比,再加上青蘋果絲及香草點綴,口感清新。 刺身上的青色點綴是高湯蓉,以燉過的海帶、鰹魚片及青蔥油混合製成,令味道更加豐富。對我來說,反而有少許南美秘魯菜之影子。 CORN繼而是 CORN 粟米天婦羅, 以 brown butter 焦糖牛油處理過,超薄的炸漿,薄到機乎睇唔到,絕對有專門名店的水準,咬到粟米粒粒脆卜卜,充滿牛油香,好吃至不得了口,令我一吃愛上。 原來秘訣是以梳打水代替啤酒混合炸漿,使其酥鬆香口,炸漿極薄,吃起來輕盈不膩。 HARUMAKISpring Roll 自製春卷,高山縣白蝦作及菠菜餡料,配茼萵青醬
