I'm a really big fan of Dry 撈麫 or bearly dipped in broth noodles (soba/udon style) - its perhaps slightly more satisfying than noodles permanently submerged in soup. 大地魚鬆+黑栢頁撈麫:
When this arrived, it was quite aromatic! However I was surprised that the Fish Floss was sprinkled on top of the Beef Tripes, making them stick together like fleas in dog hair, which means every mouthful always had to have tripe + floss + noodles. The tripes were strangely half black and half white, not naturally brown nor dyed white - but it had an ok taste and crunchy texture. The Fish Floss had a good aroma, it had a pretty good salty, umami taste with a crunchy texture, but it was definitely burnt and slightly bitter.
The noodles were downright poor, to be honest - supermarket quality or worst. It had an unnatural taste and texture, no egg taste, texture was like elastic bands rather than 爽口. If you go to the extent of marketing a well thought out 'Chinese Fusion' noodle dish, at least use some better noodles... The dried noodles at 羅富記 I had the night before this were hands down better than here by a great margin. The noodles at 永華 on the adjacent parallel location are streets ahead (couldn't help with the pun!).
The noodle's soup was quite sweet - due to the 羅漢果 influence, which reminds me of Artifical Sweeteners for some reason. One could also taste the 大地魚 influence, but this was weak-to-medium compared to other shops. Very little prawn taste was detectable. I guess this soup was too strangely flavoured to accompany the Umami filled noodle dishes.
I'm sorry to say - I did not understand this shop's use of below-average noodles and could not bring myelf to finish half the remaining noodles. I honestly did not like the noodles they used here, but the toppings were actually quite good and innovative!
For me,
TOPPINGS = '4'
NOODLES = '1-2'
The latter brought the whole score down, as it should be the core of the dish.
