坐落係尖沙咀K11 Musea入面,有一間你未必知佢來頭但又長期排長龍既拉麵店,係係東京品川開店廿幾年既過江龍小店,連續四年(2014-2018年)獲得米芝蓮推介,以及Tabelog全日本拉麵大獎,係tagelog有3.94分既高分、Ramen Walker多年日本最優秀拉麵排行榜前十位。而呢間日本排長龍既拉麵,係尖沙咀K11 Musea開首間分店兼海外店麵,總店由日本既高野夫婦主理,雖然將湯底同製麵技巧傳授比香港店兩位師傅,但佢同先生每隔半年都會嚟香港監察品質,香港製麵師傅都係日本本店接受訓練。店鋪主打拉麵同沾麵,店內自設製麵工場,客人可不時睇到師傅製麵既過程,保證拉麵質素新鮮。當然自家製嘅面唔一定等於好食,但呢個精神好緊要,一碗拉麵嘅主角就係個湯同個麵,如果個麵唔係自家製已經同麵廠攞,咁已經有一半唔係自己既野,只係加工,香港好多拉麵、甚至係過江龍,啲麵都唔係自家製,肯自家製既拉麵店我覺得已經值得欣賞。-環境店內環境好有日本風格,仲貼心咁設有屏風間格,為單獨嚟嘅食客增添私人空間。裝修同本店嗰種傳統拉麵店風格完全唔同,收費亦比起本店高出唔少。-排隊晚上八點來到,等了約10分鐘便可以入座

店鋪主打拉麵同沾麵,店內自設製麵工場,客人可不時睇到師傅製麵既過程,保證拉麵質素新鮮。當然自家製嘅面唔一定等於好食,但呢個精神好緊要,一碗拉麵嘅主角就係個湯同個麵,如果個麵唔係自家製已經同麵廠攞,咁已經有一半唔係自己既野,只係加工,香港好多拉麵、甚至係過江龍,啲麵都唔係自家製,肯自家製既拉麵店我覺得已經值得欣賞。

裝修同本店嗰種傳統拉麵店風格完全唔同,收費亦比起本店高出唔少。

店內既食材都係日本直送,拉麵係傳統式,唔會有得揀拉麵軟硬粗幼曲直、湯既濃淡。
叉燒覺得太薄太乾,但食到豬肉嘅甘香,帶小小火炙味。溏心蛋個狀態係熟咗少少,個蛋黃可以成個固體咁起出嚟。筍係鮮筍乾,好嫩好入味。
多賀野除左係湯落足心機,每日堅持新鮮自製拉麵,每日製作約兩至三轉麵條,用上4款日本麵粉、兩款蕎麥、鹽鹼水同雞蛋製成麵糰,用機器反覆壓制6次再裁出麵條,熟成1-2日先可以用,不時拎起麵條度尺,因為麵條既長度同厚度都要一致,每日會根據當日溫度同濕度再去調整水分同麵粉既比例。

麵條方面做得幾好,煙韌軟硬適中,密度幾高,食到尾唔會腍哂,唔會好易發脹,細嚼後有少少麥嘅香味。
另外一提,究竟咩係掛湯?掛湯係一個食材嘅特性,係講你個麵同你個湯可唔可以互相配合,如果你個湯係比較清啲,個麵嘅掛湯能力就需要好強,令到個味道比較平衡,調返轉如果個湯係比較稠身、鹹、濃味,個麵就唔需要咁強掛湯能力,先可以中和到個味道,而拉麵嘅掛湯能力主要睇麵嘅粗幼、直身定曲身、麵既吸水能力。而多賀野既麵掛湯能力同湯頭亦都好配合,湯雖偏淡但麵掛湯能力夠平衝到。
店鋪最出名既就係醬油湯底,香港可以食到醬油湯底既拉麵唔多,好食既就更加無咩。多賀野既醬油湯係用雞肉、雞骨、豬骨、豬軟骨、豚肉、薑蔥蒜、日本鰹魚乾等優質食材人手調配精心熬製3個鐘。
湯頭清澈鮮甜,唔會好油膩,亦唔會太鹹,清甜係因為用上自家製的醬油混和鰹魚湯底,醬油味較濃,會聞到小小雞湯既香氣同魚乾既鹹鮮味道,可以邊食麵邊飲湯,不過味道唔算好有特色。

個麵過冷河過得好足夠,亦好平均,麵質相當有驚喜,係傳統冷麵,比拉麵更加煙韌,粗身啲,份量頗大,就算係男人食量都應該飽。

有兩塊叉燒,品質同拉麵個碗差唔多。
夾起咗兩個肉之後呢就見到佢俾咗好多筍,同埋有半邊嘅溏心蛋同一堆葱。

沾麵汁好夠熱,味道偏清甜,質地比較稀,係用上鴨肉、鴨骨、雞、蜆、菇等材料熬煮再撞鰹魚乾精華湯,雞同豬既味道較出,鰹魚味係尾段飄來,同一般偏鹹魚介沾麵汁有好大分別,比拉麵醬油味鹹少少,好唔好就好睇個人口味,因為湯既味唔算重,沾麵汁有好明顯嘅鴨油香味,整碗食完唔覺油膩。

🌟我覺得佢價錢太貴,沾麵定價係$168過於進取,香港會敢定係158-168既價錢該得一燈(已經執左)/蔦(同為東京米芝蓮)。拉麵喺日本來講其實一個好平民嘅嘢食,就算攞幾多米芝蓮推介或者tabelog幾高分都好,佢都係一個平民食品。
今日你肯比錢食呢個168沾麵,他日再有其他過江龍見到呢個情況會照住定價168,咁香港就再食唔到68-98價錢既拉麵。味道黎講多賀野算係好食既醬油湯拉麵,始終醬油湯唔係個個都鍾意,味道一定係比豬骨/雞湯無咁濃無咁出,如果真係好鍾意食醬油湯拉麵可以黎試一試,咁你就會知呢個128/168比得值唔值,唔算鍾意醬油湯既我建議唔駛試,香港仲有好多拉麵好食。
