訪問過前輩們食後感,慢煮方式主理的小牛頰肉,本份其肉質份外鬆化軟腍,肉味又超級香濃,加入原條小甘荀等蔬菜同煮增加清甜味,嗜牛者應可吃到牛扒以外的另類滋味,別忘了以酥皮點些汁醬同吃,又或是面頭的香草牛骨髓是也極致美味啊。

推介菜式首選這客63日熟成帶骨肉眼扒,筆者沒有吃,只聽到大家意見全屬正面,份量巨大充滿烤香風味的牛扒來自美國Nebraska,貪其肉質嫩滑肉香更濃,採用熟成63日方法調製令牛肉膠原組織及肌肉纖維幾乎全數分解、牛肉嫩度相對較高和肉汁更為豐盈。

對牛不熱衷的人們亦有這個帶骨黑豚扒作選擇,足有一寸厚的它,外型好不誇張,面層舖滿小茴籽後烤焗,好處是鎖緊肉汁,用上頂級(6 point)優質貨色,只需簡單煮法卻得出肉嫩多汁的效果,點些自家清甜蘋果蓉,即時將減低肉類油膩。

當日發現豚扒近外圍部份脂肪甚多,中心位置肉質細嫩無渣,但豬扒應有的甘香肉味就較薄弱,未如想像中濃郁,到底是茴香碎香氣太霸氣或是其他原因?

這一項絕對讓筆者神魂癲倒,大概是它賜予本人一種豐盛而又不飽滯的錯覺? 哈哈。

波士頓龍蝦是啖啖肉的鮮嫩滋味、帶子外層烤得焦黃,多汁甜美、 鱸魚油潤甘香,充滿魚油的魚皮是精粹所在,而罕有的西班牙紅皇帝蝦,外型巨碩好比龍蝦令我驚喜,蝦味十分濃郁、肉質紮實,烤製方式更能將海鮮味道發揮極至,是不可多得的海鮮雜會。
